1. Our mission

Despite being an historic estate, Fillaboa is a modern winery, boasting exclusive, modern and elegant wines, made to be enjoyed. From the vineyard, straight through to bottling, all efforts are put into achieving the highest possible standards of quality, in order to offer our clients and consumers unique and exciting experiences in the company of Fillaboa wines. This magnificent estate is exquisitely taken care of, wines are a true reflection of the land which produces them, and undoubtedly, the magic of Galicia and the D.O. Rías Baixas is present at the moment of tasting. Exceptional grapes are the cornerstone of the philosophy of this winery, as is the meticulous supervision of the elaboration process, the limited production of it’s wines, the elegant design of the materials and packaging, and the superb treatment given to clients.

At Fillaboa, we strive to do things right. Our desire is to continue being a reference point in Rías Baixas, as well as a prestigious and elegant brand recognised by consumers and wine and gastronomy experts alike. 2. Fillaboa, a magical place

The magical Galician landscape forms part of Fillaboa´s winery and it’s wines. On my arrival, from the top of the headland where the estate lies, I gazed in awe at the beautiful views and contemplated the river Miño flow slowly by.

Fillaboa, which means “good daughter” in Galician, is the biggest estate on the Property Register of Pontevedra and one of the oldest in Galicia. It is common theory that it was the Romans, who settled in this land many years ago, their stay is clearly evidenced by the roman bridge at the entry of the estate, who were responsible for introducing the art of vine growing to the area.

Situated in a strategic location, it’s fortification tells of it’s exciting history. Due to it’s border location in the municipality of Salvaterra de Miño, it caused continuous disputes between Portugal and Spain, until it was finally recovered by the Spanish Crown, after the last Portuguese occupation in the 18th century.

The old 1,600 metre stone wall which surrounds the estate, encloses a stately manor and a stone chapel, both clear signs of the past. The parcels which make up the winery’s 70 hectares of vineyards also lie within this wall.

3. Our inspiration: the vineyard

Our vineyards, planted exclusively with the Albariño varietal, are the source of inspiration of our wines.

The plots of Fillaboa:

The perfectly aligned, willowy Albariño vines are dotted around the small plots forming a puzzle of vineyards.

The richness of the soil, the good drainage and the ideal composition, together with the rainy Atlantic climate with mild temperatures due to the proximity of the sea, make Fillaboa a privileged place for vine growing.

Each of the 11 plots which make up the estate are South-facing and boast magnificent ventilation. Monte Alto, Vía, Terneros, Castro, Socalcos, Antigua, Miño, Eucalipto, Río, Carasol and Las Nieves. The production of the trained trellised vines is meticulously controlled, in order to achieve a low average yield per hectare.

In order to obtain the highest quality fruits, each plot is treated individually, depending on its specific characteristics.

3. Our inspiration: the vineyard

The Albariño varietal

At Fillaboa, the amber-green tone of the Albariño grapes fuses with the many green shades of the Galician landscape, forming a fabulous mosaic of subtle hues.

The Albariño grape is the native Galician varietal par excellence, however, legend tells that in reality it was the Benedictine Monks of Cluny, famous for their important contribution to the expansion of gothic art in Europe, who brought the grape to Galicia in the 12th century. In this Atlantic region, the order came upon the ideal conditions for growing the varietal, known today as Albariño, which they had brought from far away central European lands on the banks of the Rhin. Whatever the real story is, the Albariño vines and the wines they produce are a documented fact in Galicia since the Middle Ages, and today the Albariño grape is considered native of Galicia and it’s wines are emblematic of the rich gastronomic patrimony of the region.

The small, slightly oval, sweet Albariño grape grows in small bunches and produces high quality wines, acknowledged all over the world for their amazing floral and fruity aromas, perfect acidity and fresh and mild taste.

3. Our inspiration: the vineyard

A crucial moment: harvest time

The harvest is one of the key factors which determine the characteristics of each vintage. The Albariño grape has a long vegetative cycle which means that it matures at a later stage. Fillaboa’s enological team strictly controls the maturity of the berries, to pinpoint the perfect moment for harvesting. A task which is calculated to precision.

At Fillaboa, a first harvest usually takes place during the month of July, in order to eliminate the so called second generation clusters, in such way as to reduce the production of each vine and improve the quality of the fruits. In the Monte Alto plot, destined to our Fillaboa Selección wine, the production normally oscillates between 2,000 and 4,000 kg. per hectare. Frequently, some of the leaves of the plants are removed, in order to increase sun exposure to each cluster and facilitate optimum maturity.

Generally, harvest time commences at the beginning of September. An exciting task, during which the clusters of each of the vines are selected manually, very carefully placed in 20 kg boxes and immediately transported to the winery.

Harvesting is a delicate and meticulous task which is carried out in each plot individually, in function of their particular characteristics, the grapes are destined to one wine or another.

Harvesting normally commences at the beginning of September.

4. The winere, a creative space

The winery is a creative space where all the key elements are brought together: the fruit, the technique and the hand of man unite to produce the highest quality wines. Here, the highest quality raw material is employed to create the colours, aromas and tastes which form our collection of wines.

