PANERA BREAD & TIMHORTONS COME TO TOWNBy Mike Peterson

Two bakeries have come to town this month in Panera Bread andTim Hortons. Both share mouthwatering products and fulfull a sortof niche in town by providing chain-bakeries (although theyllhave to compete with the very formidable and local darling,Dakota Harvest Bakers). While Panera Bread is a US-based chain,Tim Hortons is extremely popular in Canada. In fact, I cant watcha single hockey game out of Canada (go Jets!) without their logo

being plastered everywhere. So what gives? What are these twochains about, and why are they so popular?

Mind you, Im a fast food guy. Ive hardly tried the healthy stuffsuch as these stores, but I guess thats where Grand Forks is heading, right? So I might as well hop on this train, no? But can youkeep a secret? I really have no business writing this article, as Iknow very little and have no experience with either. The textcomes directly from their respective Wikipedia entries. In spite of my lack of experience with either, I still feel the need to get theword out because to a certain extent, both places are known for their cult-like following... so its a pretty big event for GrandForks. And at least it gives me an idea for a date should I ever findone.

Panera BreadExcerpt from Wikipedia.org/wiki/Panera_BreadPanera's Bakery-Cafe section includes a wide array of pastries, such as croissants, bagels, cookies, brownies, etc. They also have amenu for this section of the restaurant that promotes items such ashot breakfast sandwiches, artisan breads, and a Panera kids sec-tion. Aside from the bakery section, they have a regular menu thatis broken down into the following categories: - Hot Panini - Signa-ture Hot Entres - Signature Sandwiches - Cafe Sandwiches -Soups & More - Signature Salads - Cafe Salads - Side Choices -Panera Kids - Fruit Smoothies - Frozen Drinks - Iced Drinks - Cof-fee & Tea - Espresso Bar Drinks. These sections include many op-tions that are suitable for lunch, dinner, or often even breakfast.Their soup schedule changes daily, sometimes based off of the sea-son. One popular menu offering is the "You Pick 2" option, wherecustomers aer allowed to choose from two different menu options, and receive half of a portion of each. This applies to their sand-wiches, salads, or soups, of which customers can mix and match. All menu options come with a choice of side dish, which are listedon the menu under the heading "Side Choices".

Tim HortonsExcerpt from wikipedia.org/wiki/Tim_Horton%27sTim Hortons' first stores offered only two products coffee and

doughnuts. Aside from its coffee, tea, hot chocolate, and dough-nuts, the Tim Hortons menu now contains a number of other bakedgoods, such as doughnut holes (branded as Timbits), muffins, croissants, tea biscuits, cookies, rolls, danishes, and more recently

bagels of which Tim Hortons sells one out of every two in theCanadian food service industry. Take-home cakes are offered insome locations.

Since the mid-1990s, the chain has moved into other areas, includ-ing speciality and premium items such as flavoured cappuccino, iced cappuccino, iced coffee, New York-style cheesecake, and alunch selection that includes soups, chili, and submarine-stylesandwiches. In fall 2006, Tim Hortons began rolling out a breakfastsandwich. The sandwich consists of an egg patty, processed cheese

slice, either ham, bacon or sausage as the topper, and is placed oneither a biscuit, English muffin or bagel.[66] In October 2007, TimHortons launched the chicken fajita wrap, which contains spicedchicken and sauted vegetables, but was soon discontinued, re-

placed a year later with the barbecue and ranch chicken wrapsnackers. In December 2007, they introduced hash browns and theBagel B.E.L.T., a breakfast sandwich that also includes lettuce andtomato.

Coupled with the expansion and expanded menu came the out-sourcing of baked goods. Doughnuts, which used to be made atnight in order to be ready for the morning rush, are now fullycooked and then frozen and delivered to every restaurant in Canadafrom Brantford, Ontario. Each restaurant bakes and finishes the

product throughout the day. As of April 2007, many of the variousmuffin batters are being revoked, as frozen, pre-made and pre-wrapped muffins are being introduced to all bakers at Tim Hortonlocations.

