Parasole Restaurant Holdings has
announced an agreement with Titan
Development & Investments and
Harbor Bay Real Estate Advisors to
bring PITTSBURGH BLUE STEAKHOUSE
to the five-star HILTON DOWNTOWN
ROCHESTER HOTEL, scheduled to open
in Spring, 2019.

Parasole Restaurant Holdings will open
PITTSBURGH BLUE STEAKHOUSE in the
HILTON DOWNTOWN ROCHESTER, a
five-star luxury hotel currently under
construction as part of Rochester,
Minnesota’s Destination Medical
Center (DMC) initiative.
Scheduled to open in spring, 2019,
the hotel and restaurant represent
a number of firsts. “Not only will
PITTSBURGH BLUE in Rochester be
the first out-of-town location for this
concept. It will also be the city of
Rochester’s first true steakhouse and
a premier private dining and meeting
venue,” says Parasole CEO Phil Roberts.
A Powerful Partnership“This agreement culminates a long search for the ideal partner
and market for our third PITTSBURGH BLUE location,” continues
Roberts. “We couldn’t be more pleased to join forces with Titan
Development & Investments and Harbor Bay Real Estate Advisors.”

STEAKHOUSE opened first in Maple
Grove, Minnesota, and quickly
became a destination for lovers of
aged beef, fresh seafood, and the
north suburbs’ best Happy Hour. It
repeated that success in the Galleria in
Edina, Minnesota. Today, PITTSBURGH
BLUE’s ranks among the Twin Cities’
most successful steakhouse concepts,
with consistent year-over-year sales
growth across markets.
Like the restaurant’s two existing
locations, PITTSBURGH BLUE in Rochester
will feature several distinct dining
environments, including a main dining
room; highly configurable private
dining rooms; and the pub-style BLUE
TAVERN, featuring a prominent bar,
cozy leather booths and high-top
tables.
Described by Roberts as a “a
steakhouse for people who work
for a living,” PITTSBURGH BLUE
features a menu highlighted
by proprietary cuts of aged,
Midwestern beef along with fresh
seafood and casual fare. The
name of the restaurant refers to
the way steelworkers used to eat
their steak: charred black on the
outside, and cold and raw on
the inside – the result of placing
slabs of meat directly on the soot-
covered blast furnaces.
PITTSBURGH BLUE at the Hilton
Downtown Rochester is expected
to open along with the hotel in
the spring of 2019.
