    Magazine. When I wasconsidering what to include for theopening of my note I was going to beginby saying that although rainy seasonshould have been upon us there hadbeen very little rain. However, as I writethis note the rain is absolutely pouringdown so that put a stop to that.

    I have noticed on my travels around theisland that although it should be lowseason, it would appear there are stilla large number of tourists visiting theisland, which makes me wonder do wereally still have a low season?

Paresa is my rst work placement inThailand, I joined before the resort was completed sowas here for the pre-opening phase and was heavilyinvolved in setting up and preparing, getting the teamtogether and nally launching the property. We are nowinto our second year and for me it has been a great

    experience, and is a great place to be. We havestunning views and a top class team here, so I ammore than happy with my situation.

I was lucky enough to travel from a youngage and spent a lot of time ying around and stayingin hotels. I gained such an attraction to the hotels inwhich I stayed I decided that would be my career path.

The owner who developed this beautiful resort sawthis beautiful land and sea and believed it looked like heaven,and that is where the concept of the heaven of all heavenscame from. They wanted to create a place where the villasfelt like home, with great big open spaces, lots of privacy,beautiful swimming pools, all complemented with stunningviews over the ocean. All of these factors were so importantwhen developing this unique property, with views from all thevillas, in this beautiful location surrounded by trees and bushes.This is along with our angels. All of our team are angels,theyre here to guide and look after you. That completes theheaven of all heavens

    A d h w ab u y ur l a i ?Its absolutely fantastic here on the point of Kamala on million-aires mile. We have no other hotels around us, we just havethis beautiful native Thai bush and beautiful big Banyan trees.

    Luckily we managed to keep these and incorporate them intosome of the buildings; we also built some of the buildingsaround the beautiful trees which were here originally. Wewanted to immerse the resort in this wonderful area and makeit a unique retreat. Were much retreated here, with the stunningsea views and natural Thai bush, no noisy tuk tuks, its a verypeaceful, relaxed hideaway style resort.

    he res r ?We have actually grown and built over the past 2 years. Yesits probably not the best time to be opening a new resort inthe current economic climate, but for us, we have done verywell considering the current market. We are happy with ourposition and will continue to build our market and increaseour number of guests. The climate has affected the way wethought we could market the resort and has affected the wayin which we thought we could be growing the business, butluckily as we are a new resort we have been able to adaptquickly to the current situation. Being an independent brandmakes it a lot harder in times of an economic crisis as manytour agents are cutting back on properties and not really

    now doing a lot of travelling to meet new agents andoperators to get Paresa out there so everybody knowsabout it.

Thereis no where else where every villa offers magni centsunsets and sea views. Everywhere you go here,whether its the cooking school, the spa, the restaurantsyou are surrounded by great views. We are a luxuryhideaway retreat offering great food, whether it is Italianor Thai, in a peaceful relaxed atmosphere.

But I think reallydeveloping Paresa into a fantastic brand is going tobe a great challenge for the next couple of years. Wehope we can have more Paresas popping up aroundThailand in the future, so that is the main challenge thatwe have ahead of us.

However,we are starting to see the old markets come back and manyof them are coming to Paresa wanting to market us which isvery good.

Some of the traditional marketsare very quiet at the moment so we are staying away fromthose. We are looking at new markets and developing ourbrand in those where we are able to get more attraction andmore guests coming through and experiencing the Paresabrand. Its really a lot to do with selecting certain markets forcertain times of the year and slotting them all together to givebookings all year round. Our guests now are coming from all

    around the world. We have guests from America, Hong Kong,China and Malaysia, Australia is a very good market at presentand we think they will be a strong market for the comingseasons.

    Back at the school, armed with a beginners knowledge ofThai produce, we begin our lesson. The teachers assistanthands out copies of our recipes the chef begins demonstratingin the bright, airy exhibition kitchen. We observe everymovement on the counter and are encouraged to jump in

    with questions. When questions were asked, the instructorsrespond quickly and in detail, peppering their answers withtitbits on the history and techniques of Thai cooking. Aftereach demonstration we stand in a semi-circle around thepreparation table to taste the chefs creation and are, again,encouraged to ask questions. The open discourse andcasual sampling of the food creates a sense of camaraderiewithin the class.

    We then le into the well-stocked kitchen to try our handat each dish. Despite the clear instructions and a team ofassistants overseeing our work, we manage to blunder inour recreation of the recipes. The experience of working inthe pleasant kitchen is enhanced all the more by theknowledge that I will not be called upon to wash a single dish.

    At the end of the class, we nd ourselves hesitant to leavethe kitchen and return to the hot chaos we know awaitsoutside. The school seems to have anticipated this, andinvites students to eat their creations in the restaurantsdining room, only after lling our arms with a certi cate ofcompletion and a bag of Blue Elephant-branded spices andseasonings.

    Oh TaoOh Tao is a local Phuket dish. O-Tao is a delicacy made of our and taro, added together with small oysters, bits of crispypork rasher and spring onions. It is best taken with a sweetand spicy sauce that further enhances the avor. To start thedish, taro is cut into cubes, steamed and then dipped in our.It is then soaked in oil and fried in a hot pan. The oysters, porkand spring onions and are added and the ingredients are mixedtogether. The dish is then seasoned with pepper, garlic sauceand white sugar.     The Phuket property-our second biggest investmentever-has six bars, restaurants, Surin beach cluband a total of just under 300 rooms across villas,condos and a five star boutique hotel in possiblythe best location in Asia. [IndoChines rst ventureinto the hotel business]. Add in magni cent two tosix bedroom villas, two to four bedroom condos andstudio apartments and the site can cater for any typeof visitor.