The Holidays Hit!By The Popcorrn Wench

Its the busy season for movie go-ers this month. Thats right. TheHolidays! Weve got your Thanksgiving flicks (Free Birds), your Christmas flicks (Black Nativity), and all those blockbusters thatwere missing this summer.

Kicking off the month of November is the long anticipatedEnders Game, the story of a young boy who is chosen to lead the

battle to end all battles and the tug of war between right andwrong. Do not miss this movie! Extremely well adapted from thesci-fi classics by Orson Scott Card, the movie was actually pro-duced by the author after many years of courting by other studios.Though the pacing seems a bit off at times, and so much of Enders inner turmoil is impossible to depict thoroughly in anyfilm, I really have nothing negative to say about this one. Justaw, man. Just go see it! It reunites Ben Kingsley with young star

Asa Butterfield (Hugo) and also features Harrison Ford, AbigailBreslin and Viola Davis. Directed by Gavin Hood.

Free Birds looks like good fun for the family. A turkey pardoned by the president finds himself in the lap of luxury and livin thelife until a rogue turkey kidnaps him and shows him the truthabout Thanksgiving and that he escaped being dinner. They some-how get their wings on a time machine and travel back to the firstThanksgiving in 1621 and try to change history and the future for all turkeys. So, this premise reminds me a little of ChickenRun, not gonna lie. Lending their vocal talents to the film areWoody Harrelson, Owen Wilson. Amy Poehler and George Takei.

I am greatly looking forward to About Time, a film directed byRichard Curtis, whose films Love Actually and Four Weddingsand a Funeral I found to be utter rot but, this one seems to be acomplete delight! Bill Nighy plays a man who has an interestingfamily trait. He can travel back in time. He informs his son(Domhnall Gleeson) that he also has this power, which he

promptly uses to establish a relationship with the lovely RachelMcAdams. However, even though he has as many chances as hewants with life, he cant always produce the happy ending hewants. Full of humor, tears, wit and crisp plot twists, its abouttime we had a movie this charming.

The Book Thief, based on the best selling book by Markus Zusak,is the remarkable story of a young orphaned girl, taken in by thekindly Hubermann family just at the outbreak of World War II.Look for Oscar nominations for this one, staring Geoffrey Rush,Emily Watson and French-Canadian newcomer Sophie Nelisse, di-rected by Brian Percival with a score by John Williams.

Every proper holiday season needs its classic Disney film, andthis year we are presented with Frozen, the story of the SnowQueen. The inner kid in me (which, trust me, is not buried very

deeply) is quitehonestly, a littlegiddy for this funflick! With songs by Robert Lopezand Kristen Ander-son-Lopez (Av-enue Q, Book of

Mormon), I feel assured there will besomething for everyone in the magical motion picture. KristenBell is living out her childhood dream of voicing a Disney

princess, as Anna, a young lass on a mission to stop her coldhearted sister Elsa (Idina Menzel) before their kingdom is de-

stroyed. You will also hear the voices of Jonathan Groff and theever-surprising Alan Tudyk. The story of the snow queen has been kicking around the WaltDisney Studios since 1943, but only now has it finally had achance to bloom from beneath the frost.

It feels as if weve been waiting for Thor 2: The Dark World for what seems ages, but its finally here!! With a new evil loomingover the universe, one far greater than any our hero has ever faced

before, Thor is in over his head and needs a little help from.. Loki?Yes, the God of mischief takes arms with his adopted brother tofight the relentlessly vengeful Malekith, who intends to essentiallyun-do creation itself and condemn the world to literal non-exis-tence. Somebody needs a hug.

With Kenneth Branaghs departure from production, Alan Taylor has large boots to fill as the films director, but has shown that hecertainly has a feel for Thors world, and the political fire in theunderbelly of Asgard.Back again are Chris Hemsworth, Tom Hiddleston, Natalie Port-man and Anthony Hopkins. Let the battle begin! (finally)

Last, but not least for my must-sees of the month is Catching Fire, the second in the Hunger Games series. Oh, my gosh. First of all, lets just take a minute to appreciate a good book. I know, Im hereto talk about movies, but when a book is this tremendous Ok, soyoure sitting there, in your little nook, reading away and you be-come, firstly, transported. Then gradually you get to know your new friends, and before too long you turn into a crazed, snappingmonster because of whats happening in a world that isnt there to

people that arent real. Well, thats what I turned into, anyway. But, the point is, these stories and characters are very real to us,and when a movie adaptation can still pull you in like that, andkeep you at the edge of your seat even when you know what hap-

pens! Sorry, I am totally geeking out.

