½ cup brown rice1 cup sliced cabbage2 carrots, sliced1 cup cauliflower florets2 Tbs. coconut oil1 inch fresh ginger root, peeled and sliced thinly 1 Tbs. cumin seeds ½ tsp. powdered turmeric ¼ tsp. cardamom powder Sea salt, to tasteOne bunch of cilantro

DIRECTIONS

Heat the water in a large pot along with the yellow split peas and brown rice. Bring to a boil, then reduce to a simmer.

Cook for about 20 minutes, then add the cabbage, carrots and cauli-flower and cook for another 20 minutes or so.

In a separate pan, heat the coconut oil over medium heat and begin to add the ginger and cumin seeds. When the cumin seeds turn me-dium brown, add the turmeric and cardamom.

Add the whole mixture back into the cooking pot. Season with salt to taste. Ladle into bowls and top each bowl with a handful of fresh cilantro before serving.

INGREDIENTS

2 tsp. coconut oil1 Tbs. green onions, sliced 1 tsp. ginger, peeled and cut thinly3.5 ounces of organic tempeh, sliced thinly and then cut into one inch squares ½ cup red peppers, sliced 2 tablespoons tamari2 tsp. lemon juice 3 large romaine lettuce heart leaves or butter lettuce leaves

DIRECTIONS

Heat the coconut oil over medium heat. Add the green onions and ginger and cook for a few minutes, then add the tempeh.

Cook for another few minutes, and then add the red pepper. Stir in the tamari. Turn off the heat and mix in the lemon juice.

Arrange the lettuce leaves on a plate and spoon a third of the tem-peh-veggie mixture into each of the lettuce wraps. Roll each lettuce wrap up, burrito style, to eat.

Heat the water in a medium pot and add the amaranth, ginger and succanat or brown sugar. Bring to a boil then reduce to a simmer and cook for about 20 minutes.

In a separate pan, heat the coconut oil and add the raisins. Cook until the raisins plump up and lose their dryness. Stir into the ama-ranth mixture.
