Grind cumin seeds and chopped coriander in a mortar and then add in the rest of the ingredients finishing with the finely grated lime peel. Marinate the chicken in the mixture and set aside for 1 hour. Separate the chicken cubes from the marinade removing any excess sauce and place in a Mibrasa casserole dish with a drizzle of olive oil and cook for 3 minutes. Serve with lime wedges, mint leaves and basmati rice.