So, if you havent seen the first one of the movies, go rent it, like, now. Or better yet, go read all three books first (this might take totwo days, tops). Catching Fire picks up immediately where theHunger Games left off, so dont jump in the middle of this one.Katniss Everdeen is supposedly home, safe, after the horrors of her turn in the arena, but rebellion is smoldering in the ruins of Panem, and the ruthless President Snow is not about to let go of his tyrannical control.

Well, I wish I could linger with you a while longer, but I have a bazillion movies to go watch now. I hope you enjoy my picks for the month. Well see you next time when Ill be babbling incoher-ently as I try to put into words my excitement for The Hobbit

Music has the strongest trigger to bring back memories. A simple guitar riff or chorus hook can bring back a moment of time in someones life.

The instant gratification of the Internet does have its limits. Being there and watching a video onYouTube can never be the same. Why else do people throw down their rent money to see a favorite

band in concert? The entire set will be uploaded online the next day, so why spend money? Any avidfan will tell you, Because its worth it.

In 2000 a group of guys started out playing covers of some of the theatrical rock songs of the 1980sfor their own amusement. 13 years later Hairball has become well known and embraced by fansaround the world.

Thats the one beautiful thing about Hairball, it is like 20 of the tribute acts you will ever see, much bigger teeth all in one squished in couple hours. If you dont like Motley Crue dont worry because it

turns into Journey in about 3 minutes and if you dont like Journey, dont worry because it becomesVan Halen in a couple minutes and then it turns into Kiss, says Mike "Happy" Schneider singer andlead guitarist of Hairball.

After5: It looks like the show goes through a lot of changes. You have the costumes, vocal styles and personas. How are you able to transition from one act to the next?

Happy: Its just like a Nascar pit crew back in the dressing area. I cant even tell you how many thereare but each one of them is good at what they do. While one guys getting his tires and his oilchanged the other guys getting the gas and going out on stage. It kind of just goes around and around.

After5: Whats been a big change since you first started?

Happy: Its just a snowball going down the ski slope. It just keeps kind of increasing. Were alwaysinvesting in making it bigger all the time. Its always building. It is the members of Hairball just ableto live out our adolescence. We still dress up like Kiss just as we did in junior high. We still get to actlike children and every night is Halloween.

The difference from when we were doing this when we were 16 year olds to full grown rock and roll

super heroes that you see before you is we have a real pyro technician with insurance and a permitand the amps and guitars are much more expensive and now we have a big crew. Its kind of our fan-tasy come true. Its other peoples fantasy too. I feel like the line between the audience and the bandis more thin with this show than any other band that you would go see, because really were just cele-

brating what we feel is some of the most exciting rock and roll to see and hear performing the way wethink it should be done or trying to replicate and do justice to what our rock and roll heroes and its asmuch about the gathering of people that makes it an arena rock celebration. Its about more than the

band. Its about everything that happens in that room and the people coming together and celebratingthat common cause which is this type of showmanship this style of rock and roll. Something thats

big, visual, something material that has stood the test of time. I just dont think theres ever going tocome a day when Kiss and AC/DC, are not cool and fashionable. I think theyre right in there withElvis. Were just celebrating it onstage and just like the fans that are out front throwing it back at us.

After5: It looks like you guys have a show once a month steady for a long time. How do you keep upthe energy that kind of emulated from those arena concerts from the 80s?

Happy: Did you say once a month?

After5: Yeah, it looks like you guys were doing a show once a month for the past year.

Happy: Oh we do WAY more than once a month.

After5: Way more than once a month?! WOW!

