Raw Christmas Pudding SERVES 8-10 Ingredients Pudding 1 cup dried cranberries 10 dates 1 packet glace cherries 1 cup dried apricots 1 cup flax meal 1 tsp cinnamon 1 tsp all spice 1 tsp nutmeg 1 tsp ginger 1 tsp vanilla essence Dessertspoon coconut oil ½ cup freshly squeezed orange juice Cashew cream 1 cup cashews 1/3 cup Chobani yoghurt ¼ cup pure maple syrup Water add scarcely to get cream like consistency Instructions Line patty pan baking tin with glad wrap. Pudding; Place all ingredients into food processor except coconut oil and orange juice Once combined transfer to a bowl, add oil and juice - mix until the mixture forms a ball. Spoon mixture on top of glad wrap into each hole in the tine. Place in fridge until firm. Cashew cream; Soak cashews in boiling water for ten minutes, then add to food processor along with yoghurt and maple syrup. Blend until smooth and slowly add tiny amount of water until you get a bit thicker than cream consistency. Plate up and enjoy!
