The second cutting of hay was finished last week and grain harvest has started. The wheat crop is experiencing better yields due to the ideal growing weather that we’ve had. The corn crop is looking good however, it is 7 to 10 days behind schedule due to a late spring. This is the time of the year when feedlot numbers are at their lowest. Crews are busy hauling manure and preparing mounds in the pens. When I say mounds, I am talking about drying the manure, dozing it up in piles, and rounding the tops so cattle will have a good dry area to lay on when winter weather sets in. It is important that cattle have an adequate dry area when it snows & rains. These mounds will be scraped off when the pens become wet, leaving the animals with a dry place to lie. The cattle on pas- ture have started to come into the feedlot this week. They are looking really good and seem to be heavier than usual, due to the good grass conditions this year. Prices for calves and yearlings have been at an all time high. With cattle numbers being at such a low level this should produce higher fat cattle prices in the future, and hopefully every segment of the cattle industry will see a profit! We are excited to announce that Painted Hills Natural Beef now offers 100 % grass-fed beef in addition to our Choice Grade Natural Beef Program. Using the same great cattle as our regular natural program however, these cattle are simply maintained on a grass fed diet for those customers looking for the unique characteristics of grass fed beef. INGREDIENTS:• 1.5 lb Painted Hills Natural Beef Top Sirloin (cut into small chunks) • 1 onion, coarsely chopped • 3 teaspoons ground cumin • 2 teaspoons ground coriander • 1/2 teaspoon ground chilli • 1/4 teaspoon ground smoky paprika • 3 cups beef stock • 2 x 14 oz cans whole tomatoes • 14 oz can red kidney beans, rinsed and drained • Salt and cracked black pepper • 2 tablespoons chopped coriander • Sour cream, to serve, if desired PREPARATION:• Heat a little oil in a large deep frying pan over medium high. Add the steak, cook until

browned.• Add the onion, cumin, coriander, chilli and paprika to the meat, cook, stirring, for 2

minutes. Add the stock and tomato. Reduce the heat to low, cover and cook for 1 1/4 hours, stirring regularly. Uncover and cook for another 30 minutes, or until the meat is very tender.

• Add the kidney beans and cook for another 10 minutes. Stir through the salt, pepper and coriander.

• To serve, top with a dollop of sour cream if desire.

Meet Tracy Lewis our newest hire at Painted Hills Natural Beef. Tracy moved out west 5 years ago from a small town called Turin, New York. In college Tracy studied geology & environmental studies. When she isn’t working part time here at PHNB Tracy is the Program Coordinator & Edu-cator at the Oregon Paleo Lands Institute in Fossil, OR. Living in Wheeler

County reminds Tracy of where she is from, an area where there are more cows than people. Tracy enjoys: hiking, fishing and rock collecting. We are excited to have Tracy join the team.
