Vintage sparkling from our best sites high in the King Valley.

This elegant sparkling wine is a classic blend of Chardonnay and Pinot Noir selected from our best sites high in the King Valley, where altitude ensures long, slow ripening. These sites are chosen on their ability to consistently produce the best quality fruit each vintage; showing elegance of structure, intensity and purity of fruit flavour and palate length. The altitude of these vineyards ranges from 550 to 860 metres, the vineyard at 860m lays claim to being the highest vineyard in Victoria.

TASTING NOTEPale gold in colour with a fine bead. Delicate aromas of citrus zest, almond praline and strawberries with subtle hints of rose floral. The palate is finely structured with an underlying core of fresh citrus acidity that

drives through to the finish. This is balanced by a delicate creamy texture, the result of extended time on yeast lees during bottle fermentation. Serve with fritto misto garnished with fresh lemon wedges.

WINEMAKINGEach parcel is kept separate until the final blend, with a small portion stored in old oak barriques to add extra complexity. The wine goes through secondary fermentation in bottle and is aged on yeast lees for as long as possible – in this case 23 months. Extended time on lees allows the natural process of yeast autolysis to add further complexity and creamy texture to the final wine.