Happy: Oh my gosh yeah! This is way beyond a full time job. Im in Galveston Texas right now. Wewere just in London with the Minnesota Vikings then we went to Mexico and played a radio showthere that was over 10,000 people. When it gets to be this summer were playing every night in Au-gust and July. We definitely play every weekend. It gets to be more and more all the time. It used to

be that we played in bars in Minnesota but this message seems to be kind of going to the world andthats where we intend to take it.

After5: So besides from it being a full time job what is something that you get out of it that keepsyou going?

Happy: I get the same thing out of it that I got out of rock and roll when I put the needle on my firstkiss record. I get the same buzz. Its about my gang of brothers that I call hairball just kind of united, all the places we get to travel, we get to meet.My first show done in my parents basement and it was gun powder in coffee cans and dry ice going

into buckets. We do the same thing weve always done because it never stopped being cool to us.

After5: Do you have any plans to incorporate any other bands in the future or are you going to stick to the ones youve been doing now?

Happy: We stick to things that are theatrical primarily because we are such visual show. Thats whatwe tend to cover. I mean theres a lot of good music out of the 70s 80s and the period we cover butnobody dresses up like Tesla for Halloween. Theres great music there, but we present things thats

big costumes and theatrics that people will understand and identify with the visuals and the music andthe full package. Thats the way we are.

After5: Whats something you want the audience members to experience while theyre at the show?

Happy: Anybody that might if at all, has gone to these concerts, you can go with it. You remember how cool and how big and how important these groups and these shows were to your life. Weregoing to hand it to you on a big blood stained sweaty silver platter. The amazing thing about Hairballis 10 and 12 year olds seem to know all this stuff. Its timeless classic rock. It seems like everybodyfrom cradle to grave understands it. Dont look into it too much. You get out of it whatever you wantto get out of it, but its a celebration. Thats what it is, so were there to celebrate.

Hairball will perform on November 23rd 2013 in Grand Forks, ND at Alerus Center.Doors open at 7:00, music starts at 8:00. Tickets are $20 and available through Ticketmaster:http://www.aleruscenter.com. All ages welcome to the event.

    Ask the Fitness Gal

BY JAIMIE MIESELQuestion: I will be starting a walking program soon andneed to purchase a pair of shoes. What should I be lookingfor? I want to make sure I buy the correct shoe for me.

Answer: Congratulations on committing to your health by joining a walking program. A good shoe can definitelymake your walking more enjoyable and help you stay ontrack with your goals. Shop for shoes in the evening whenyour foot is slightly swollen. Make sure you try on bothshoes and wear the same socks you are going to walk in.The shoe should be comfortable right away. If the shoes aretoo tight, do not expect them to stretch out. When pickingout a new pair of walking shoes, be sure to consider your

foot shape and arch type: foot size; wide or narrow foot;flat, low, or high arches. Once the shoe is on, there should be about a half-inch between the endof your longest toe and the shoe. Large chain sports stores or department stores will have a va-riety of shoes to choose from. If you are still unsure about a proper fit, consider visiting a spe-cialty run/walk store where a professional can analyze your walk, size your foot, and check for

where you distribute your weight as you walk. He/she will then show you a variety of shoesthat will be specific to your foot. Most importantly, buy shoes that are lightweight, breathableand comfortable. All walking shoes will eventually show signs of wear and tear, even if theystill feel comfortable. On average, a walking shoe will last approximately for 300-500 miles.Keep a journal of your exercise and mileage, as this will help you understand when your shoesare ready to be replaced.

Question: Is Greek yogurt a healthier option than eating regular yogurt?

Answer: Both types of yogurt in their plain, non-fat or low-fat form are excellent choices for ahealthy diet. Both types are low in calories, packed with calcium, and contain live bacterial cul-tures. Greek yogurt, which has a thicker texture and consistency due to the removal of liquidwhey, lactose, and sugar, can pack up to double the protein with a typical serving containing15-20 grams. Greek yogurt also tends to be lower in carbohydrates, with 5-8 grams for Greek yogurt vs. 13 or more for regular yogurt. Remember, both types of yogurt will have a higher carb content if you choose fruit flavors or yogurt with added sweetening agents. If you dochoose Greek yogurt, take advantage of its versatility as it can be used as a substitute for creamcheese, mayonnaise, and butter in many recipes. Regardless of which type of yogurt you

choose, aim for non-fat or low-fat versions and add your own fruit to be more in control of thecarb and sugar content.

