SEAFOOD PLATTER

As the aroma of sweet smoke from the wood-fired oven wafts across the room, it only enhances the connection to the meal at hand. Similarly, the low-impact flavors of the Spring Mill, framed by the gin and vermouth’s herbaceous complexities, enhance the palate with each sip. If you haven’t heard of calamansi before, this fresh, bright and floral sipper might be the best place to start.

A large, crowd-pleasing menu offers something for every palate; although the focus remains on seafood. If you find yourself overwhelmed by options, the platter for

one offers an affordable way to taste several seafood dishes.

The calamari is tender and lightly battered, the fillet of hake is beautifully cooked not a minute overdone and still juicy and sweet. The creamy garlic mussels are less impressive but all in all it’s still great value. A prawn and steak burger is an up-dated version of the surf and turf concept and all components are nicely cooked. Enjoy a Seafood Platter this weekend.

IngredientsOne ounce Beefeater gin, one ounce Dolin Blanc vermouth, one and half ounces cucum-ber-calamansi-honey mix, 3 dashes Peychaud’s bitters and cucumber-calamansi-honey mix (Combine one part cucumber water (juiced cucumbers), one part honey and two parts frozen calamansi lime puree. Blend together and store for later use.)

DirectionsCombine ingredients in a shaker tin and dry shake without ice to blend ingredients. Add ice to a chilled Collins glass, and strain ingredients over top, then top with soda. Dash 3 dashes of Peychaud’s bitters on top and garnish with a cucumber horse-back (long, thin strip) curved around the glass. Finish gar-nish with a mint sprig and add a straw.

Pours well and looks great in a glass. The smell is a very basic malt and hops with more empha-

sis on the former rather than the latter. Drinking this beer is enjoyable. Light, crisp, refreshing example of a macro lager.

It is best served on tap from a tall, ice-cold Peroni glass. Nice creamy white head with fair retention.

PASTA COOKING MISTAKES

Homemade fish fingers are easy to make and cook in

no time. Plus you know exactly what's in them! Try them in a pitta sandwich with spicy mayo.

IngredientsFor the fish fingers, 1 free-range egg, 75g or two and a half oz. white breadcrumbs, pinch paprika, 250g/9oz firm white fish, such as hake or cod, cut into bite-sized strips, 1 tbsp. veg-etable oil, salt and freshly ground black pepper. To serve we need 2 tbsp. mayonnaise, half tsp curry powder, squeeze of lemon juice, 4 whole meal breads, 1 Cos let-tuce or baby gem, leaves torn into pieces.

MethodIn a shallow bowl whisk the egg.

In another bowl combine the breadcrumbs and paprika, sea-son with salt and pepper. Dip the fish fingers into the egg, making sure they are completely coated and shaking off any excess. Then carefully dip the fish fingers in the breadcrumb mixture to coat them all over.

Heat the oil in a large frying pan over a medium-high heat. Fry the fish fingers for 2-3 minutes on each side until golden-brown and cooked through. Remove from the pan and drain on kitchen paper. While the fish is cooking combine the mayonnaise, curry powder and lemon juice in a small bowl and set aside. Serve the fish fingers in whole meal pittas with the mayonnaise and let-tuce.

It's not a simple as boiling water and dumping some noodles in. Pas-ta's a weeknight no-brainer, sure, but cooking it just right isn't. Here are the biggest mistakes that are keeping you from noodle nirvana.

Not choosing the right shape. There's a purpose for nearly all of them (okay, maybe not this one), and they aren't always interchangeable. If you don't have the pasta shape called for, make sure to swap in a simi-lar shape. Blindly following the timing on the box. Think of the time listed as a suggestion, not the Gospel. Just to be safe, when the timer goes off, fish out one or two pieces and taste them.

Overcooking pasta when baking. Speaking of mushy noodles … on the flip side, always undercook your pasta if it will also spend more than 10 minutes in the oven, since the pasta continues to cook as it bakes. That way, by the time the casserole is done, the pasta is perfectly al dente.

Not salting the cooking water enough! This is, hands down, the biggest mistake home cooks make when cooking pasta. The boiling stage is the only point that you get to season the pasta throughout, and to get in the noodles, the water has to be very, very salty, like mouthful-of-ocean-water salty. And that leads me to... Dumping all of the cooking water. When it's time to drain your pasta, don't pour all the water out. That's valuable stuff. Use it when serving the sauce!

1Primary colors: red, yellow and blue. These colors make up all of the other colors on the spectrum.

2Secondary colors: The colors you get from mixing the primary colors together: yellow + blue = green, red + blue = violet, yellow

+ red = orange .

3 Tertiary colors: These are the colors on either side of the second-ary colors. For example, red-violet or blue-violet, which you get

Commonly referred to as high blood pressure. BLOOD PRESSURE is the pressure with which blood is pumped from the heart and

through the intricate blood system throughout the body. It is generally accepted that there is a wide range of blood pressures that can be considered normal as variations occur based on one’s body mass, fitness level and even genetics. If your blood pressure is 120-139/60-90mmHg this is generally fine. Vigorous activity can also cause slight variations.

Absolutely anybody; males, females, adults and even children can have hypertension. Generally speaking the largest burden lies with middle aged to elderly adults and sometimes the disease process begins many years before it is actually detected. So this underlies the importance of yearly medical physicals to try and screen for diseases like hypertension, obesity, high cholesterol, diabetes, cervical and breast cancer amongst others.

Some symptoms which are red flags and important to seek medical attention include any kind of severe chest pain, continuous headaches of any type with varying response to medications, visual or auditory disturbances, unsteady gait, fast or irregular heartbeat and dizzy spells and/or fainting episodes.

WHAT TESTS ARE DONE AT THE HOSPITAL/CLINIC?We often recommend patients take their own blood pressure at home severally and show us the results as many people suffer from ''white coat hypertension'' whereby their blood pressure is elevated by the sight and thought of being in front of a doctor, truly terrifying!!! Sometimes we attach a 24hr ambulatory BP device to a patient which records 24hr variations. Once this confirmation has been made baseline blood tests include:

• Serum electrolytes, creatinine, protein, albumin

(for kidney function)

• Fasting lipid profile

• TSH (thyroid stimulating hormone)

• Random blood glucose and if high may do an OGTT

to confirm if diabetic or not

• Other tests we frequently do to determine organ function:

• 12-lead ECG,

• 2D-ECHO

• Chest X ray

• Calculating ones BMI and doing a general physical examination

to include fundoscopy(eye examination), auscultating the heart

and renal arteries and lungs

Some of the most worrying side effects seen across the globe are Heart attacks, Heart failure, Strokes and Kidney failure.

WHAT MEASURES CAN BE TAKEN TO PREVENT/ALLEVIATE HYPERTENSION?

1. Reducing dietary salt intake.

2. Regular aerobic and cardiovascular exercise.

3. Limit or eliminate alcohol consumption less than 3units/day

males and less than 2 units/day females

4. Maintain body weight to a BMI between 19-25kg/m2

5. Diet rich in fruits and vegetables
