Congratulations to our State President Scott Costa and Convention Chair Ken Costa. They attended to every detail and assembled a team, our very own people from Sacramento #5, that carried out their assignments with charm, grace and much dedication. Everything was perfect and very elegant: hotel rooms, conferences, food, wine, flowers, music, and above all the camaraderie of our fellow Cabrillians throughout the State. We did a great job and now that the convention is over it is time to move on with new projects. First on the list is our Valentine’s Dinner on February 10 th . And on March 3 rd we will host our annual Crab Feed. I ask that you try to participate and help in any way that you can. I look forward to seeing you at these events. Presidents Message – Gui Sequeira

Dear Friends, After a year of planning and hard work, the much anticipated event, our 77th Cabrillo Convention took place on January 20th through the 22nd at the Double Tree Hotel in Sacramento.

Congratulations to our State President Scott Costa and Convention Chair Ken Costa. They attended to every detail and assembled a team, our very own people from Sacramento #5, that carried out their assignments with charm, grace and much dedication. Everything was perfect and very elegant: hotel rooms, conferences, food, wine, flowers, music, and above all the camaraderie of our fellow Cabrillians throughout the State.

We did a great job and now that the convention is over it is time to move on with new projects.

First on the list is our Valentine’s Dinner on February 10th. And on March 3rd we will host our annual Crab Feed.

I ask that you try to participate and help in any way that you can. I look forward to seeing you at these events. Stay Well, Gui Sequeira

Mark your calendars, call your friends and get ready to have some fun! All Sport for Cancer is planning THREE big “B” events this year! BOWLING – March 18 – Land Park Bowl (Please note the date change) BUNCO – May 20 – Cabrillo Club House BINGO – September 30 – Cabrillo Club House

Our All Sports efforts in 2011 earned Club #5 Honorable Mention at the Convention. Try to attend any or all our 2012 events and bring a friend. December 7 Pearl Harbor Day December 25 Christmas Club #5's Americanization efforts in 2011 earned 1st place in competition with the other Cabrillo clubs. Club members participated in naturalization ceremonies, Flag Day, observance of National Holidays - flying flags at home and taking part in local ceremonies. Please continue to do these things, report them to the Americanization chairperson and include a photo, if possible. Civic Affairs – Ken Costa

The Civic Affairs program encourages activities of local Clubs and fellow Cabrillians in giving back to our communities. We take great pride in community service and give countless hours in community service in churches, hospitals, schools, civic and fraternal organizations or helping out a neighbor. Not only do members volunteer directly you also participate in our Club's fundraising activities for charities. It is important to obtain the data on how we are doing in many years on a statewide basis we have accomplished over 130,000 volunteer hours and over $100,000 in charitable donations. Sacramento Club #5 desires to be a big part of that effort and are not only dependent on your community service, but are dependent on you telling the Civic Affairs chair of what your activity was and how much time did you

The 2012 applications are available at all Sacramento area school and at www.cabrillocivicclubs.org/scholarship.asp. Each applicant must be of Portuguese descent, have a grade point average of 3.5, and participated in three extracurricular activities. Applications need to include an official transcript and three letters of recommendation. If anyone needs help, please call Sue Petzold at 916-967-7666. Dead line for postmark is March 15, 2012.

Cabrillo News Wrap This month we are featuring two recipes that were served at the Convention Cocktail Party hosted by Club #5

Caviar a la Gui

6 hard boiled eggs, finely chopped 3 tbs mayonnaise Stir and spread into pan

Finely dice 1 small red onion and sprinkle over eggs

Cream together 2/3 cup sour cream and 8 oz. cream cheese Using a fork spread over onions. Chill over night Spread caviar over the top before serving Helpful tips: Use a 6’’ tart pan with removable bottom covered with aluminum foil. You can also use 8 eggs if they are small. I soak my red onion in ice water prior to chopping. Use red onion according to taste. It can be too strong of a taste. Spreading the cream cheese is quite tricky but I have no

solution for that. Do the best you can. I bought my caviar at World Market (Cost Plus). I used a 6oz jar of capellini caviar. The cost was approximately $8.00. This recipe is also great with olive tapenade as a substitute for the caviar. Bon appetit The Gui in this recipe is our own Gui Sequeira. Delicious! And I can’t wait to try it with the olive tapenade too.

Party Wontons

From Club member Jackie Kuehl—I must have had half a dozen of these during the party. Wow! 2 pkg Jimmy Dean sausage (I use Italian turkey sausage--you need the sausage rather than just ground turkey for the flavoring) precook and drain 1 large bell pepper--finely chopped – seeds removed 1 can sliced water chestnuts--chopped 1 cup Ranch dressing Hot Pepper cheese--about ½ block-grated 2 pkg Wontons (I buy the large square wontons-6 1/2 x 6 ½ and cut into 4 smaller ones) Preheat oven to 400 Mix first five ingredients together. This mixture will keep in the refrigerator for 7-10 days.

Separate and place Wontons in miniature muffin tins. You can spray muffin tin with Pam first, if desired. Spoon sausage mixture into individual wontons. Bake for approximately 10-12 minutes or until the tips of Wontons turn brown. Serve warm. Make ahead of time and warm on low in an electric frying pan. Note: Best served warm and excellent with Pepper jelly These are Yummy! Enjoy Editors Note: Jackie says that you can substitute chicken, shrimp, or beef for the sausage or best yet make all of them—let me know when they will be ready.

Both recipes will make wonderful additions to Super Bowl parties even if the 49ers aren’t playing this year!