"PAPER OR PLASTIC?" NCGA SUGGESTS NAt the grocery store, when the check out clerk asks, paper or plastic?, whats the more ecologicallysound choice? Consider this: About 14 million trees are used annually to make paper bags for Ameri-cans. And, it takes 12 million barrels of oil to make a years worth of plastic bag. The National Co-opGrocers Association (NCGA), which represents 109 natural food co-ops across the nation suggests thechoice should be: Neither.

For the environmentally conscious, deciding whether to use paper or plastic at a grocery store canmake you feel like youre caught between a paper mill and a petrochemical plant, said RobynnShrader, chief executive officer for NCGA. If at all possible, this environmental dilemma has a fairlyeasy solution BYOB bring your own bag.

Shrader suggests making a small investment in reusable bags and keeping them in ones home, car and/or office. Seek bags that are sturdy (heavy canvas is one good choice) and roomy enough to haulgroceries (string cotton bags expand greatly but can also be easily tucked into a purse or backpack). An-other option is bringing ones own storage crates, which make loading and unloading groceries espe-cially easy.

Of course, with all the demands of life, family and work, its hard enough to find the time to shop for groceries, let alone remember to pack reusable bags before shopping, Shrader added. Still, there aresome options for using the least amount of paper or plastic possible at checkout. Among these: Chose whichever bag paper or plastic you are most likely to recycle. Use as few bags as necessary. If you bag your own groceries, pack each bag more fully; dont double

bag. If a store employee bags them, ask them not to double bag. Skip the bag altogether when you have only an item or two to carry. When you get the paper or plastic bag home, make sure you reuse it: for lining trash cans and diaper

pails, for packing materials, composting (paper), craft projects and wrapping paper (paper). Take them to a nearby Goodwill or consignment shop that can reuse bags.

    About NCGA

The National Cooperative Grocers Association (NCGA), founded in 1999, is a business services cooper-ative for consumer-owned food co-ops located throughout the United States. NCGA is owned by 109food co-ops operating more than 130 stores in 32 states with combined annual sales of over $920 mil-lion. NCGA helps unify natural food co-ops in order to optimize operational and marketing resources, strengthen purchasing power, and ultimately offer more value to natural food co-op shoppers every-where.

ENERGY TIPSby Jason Schaefer, 401(e) Home Energy ServiceHome Improvement: Lighting Your Way to SavingsShorter days mean less natural light to brighten up our homes and businesses. With a long and dark season ahead, its a good time to consider lighting improvements. While still more expensive than in-candescent and CFL (compacted fluorescent) bulbs, LEDs (light-emitting diodes) are coming down in

price. Increasing affordability, superior efficiency, and extensive lifespan make LEDs a good, long-term choice for residents and business owners looking to save money on their electricity bills. Howdo LEDs stack up against other bulbs? According to US Department of Energy, LEDs use only 20-25% the energy that incandescent bulbs do and last 25 times as long. CFL bulbs are a more efficientoption than incandescent, but still LEDs lead the way. For a look at what options are available on themarket, check out this Popular Mechanics article on LED, CFL, and other lighting products. An in-creasingly practical and affordable option, LEDs can keep your home bright and save you money. -Jason Schaefer 401(e) Home Energy Service

Home Improvement: Landscape Your Way to Energy SavingsLiving in the Upper Midwest means long winters and short summers. Even though Midwesternersseem to make the most out of every season, the spring, fall, and summer seasons do present us withthe opportunity to get out and tackle those outdoor tasks and landscaping projects that have to waituntil the snow clears and the ground thaws. And did you know that the right landscaping can helpyour home conserve energy too? There are several landscaping choices you can consider that add

beauty and purpose to your yard or property. According to the U.S. Department of Energy, a well-de-signed landscape can curb your heating and cooling costs by up to 25%. By strategically positioningtrees and shrubs, you can create a windbreak to shield from freezing winter winds. Planting decidu-ous trees (those that drop their leaves in the winter) can let the winter sun through when you need it.In the summer, the leaves can help shade your home from the hot sun. In addition to energy conserva-tion, you can design your lawn to conserve water as well. By selecting native and adapted plants thatrequire less water and inputs, you can keep your water usage down (and the energy necessary for

pumping it). Mulching is also an easy way to keep your lawn healthy during dry spells, keeping mois-ture from evaporating when plants need it the most.

