Relay for Life Gospel ShowcaseThe local Relay for Life Fundraising Team called Elizabeth’s Cancer Crushers will be holding their 2nd Annual Relay for Life Gospel Showcase on Friday, Jan-uary 26th at 7pm at the Krider Perform-ing Arts Center, located at 650 Volunteer Drive in Paris. Join Elizabeth’s Cancer Crushers for great music and fellowship featuring some of our area’s best musi-cians and vocalists including Rhonda Stanton, Young at Heart, Chuck Haney, Joe & Liz Hansen, Mike Holden. Ervin & Andrea Dutton with Marley Trosper and Elizabeth Cronin will also perform.Elizabeth Cronin is a young cancer survivor from Paris with her own Relay for Life Team called Elizabeth’s Cancer Crushers. The team includes family and friends who supported Elizabeth during her battle with cancer. This is the second year for The Gospel Showcase which is organized by Elizabeth’s family and friends. Admission to the show cost $8 per person and children under the age of 12 get in for free. In case of inclement weather, the event will be rescheduled for Saturday, February 9th. So on Friday, January 26th join area gospel artists as they fill the house with heartfelt praises and beautiful music, and all for a won-derful cause.

Kentucky Lake Girls Softball Sign Ups The Kentucky Lake Girls Softball League will be holding sign-ups on the Saturdays of January 27th, February 3rd and February 10th from 10am to 2pm at Hulmes Sporting Goods, located at 3735 HWY 641 in Paris. The sign-ups will be for girls ages 6u through 16u and the player fee will be $55. Hulmes will

also be having a big sale on their softball equipment during signups.

Bruceton First Baptist Chili Supper The First Baptist Church in Bruceton will be hosting a Chili Supper and Silent Bake Sale Auction on Satur-day, January 27th from 4pm to 7pm at the church, which is located at 30960 Broad Street in Bruceton. Potato Skinsoriginal recipe makes 4-6 servings6 small to medium sized russet baking potatoes (total 3 lbs)Olive oilCanola oil or grapeseed oilKosher saltFreshly ground pepper6 strips of bacon4 ounces grated cheddar cheese1/2 cup sour cream2 green onions, thinly sliced, including the greens of the onions

Scrub the potatoes clean then rub with olive oil and bake in a 400°F oven for about an hour until the potatoes are cooked through and give a little when pressed. While the potatoes are cooking, cook the bacon strips in a frying pan on medium low heat for 10 to 15 minutes, or until crisp. Drain on paper towels. Let cool. Crumble. Remove the potatoes from the oven and let cool enough to handle. Cut in half horizontally. Use a spoon to carefully scoop out the insides, reserving the scooped potatoes for another use, leaving about 1/4 of an inch of potato on the skin. Increase the heat of the oven to 450°F. Brush or rub grapeseed oil or canola oil all over the potato skins, outside and in. Sprinkle with salt. Place on a baking rack in a roasting pan (don’t use a cookie sheet, it will warp, use a roasting pan or broiler pan that can take the heat). Cook for 10 minutes on one side, then flip the skins over and cook for another 10 minutes. Remove from oven and let cool enough to handle. Arrange the potato skins skin-side down on the roasting pan or rack. Sprinkle the insides with freshly ground black pepper, cheddar cheese, and crumbled bacon. Return to the oven. Broil for an additional 2 minutes, or until the cheese is bubbly. Remove from oven. Add a dollop of sour cream to each skin, sprinkle with green onions.

Apple Sauceoriginal recipe makes 1.5 -2 quarts3 to 4 lbs of apples (about 7 to 10 apples) peeled, cored, and quartered4 strips of lemon peel (zest only)3 to 4 Tbsp lemon juice 3 inches of cinnamon stick1/4 cup of dark brown sugarUp to 1/4 cup of white sugar1 cup of water1/2 teaspoon of saltPlace apples into a large pot. Add the strips of lemon peel, lemon juice, cinnamon stick, sugars, water and salt. Bring to a boil on high heat, then lower the temperature, cover the pot, and maintain a low simmer for 20-30 minutes, until the apples are completely tender and cooked through. Once the apples are cooked through, remove the pot from the heat. Remove the lemon peels and the cinnamon stick. Use a potato masher to mash the cooked apples in the pot to make a chunky applesauce. For a smoother applesauce you can either run the cooked apples through a food mill, or purée them in a blender. (If you use a blender, do small batches and do not fill the blender bowl more than halfway.) Add more sugar to taste. If too sweet, add more lemon juice.

Remove from oven and let cool.

Apple & Sausage Pie3/4 lb sweet Italian sausage1 clove garlic, minced2 cups shredded fontina, provalone, and or asiago cheese1 cup ricotta cheese1/4 cup feta cheese2 eggs, slightly beaten

Reduce oven temperature to 350°F. Melt butter in a large skillet on medium heat. Add the apples, onions, and sugar, cook, stirring occasionally, until tender, about 5 minutes. In the last 30 seconds or so, add the garlic and cook until fragrant. Transfer mixture to a separate bowl. Increase the heat to medium high and in the same skillet add the Italian sausage. Cook, stirring only infrequently, until sausage is browned on all sides and is cooked through. Remove from heat. Remove the sausage with a slotted spoon to a dish lined with paper towels to absorb the excess fat. In medium sized bowl, mix together the cheeses and beaten eggs. Place sausage on bottom of pre-baked pie crust. Add the cooked apple

onion mixture over the sausage. Pour the cheese egg mixture over the apple mixture and spread it so it evenly covers the pie. Bake at 350°F for 35 to 40 minutes, until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

Cardiovascular disease is the number one cause of death for both men and women in the United States, claiming approxi-mately one million lives annually. More people die from heart disease than all forms of cancer combined. One out of four deaths in the United States is due to heart disease.