Fillaboa is fully equipped with the latest technology, in order to maintain strict control over the wine elaboration process.

The elaboration process

Having carried out the manual harvest, the de- stemming process is then performed, in order to separate the grapes from the stem and then immediately place them in the pneumatic press, where the berries are gently pressed, obtaining an excellent quality must. The must is then cooled to 12o C, and after racking, alcoholic fermentation takes place in stainless steel vats, the strictly controlled temperature is maintained between14 and 18o C.

The constant temperature control allows Fillaboa to make fruity, very aromatic wines, which express all the excellent qualities obtained throughout the year. The structure of the wine accurately reflects factors such

as the soil, the climate, and the fertilization methods, not forgetting the meticulous elaboration process and, of course, the principles of great grapes, utmost cleanliness and patience.

After fermentation has taken place, the musts undergo the final necessary processes of racking, cold stabilization, filtering and bottling.

This is how Fillaboa’s fresh, white wines are made.

4. The winery, a creative space

Innovation: R&B

At Fillaboa, we are very aware that innovation and research contribute great improvements to traditional enology, and consequently, have set up our own department of Research and Development. An authentic laboratory of ideas, where experiments and analyses are carried out on very specific parameters of the Albariño varietal throughout the entire vegetative cycle in each of the plots, and also on the behaviour of the musts under specific conditions during vinification and aging.

All of the advances and discoveries made in this singular test bench allow us to lead the way in advances of quality and innovation, setting a high standard with wines which speak to the consumer in a contemporary language.

Comments: this wine is made with grapes grown in Fillaboa’s 70 hectare estate. The 2012 vintage has benefitted from a long ripening period, harvesting began around the middle of September, resulting in a highlyconcentrated must.

Tasting

Colour: straw-coloured yellow with a bright and clear appearance.Nose: very aromatic with notes of pineapple, apple, stone fruits and hints of citrus. Slightly reminiscent ofyoghurt. Outstanding intensity and frankness.Palate: on the palate the attack is smooth and elegant, with great structure, good balance of flavours and well integrated acidity. A lush, smooth and elegant wine with a lingering aftertaste.

Ageing capacity: 3 years / Serving temperature: 8-10o C / Alcohol content: 12,5% Vol. / Format: 750 ml.

Notes: grapes from the 70 hectares of vineyard owned by the winery and located around it.

TastingColour: straw-coloured yellow, crystalline and bright appearance. Nose: powerful apple and pineapple aromas combined with hints of citrus and stone fruit which give the wine its distinctive freshness. Palate: soft on the palate, the wine exhibits a well balanced flavour profile, enhancing its freshness and complexity. Well integrated acidity. Unctuous, soft and refined, culminating in a lingering finish.

Notes: iIt is obtained from our own grape pomace of Albariño grape and by the system of steam sweeping.

Ageing: it is obtained from the ageing of our white spirit in French oak barrels Limousine of 225 liters during a minimum stay of 7 years.

TastingColour: amber-yellow and bright.Nose: toasty, vanilla, hints of a powerful French oak. Aromas of dried fruit and hints of coffee and orange’s skin.Palate: complex, soft and unctuous.

Ageing capacity: 20 years / Serving temperature: 10-18o C / Alcohol content: 40% Vol.

HERBAL LIQUEUR FILLABOA

Origin: Geographic Apellation Herbal Liqueu from GaliciaCoupage: 100% AlbariñoComments: Liqueur of triple distillation made up macerating aromatic herbs (anise, cinnamon, liquorice, nutmeg, chamomile, coriander, fennel, thyme and rosemary) for a month on marc brandy from Galicia.. Then it is distillated and sugar is added. Before bottling, it is left to rest for a month, getting a crystalline product with a powerful bouquet.

TastingColour: Crystalline, ripe lemon colour.Nose: Sweet aromas of citric and smell of aromatic plants.Palate: Rich in impressions with fruit (apple) and balsamic over a refined marc. Seductive finish.

7. Visits, unique experiences

Fillaboa’s long history and privileged situation make it a magnificent place for celebrating special events or for simply paying a visit and learning at first hand the secrets which lie behind the making of their elegant wines.

Inside the estate, there are several buildings which evoke it’s historical past. The stone bridge at the entrance is a valuable example of roman architecture, it was restored in the 15th century and clearly evidences the stay of the Romans in the area, who are believed to have introduced viticulture to this land.

Together with the old stones of this millenary bridge, Fillaboa also boasts medieval style buildings which treasure an impressive collection of art, both paintings and sculptures, some from the Middle Ages and Renaissance. Fillaboa is also adorned with beautiful antique furniture. It’s walls are decorated with a permanent exhibition of 19th and 20th century paintings by famous Spanish artists.

The winery offers several activities based on the world of wine and gastronomy for one to enjoy in this magical setting. Guided visits around the winery, wine tasting, visits to the vineyards, personalized events, stylish spaces for product presentations, meetings or corporate events, sampling of gourmet products.
