Zucchini Noodles, Shrimp and Pesto Serves: 4 Prep Time: 30min Difficulty: Easy Ingredients 4 Zucchinis Olive Oil Salt Pepper ½ lb Shrimp (about 4 each) ½ cup pesto Parmesan cheese Directions Drizzle about a table spoon of olive oil in a large sauce pan over medium heat. Add ½ a teaspoon of salt and pepper and stir in the shrimp. Cook until pink (about 12 minutes). In the meantime, cut the zucchinis into noodles using a spiralizer. I recommend the “Zoodle.” Remove the shrimp from the heat and add the pesto to the pan. When the pesto is warm, add the noodles and toss them (as you would a salad) until evenly coated in the pesto. Remove the noodles from the heat and serve them on each plate or bowl. Add 3 – 4 shrimp on top of each serving. Grate fresh parmesan on top.
