The Spanish Wine Law (“Ley 24/2003”) establishes a quality pyramid where the

Pago clearly stands out from the traditional appellations of origin. In some

aspects it is similar to the French ‘terroir’ concept.

Pago; Specific rural estate of vineyards which embodies singular soil and

microclimate characteristics which distinguish it from sites in the same region

while contributing to the unique features and qualities of the wine.

We´ve wanted to become different;

Each step given for the last 8 years were focused to reach the maximum

level of quality and express truly and exactly the Pago Ayles “terroir”.

3 HIGHLIGHTS ABOUT THE PAGO CONCEPT AND PAGO AYLES

Our wines are different ;

The estate has clay and calcareous soil (perfect for the vineyard), and has a

valley microclimate (cooler than the rest of the region). These results,

combinated with an intelligent winemaking allow us make different wines.

The Spanish Wine Law says that we are different;

Since the vintage 2010, Pago Ayles was recognized like a "Vino de Pago"

and we have the studies & analysis that certifies that our wines and “Finca”

are different. Only 13 wineries owns the "Vino de Pago" Status.

The estate;

The agro-food project of Pago Aylés began back in 1994 when the

estate was bought by the current owner, who unified different

properties that had belonged to the clergy and the nobility since

the Middle Ages, this way, becoming one of the biggest private

owned estates in the Aragón region (north eastern Spain), with an

extension of more than 3.100 hectares with all of the perimeter

fenced.

Aylés is not only a winery; it is a well defined territory where

nature and wine coexist in a very peculiar way. It is definitely a

Pago, with its own characteristics that differentiate and distinguish

it from other surrounding estates. Thanks to the breeding and

restocking of native endangered species, the European Union has

included us in the Natura 2000 network as a Special Protection

Area for Birds (ZEPA in Spanish).

The Pago wine conceptThe Pago wine concept

It is a concept similar to the French “Grand Cru”, the Italian “vigneti” or the German

“gesetzlich geschützte Einzellage”, intended to indicate the quality potential of the Pago

(both the vineyard and the “terroir”).

After 7 years, since October 2010 we have been recognized as a PAGO WINE (“Vino de

Pago”), as defined by the Spanish Vineyard and Wine Law (“Ley 24/2003”), becoming

the first winery in Aragón to have this title and one of the 10 wineries that in Spain

possesses this exclusive Designation of Origin granted only to the wineries with the

highest level of quality excellence.

In the Spanish wine quality pyramid, the Pago stands as the top tier with respect to

other Designations of Origin. As such, they must comply with strict requirements

relating to the process of production, processing and bottling such as: For the

production of a Pago wine, only grapes coming from the Pago may be used.

•Production, storage and aging of these wines should be made separately from other

wines.

•A comprehensive quality system must be applied from the production stage, until the

marketing of the wines

Our Vineyard

Nurturing the vine is much more than a mere

production process: All the plans, projects and

activities of the winery aim to integrate in its

wines, a blend of traditional cultural practice, the

landscape, the flora and fauna that shape these

lands giving fruition to such excellent and original

wines. In addition to the centuries-old vineyards

that existed in the farm, since 1994 Tempranillo

and Garnacha native grape varieties to our region

have been planted to sit alongside the

international varieties Cabernet – Sauvignon ,

Our Pago Wines

The “Pago” wines will be launched gradually during the

next coming years. We will be innovating in the market,

producing Spain’s first young red Pago wine, starting

with the “a” from Aylés in the second semester 2011. It

is a red ‘coupage’ wine 2010 vintage with a blend of:

35% Merlot, 35% Tempranillo, 15% Garnacha, 15%

Cabernet-Sauvignon.

These wines are initially targeted (but not exclusively),

to the on-trade market.

ALDEYA is an ancient loanword from the

Arabic Al-day’ah (The village). The first

references to the primitive Aldeya de Aylés

date back to the XIIth century, when this

scarcely populated rural settlement, was

reconquered for the Christians by Alfonso I de

Aragón - “The Battler”.