    Says Michael: Overall it is the best site you canhave in Asia. It combines great views, a beach nearby,rain forest and being on the side of a mountain, all

    close to the large population centre, Patong. Healso looked at other places like Bali and Uluwatu,Indonesia; Sawarak, Malaysia; India, Sri Lanka,Vietnam, Krabi and Koh Samui, but found there wasno comparison to the Phuket site.

    The Kalim Beach enterprise is the Thailand platformfor further expansion. Michael hints at other Thaiinvestments in the future. IndoChine Group is already50-50 partner in a management company with twohighly successful American resort companies,ResortCom and LaTour Group.

    An Unconventional Path

    Like other successful entrepreneurs-Richard Branson of VirginGroup, Tony Fernandes of Air Asia-both friends of Michael,Michael Ma is a bit off the wall. Its the secret of their success.

    Michael started his career on the edge early; he got kicked outschool aged four for stealing ghting sh from school boarders.The fish went in his pocket but he went out of the school,expelled! The incident underlined his love of animals and ledto his long career in conservation, working with globalenvironmental NGOs such as IUCN.

    After obtaining a double major in economics and marketing inAustralia and a successfulcareer as an economist andcommodities trader he startedhis rst IndoChine restaurantand bar in Singapore in 1999.

    All that without serving behindthe bar or being a waiter!

    Michaels explanation for thissomewhat strange phenomenonis that he learned on the job.We listen to our customers.I am a customer. We docontinuous testing. You can

    go out and spend time workingin a bar and a restaurant, butthe reality is that running abusiness is not that simple.

    In the early days this desireto make a strong statement,meant Michael having thecon dence and drive to beatthe competition. Being cheekyI said to myself I could outrunthese guys. From the outsetI wanted to be at the top.I sized myself up against

    others regionally and globally.

    Party Animal Keeps on Going.Michaels unrelenting partying days started at around 14 years

    old. As he says: Its in my DNA. When I first started I had aday job, but my night job was partying. Does he get tired of it?The answer is an emphatic no.

    And why shouldnt he when IndoChine is regarded as theiconic place to go in Singapore and, now, with the opening ofSurin Beach Club: Stereolab at Surin Beach, on Phuket? Thebeach club, which Michaels sister Sue, who is responsible forthe Thailand development, initiated and put in place, is packingin late night party goers from nearby up market hotels andaround the island.

    It is being further extended from the nightclub and restaurantarea out onto Surin Beach. As Michael describes it: It [Surin]is a beach going F and B [food and beverage].

    Other developments in Thailand are in the works, but cannotbe divulged yet. Abu Dhabi and Dubai outlets, or joint ventures,are also on the radar screen.

    For Michael Ma, father of two children, peripatetic regionaltraveler, party animal, businessman, environmentalist andhost-with-most, Thailand is very much, at present, a positivework in progress.

    27-year-old Thawatchai Moonyong (Dan) was born andraised on the outskirts of Chiang Mai in Northern Thailand.Dan, who is a quali ed music teacher, has always had agreat passion for great tasting coffee and started to learnthe art of making this many years ago.

    In 2008 Dan heard of a new brand of coffee outlet whichwas coming to Thailand, and due to his love of coffee andpassion for making it, he knew he wanted to be part of theteam of the new outlet, now popularly known in Thailandas The Coffee Club.     His secrets to making coffee include using your hands, mindand heart, believing it is the way you make very special coffee.I truly love making coffee for people. Its great to see customerssmiling and enjoying the experience.

    Asked what he will do now that hes the winner, and whetherhe felt he was an inspiration to others Dan replied I really

    enjoy working at The Coffee Club. I think its important tokeep learning and improving myself. My dream is to one daygo back to Australia and study English and do a managementtraining program.

    Dan who is now based in Bangkoks Suvarnabhumi Airportoutlet is very happy with the opportunities that working for TheCoffee Club has brought. He is now the Barista Trainer for thebrand in Thailand and also has opportunities to travel to newstore openings to train new entrants, the most recent being toGuangzhou, China for The Coffee Clubs rst store in China.

    *A Barista is a coffee-making specialist who is speciallytrained in espresso coffee and espresso-based coffees such

    as Cappuccino.

    It was noticed from early on by The Coffee Club ThailandsGM Michael Chick that Dan had a certain talent when it cameto making coffee. Due to this, late in 2010, Michael decidedthat he should put forward Dan for The Coffee Clubs Baristaof the Year Competition. For this event, which is held over sixmonths, baristas battle it out to earn a spot in the nals wherethey are given 30 minutes in which to serve four perfectcoffees and four identical signature drinks.

    Competitors are judged on everything from extraction times,use of the grinder, milk texturing and presentation.

    Dan eased through the 6 month battle and was rewarded witha place in the nal, in which The Coffee Clubs six best baristascompete in Brisbane in a fast-paced brewing competition topour the perfect coffee. Nine judges critique each coffee on itssensory experience and the Baristas technical skills.

    Amazingly Dan took the title in a close contest. However,not only did he win The Barista of the Year title but also wonthe Signature Drink challenge. The Signature Drink Awardencourages baristas to come up with a new style of drink thatcould be served at The Coffee Club. In fact, the winning drinkdoes go on the menu for everyone across The Coffee Clubchain to try! Dan won with his with his original, Thai-inspiredChilli Kiss coffee containing hints of lemongrass, lime andspice.

    Dan, who as the winner collected a prize of $3,000 cash, saidI was very excited and honoured to receive the award. I willkeep learning and improving my skills and setting new goals.I am so happy I had the opportunity to travel and compete inAustralia with such talented Baristas.
