Proteins have a plastic or constructive function. They provide
materials for cells and tissue constructions and repare and replace
them. They can be burned to produce energy: 1 g of Proteins = 4,1
kcal Sugars or carbohydrates have an energetic function. They are
main sources of energy for the body. Sugars in excess are
accumulated in tissue. They can be burned to produce energy: 1 g of
Sugars = 4,1 kcal Fats or lipids have an energetic function and
contain more than double of sugars energy but their digestion is
very long and complex. Fats in excess are accumulated in tissue.
They can be burned to produce energy: 1 g of Fat = 9 kcal

Vitamins do a regulatory function. There are different types of
vitamins and everyone does a specific function. Mineral salts have
a plastic function, for tissue construction, and a regulatory
function. Water is a fundamental substance for life: almost all
chemical reactions are doing in water. It is present in almost all
food.

In the first level there is food which contain vitamins and
they are necessary for growth and health. The main vitamins are
Vitamin A, the B complex of vitamins, vitamin C and D. In the
second level there is the typical Mediterranean food: bread,
cereals, rice, pasta and potatoes. They contain carbohydrates,
which are the bodys main source of fuel. In the third level there
are condiments: oil and fats In the fourth level there are milk and
dairy products ( milk, cheese, yoghurt).They are plastic and
energetic. In the fifth level there food contain proteins, which
are used for building cells ( meat, fish and eggs). In the sixth
there are cakes, sweets: they contain fats and sugar. They aren t
too much healthy.
