Scotland is the land of food and drink. Our country is filled with passionate producers farming Scotch beef, lamb, poultry, soft fruits and a fantastic array of seafood. Scotland’s unspoiled habitats and varied weather conditions are perfect for creating a superb larder that we can all be proud of. Having worked with a number of Scottish producers over the years has ensured that we now have strong connections all the way up to Peterhead and Skye, the Borders and across North Berwick without of course forgetting our French connections. These hard working men and women are our friends and we’re incredibly privileged to work with such passionate people on a daily basis. We wouldn’t be where we are without them and with their support we’re now proud to say that 90% of our menu is made of Scottish ingredients.Our restaurants presents French classic and seasonal cooking with an appreciation of the best from Scotland’s extraordinary larder. Our philosophy is a concentration of 20 years’ experience finding and using products straight from the field, the rivers and the sea direct to your plate. We buy whole animal carcasses to cook with as this gives us the opportunity to teach our chefs about butchering, cooking and using every single part of the animal without any waste. In turn, this also supports local suppliers and helps everyone to achieve sustainable environment. Enjoy your visit with us and bon appétit!