Many people who have heart disease, often don’t realize it. It is important for everyone to learn the signs that indicate you could be suffering from some form of heart disease. This knowledge can help you avert a medical crisis and ensure you receive prompt medical attention in the event you have a heart health emergency.

There are three big signs of heart disease that you should never ignore. They are:

1. Chest Pain or Discomfort - This is the classic heart attack symptom, although men and women can experience chest pain differently. Men are more likely to feel crushing, squeezing, or burning pain, or a pressure or fullness in the center of the chest. This pain may radiate to the neck, arms, shoulders, or the jaw. Women tend to feel tightness or pressure in the center of their chest that lasts more than a few minutes. The pain or discomfort can even go away and then return.

2. Shortness of Breath - In women, shortness of breath can occur with or without chest discomfort. Men may experi-ence flu-like symptoms, sweating, and a weak pulse.

3. Lightheadedness - Feeling lightheaded or dizzy often goes along with these other symptoms.

While these are the most typical symptoms of heart disease, there are other less obvious symptoms that can be experienced as well. Unexplained fatigue and exhaustion following rou-tine activities can be an indicator of heart disease, especially in women. Other symptoms include fainting; unexplained pains- especially in the back, neck, jaw, teeth, or between the shoulder blades; swollen feet, ankles, or legs; and a persistent cough. While these symptoms can all be due to something other than heart disease, it is important to take them seriously and seek medical attention, especially if you have other risk

Simple lifestyle changes can help to lower your risk of heart disease, and improve your heart health if you have already been diagnosed. Keeping careful control of your cholesterol levels, blood pressure, and blood sugar levels are essential for heart health. Avoiding smoking and tobacco intake are also crucial. Eating a healthy and balanced low fat diet and engag-ing in physical activity are also vital to heart health.

A timeless question came out of the Wesleyan movement in the 1700s. When small groups of Methodists met (John Wesley called them “bands”) the mem-bers asked each other, “How is it with your soul?” Just like it is with physical and emotional/psychological health, our spiritual health can and should be moni-tored. Christians may slip into spiritual lethargy or take on a zealousness that makes the spirit rigid or self-righteous. And not only must we watch out for maladies, the simple truth is, all of us can grow healthier in spirit (unless you’re already perfect!).

It’s incredibly important to be in ac-countable relationships with other Chris-tians who love you enough to ask about your spiritual health. But the road to improved spiritual health begins with honest reflection, and the Bible shows us what a healthy, growing spirit looks like. In Galatians 5 the Apostle Paul writes, “But the fruit of the Spirit is love, joy, peace, patience, kindness, goodness, faithfulness, gentleness and self-control.”

By God’s design these nine traits are to be present and growing in the lives of his children. All nine. You can’t opt out on patience, for instance. Make an honest evaluation of your current state and even track your progress by rating yourself on a scale, where zero means you are in a world of hurt and nine means you are thriving … no tens. There has to be room for growth!

Be Financially Prepared for Natural DisastersJust this past year, we’ve seen natural disasters in Texas, California, Florida and Puerto Rico – and looking back even further, it’s not hard to spot other traumas in virtually every part of the country. Whether it’s a tornado, hurricane, flood or wildfire, you may be at least potentially susceptible to a weather-related event that could threaten your physical – and financial – well-being. How can you protect yourself and your property?

As far as your physical safety is concerned, you’re probably already aware of the steps you need to take to shield yourself and your family. And now that many alerts can be sent di-rectly to your smartphone, you’ve got an even better chance to prepare for an approaching threat. But when it comes to

safeguarding your financial situation, you’ll need to be ready well in advance – and the following moves can help you be prepared:

Strengthen your home. Your home is probably your biggest asset, so you’ll

want to do everything you can to keep it safe. In the face of a truly calamitous event, such as hundred-mile-per-hour winds there may not be much you can do, but in less dire circumstances, your actions can help. Your insurance profes-sional can offer tips on protecting your residence.

It’s a good idea to review your existing ho-meowners or renters insurance periodi-cally to make sure you are sufficiently covered for all possible hazards. Keep in mind that homeowners insurance does not typically cover flooding, so you may need to purchase flood insurance from the National Flood Insurance Program. (Depending on where you live, this cov-erage may be required when you get your mortgage.) Also, in conjunction with maintaining your insurance, you should document your possessions, so you may want to make a video inventory as well as a written list containing descriptions and values.

Create an emergency fund. A natural disaster can lead to a wide array of un-anticipated costs: appliance repair or re-placement, hotel and restaurant bills, in-surance deductibles – the list could go on and on. Consequently, you’ll help protect yourself and your family by building an emergency fund. Some of this money should go into a liquid, low-risk account, but you may also want to keep a small amount of cash at home in a safe place, as ATMs and credit cards may not work during or following a disaster, when you must purchase needed supplies.

Protect your documents. As you go through life, you’ll accumulate a lot of documents – mortgage papers, insur-ance policies, financial accounts, tax statements and so on. If disaster strikes, you may need these documents. You’ll want to store paper copies in a fireproof and waterproof box or safe at home, in a bank safety deposit box, or with a rela-tive or close friend. Of course, we’re now living in a digital age, so you can store electronic copies of important documents in a password-protected format on a removable flash or external hard drive. Better yet, you might want to use a secure cloud-based service.

With luck, you can avoid being victim-ized by a natural disaster. But, as the old saying goes: “Hope for the best and prepare for the worst.” From a financial perspective, that’s good advice.
