What ’s Happening?Refuge Discovery Series: “For the Love of Bluebirds” Saturday, March 5th, at 1 pm at the Tennessee National Wildlife Refuge Visitor Center 1317 Wildlife Dr. The refuge invites you and your family to come learn about one of the most beloved birds in our backyard, the eastern bluebird. Naturalist Mitz Bailey will present a program about what you can do to help this bird and ways to attract them to your neighborhood. All participants conclude the program by building a bluebird nest box to take home. Refuge events and entrance to the visitor center is always free. The visitor center is open Monday - Saturday from 8 am-4 pm.

Hashbrown Slidersoriginal recipe makes 5 servings 1 (20 oz) package shredded hash brown potatoes 2 large eggs, beaten 1/2 cup shredded mozzarella cheese 1/4 teaspoon ground black pepper 1/2 teaspoon salt 2 teaspoons olive oil, divided 3 small avocados, peeled and pitted 1 pinch garlic salt 4 ounces thinly sliced serrano ham 8 ounces mozzarella cheese, sliced

Place hash browns, eggs, shredded cheese, pepper and salt in a large bowl. Mix the ingredients using your hands, making sure everything is well coated. Add 1 teaspoon of olive oil to a large nonstick saute pan over low to medium heat. Grab a handful of the potato mixture, about 1/4 cup, and create a ball. Place it down on the pan and carefully pat it down to create a flat disc shape. Cook for 3 to 4 minutes and then flip it over and cook for an additional 3 to 4 min-utes. Remove and place on a paper towel. Repeat until all hash browns have been used. In a small bowl, mash the avocados and sprinkle with a little garlic salt. Place a spoonful of the mixture onto a hash brown stack. Top with half slice of Serrano ham and a slice of mozzarella cheese. Top it with another hash brown stack.

Cut each banana half into 3 or 4 pieces. An instant-read thermometer inserted into the center should read at least 160 degrees F. Spread Southwest sauce onto 1/2 of the tortillas; top with lettuce and picante sauce. Place 1 hamburger patty on top of picante sauce layer and top patty with a tortilla, creating a sandwich.

Preheat oven to 350 degrees F. Mix olive oil and ranch dressing mix together in an 8-inch square baking pan. Add 1/2 of the potatoes, 1/2 of the zucchini, 1/2 of the onion, and 1/2 of the onion; stir to coat. Add remaining potatoes, zucchini, celery, and onion; stir to coat. Sprinkle bread crumbs and garlic salt over the top. Bake in the preheated oven until vegetables are tender, 50 to 60 minutes.
