It is thrilling for me as Vice-Principal Academic to see what Dr. Marie-Josée Berger,

our new Associate Vice-Principal for Continuing Education, her team and colleagues

from across Bishop’s have put together in the Fall 2015 catalogue!

I am confident that this is promising of bigger and better things to come from a re-

newed Continuing Education department at Bishop’s University.

This coming year, we offer an interesting array of credit and non-credit course offer-

ings that are sure to appeal to many residents of the townships. I encourage you all to

get the word out that things are happening in Continuing Education at Bishop’s this

year!

I also encourage you to send us suggestions for the future. We aim to offer life-long

History of the Eastern Townships

From a vast wilderness, specked only by the foot trails of Abenaki tribes, to a re-

gion rife with squatters, threatened by American invasions and cut off from civili-

zation, this lecture series offers a window onto life in the frontier of the Eastern

Townships from the late 1700s to 1850.

The lectures will cover native presence (Abenaki and Iroquois) in the Townships,

the early settler groups (American, British, Irish, Scottish) and what brought

them to Canada and the Townships, American invasions (ex. Roger’s Rangers,

Benedict Arnold, the connection with the Lower Canada rebellions), early econo-

my, and what life was like in the Townships in the late 18th and early 19th centu-

ries. The lectures will be illustrated with images, maps and historical documents

from the archives collection of the Eastern Townships Resource

Centre, as well as other sources.

Daniel Goleman, who coined the term EQ (emotional quotient), shows us how emotional

Wine Appreciation — Cost $190 Begins Oct. 19th 2015

This workshop is designed to give the wine novice a better idea of the fundamentals of

wine tasting techniques, food and wine pairing, wine vocabulary and a general introduc-

tion to the science of wine making.

Financial Management for non-profit organizations—Cost $ 130

This workshop provides the basics of accounting, budgeting, control and financial proce-

dures in addition to ways to avoid fiscal difficulties and maximize cash flow opportunities.

It is designed for managers and directors of small to medium sized non-profit organiza-

tions.

Business Etiquette— Cost $40

This workshop present tips on making an entrance, the power handshake, introduction

protocol, business lunch and dining etiquette, small talk manners, and business card pro-

tocol. For business people wishing to enhance their professional image and outclass the

competition in a highly competitive workplace.

The workshop will focus on creative art. Any type of visual art and art medium can be

employed within the therapeutic process including painting, drawing, sculpture, photo-

graphy and digital arts. Through creating art and reflecting on the art products and

processes, participants will enhance their cognitive abilities and enjoy the pleasures of

making art.

Information from media is abundant and comes from different sources. Participants

will learn to understand media and the messages they give about specific issues.

They will also become aware of opportunities and resources available through the me-

dia.

Social policy is rooted in a deep understanding of human complexity and of human de-

velopment. Participants will explore different activities in order to understand that

events at one stage of a person’s life can have important consequences later on. In

general, most people need some assistance at some stage of their live: from school to

work, starting a new family, family breakup, work to retirement or finding work after a

period of joblessness. How can social policy provide main support for individuals

throughout life?

This course will cover the chemistry of brewing water and its contents. We will

begin by describing the nature of water itself, then provide an overview of the

chemicals and minerals that are to be found therein. Acidity, alkalinity, and pH

will be defined in detail and their effect on the extraction of both desirable and

undesirable compounds will be explored. Finally, the effect of minerals on beer

quality will be discussed.

This course will cover the biology, biochemistry, and chemistry of malting

(producing malt from raw grain) and the mash-in (steeping malt in brewing wa-

ter to produce the sweet wort). In the section on malting, the germination and

kilning processes will be described in detail, as will the chemical processes occur-

ring that result in formation of distinctive colour and flavor compounds in the

malt. In the section on the mash-in, the extraction of starches and proteins and

their conversion to sugars and amino acids, as well as the extraction of other

compounds critical to beer quality, will be explored.

The Brewing Certificate—6 non-credit courses

The role of boiling in producing quality beer will be explored, as well as the chem-

istry and biochemistry of hops. An overview of hops will be provided, including an

in-depth discussion of hops varieties and their characteristic bitterness, taste,

and aroma profiles. The chemistry of alpha acids (the bittering agents and pre-

servatives) and essential oils (the flavour and aroma compounds) will be dis-

cussed, as will the impact of various hopping protocols (early boil, late boil, dry

hopping, etc.).

The Certificate in Brewing Science will be a not-for-credit, six course certificate

that will be offered to the wider community through Continuing Education at

Bishop’s University. The certificate will provide participants with a sound but

basic foundation in the science of the brewing process, of the ingredients in beer,

and of the analytical methods typical to the brewing industry. Five of the six

courses will be offered online (distance learning), and the sixth will be an experi-

ential learning component that participants will have to come to Bishop’s to ob-

tain*.

In this course the biology and biochemistry of yeast, particularly Saccharomyces

and Brettanomyces strains, will be explored. An in-depth discussion of the fer-

mentation of sugars will be central to this course, but we will also investigate the

incredible chemical variation that yeast contributes to beer. The nature of other

biologicals (e.g. bacteria and wild yeast) will be discussed as will the steps that

must be taken to eliminate their negative impact on beer quality. The isolation

and culturing of yeast strains will also be described.

This course will begin with an overview of the characteristics of beer that are tak-

en into consideration in judging quality: taste, aroma, bitterness, head consisten-

cy and retention, mouth feel, alcohol content, carbonation, carbohydrate concen-

tration, protein content, caloric content, and much more. Each one will be tied to

the analytical methods, both qualitative and quantitative, used to assess these

parameters.

To complete the Certificate in Brewing Science, participants must engage in an

intensive 6-week (to be confirmed) experiential learning course that ensures that

they begin to receive the practical experience critical to the development of any

brewer. Every aspect of brewing will be investigated during this process, drawing

upon the concepts covered in the courses, including the analytical and instrumen-

tal methods used to assess beer quality. This course will be offered during the

Spring or Summer of each year and will culminate in a Beer Festival where partic-

ipants will showcase their creations to the local community.

focuses on the ownership of interpersonal and linguistic skills, the development of com-

munication strategies, and interactive activities between the teachers and students.
