Eyes on Nut r i t ion
What is the difference between a portion and a serving?
A serving is the amount listed on the food label. A portion is the amount of food you CHOOSE to eat at one time. Sometimes our portions are 2-3 times what a serving should be. If you double or triple your portion then you also need to double or triple the nutrient information.
If you look at the label to the left and you eat a 2 cup serving then you must also double all of the nutrition information.
How do I manage portion size when eating out?
Take half home
Avoid buffets
Order a healthy appetizer or two instead of a meal.
Pick steamed or grilled instead of fried.
Eat slowly so your brain gets the message you are full.
Order small drinks and salads.
Why is it important to watch nutrition?
Good nutrition is important throughout our lives. Good nutrition helps to manage or avoid common diseases such as: certain cancers, high blood
pressure, type 2 diabetes, obesity, heart disease, osteoporosis.
Nutrients are essential for life and to keep our bodies functioning well. Nutrients we need more of include: calcium, fiber, potassium, vitamin A and Vitamin C. Nutrients we need less of include: total fat (especially saturated
fat), Cholesterol and sodium.
Sodium is often a ‘hidden’ nutrient. We need small amounts of sodium to help organs and fluids to work properly but we get more sodium than just the
salt we add to our food. Sodium is often used to preserve food in prepackaged foods.
When reading a label 5% DV is low and 20% DV is high for any nutrient.
Do I have to stop eating sugar because I have diabetes?
The answer is not as easy as it seems. Remember the saying ‘Everything in moderation’ ? It rings true with sugar. Some very nutritious foods contain sugar, i.e. tomato sauce and protein bars. Making sure you are getting enough protein is just as important, if not more so, than watch-ing your sugar. The combinations of foods are what help to maintain blood sugar levels. Eating a small piece of dessert is going to be more satisfying than denying yourself. If you have a small, 2x2 piece of birthday cake or sliver of pie, you will not continue to crave it. You will need to be aware of the carbohydrate count. Not maintaining your blood sugar at a normal level can lead to other health problems such as: kidney disease, heart disease, eye problems, non healing wounds and neuropathy. One thing to always avoid is sugary drinks such as: soda, Gatorade, sweet tea, fruit juice and energy drinks. One can of pop can have 10 teaspoons of sugar in it. Water is your best choice to keep kidneys healthy and dilute blood sugar.

Open Letter to Home Delivered meal clients;
Beginning on July 1, 2019 we will be implementing some changes to our home delivered meal program.
During the last few months in our newsletter we have been discussing dietary issues that affect many of our
clients both with the home delivery and congregate. Some of those issues include carb consistent diets for
those with diabetes and also new changes many doctors are implementing for those with diverticular
disease.
We have been steadily growing our home delivered meal program in the last few years and now serve
approximately 320 home delivered meals per day. It has become increasingly difficult to manage all of the
requests we receive for modifications of our meals. After extensive conversations with the Area Office on
Aging, other senior centers, two registered dieticians, the Defiance County Commissioners and our nutrition
staff we have made some changes. Beginning July 1st we will be serving only what is listed on our menu. The
meals will now be carbohydrate consistent and therefore appropriate for all to eat, including those with
diabetes. Our menu will be including either 4 or 5 carb choices per meal. All of our fruits are packed in water
or their own juices, Jell-O and puddings will be sugar free and desserts will be offered occasionally as allowed
by our policies.
Because doctors are no longer limiting seeds, nuts or hulls for those with diverticular disease we will also be
providing these fiber rich foods for everyone, please don’t eat something if you should not. We encourage
you to cancel your meal if there is something offered you cannot eat or do not like. We will be no longer
taking requests for changes such as no pork, no V-8, no tomatoes, no corn, no seeds, no mushrooms, no fish,
and no bread. We WILL continue to offer low sodium alternates and chopped or ground meats as requested.
We offer 5 of your 21 meals per week. We will continue to work diligently with you to meet your nutritional
needs while serving approximately 24% of your meals each week.
On a secondary note, the rules of the home delivered meal program are that you MUST be home at time of
delivery or call to cancel by 8am. We understand an occasional doctor’s appointment; however, if you are
able to be out and about on a regular basis we respectfully request you come to one of our centers for our
congregate meals. We now have a waiting list for client’s who need the meals and if you are not home
regularly, we are throwing out meals that other cli-
ents truly need. Please call us if you have questions.
Thank you for your cooperation,