I dont believe in finales. As of late, Ive found myself enjoyingthe penultimate episode rather than the finale. Dont know penulti-mate means? I used it to sound smart and impress you all. Preten-tious, I know, but now you can learn what it means and use itaround your friends for the same purpose. No, Im not going to

just tell you what it means, you have to work for knowledge in thisworld kids or youll never get ahead. Fine, it means second to last.Yes, some jerk created a word so epic sounding only to make itmean second to last. Penultimate episodes tend to follow a rela-tively similar guideline; tons of buildup, which leads to a feelingof suspense and wonderment.

This tangent was all a roundabout way to not only make me soundsmart, but to tell you thats how I think shows should end. Somethings should wrap up, but I want to think about the show later. Iwant to believe the characters continue to play out their lives evenafter the screen goes dark because they still do, at least in myhead. And my doctor says thats just fine. He calls it, imagina-tion. Often times you see lists of the greatest finales of all time, and it always includes old shows like M.A.S.H. or Cheers. Well Iwasnt alive for those finales. And if I was I dont remember, sothey are irrelevant. Without further ado lets discuss some great fi-nales, some awful finales, and some finales Im personally lookingforward to (all of which occurred in the short time Ive been aliveof course, which is the only time in history that matters). Yay for the Millennial Generation!

Oh, and just a warning, this may contain spoilers. I havent de-cided yet because Im making it up as I go.

    The Office (2005-2013)

It should have ended when Jim and Pam finally got together. Andit should have ended again when Michael Scott left the office. Those both would have made for fantastic finales. But am I madthat they squeezed two extra seasons out of the show? No. As anavid Office fan there was still enjoyment to be had no matter howlimited. And after all, thats why you lick the tinfoil yogurt lid. I

believe the office and sitcoms like it are one of the rare occasionsa hunky dory perfect wrap-up are acceptable. It makes us laugh, it

makes us cry, and most importantly, reminds us why we loved theshow enough to stick it out even when you started to think those30 minutes on Thursday nights could be better spent licking yo-gurt lids. So thank you The Office, you always left me satisfiedand smilingthats what she said.

    LOST (2004-2010)

Ugh. All those years of hard work and dedication devoted to a tel-evision show, and for what? Ok, to be fair with all of the twistsand turns and complexity of that @#%&! island, it was nearly im-

possible to produce an ending to satisfy all. Instead we got a longdrawn out err umm but they were all kind of dead though, but notyet, I mean they were getting therepurgatory. Hey thanks guys. The screenwriter/producer was quoted saying this provided a realdefinite resolution instead of and then referenced series finaleslike St. Elsewhere, The Sopranos, and Newhart, arguably three of the best finales of all time. So

    The Sopranos (1999-2007)

Whether you liked it or not, this finale was real, and for that youmust respect it. Do you ever see a stranger walking along andwonder about their story? The Sopranos gave us a look into thatstrangers life as a modern day mob family that one day just cutsto black and is out of our lives as soon as it entered. That stranger

just keeps on walking. Maybe you dont see where they go, andmaybe you dont keep thinking about them long after theyve

passed, but at least youre left to imagine their future however you please.

    Breaking Bad (2008-2013)

A true champion quits the game while on top, which is why I dontfault Breaking Bad for ending just after 5 seasonsor 6or 5 intwo parts. Whatever. After dozens of shocking, jaw-dropping,

Walter White is a monster moments, this finale left me under-whelmed. Breaking Bad consistently left viewers thinking, but thefinale did the complete opposite. It wrapped everything up sonicely and cleanly (not literally) that there was hardly anything toquestion or consider after it was all over. I wasnt asking to havemy mind blown Twilight Zone style, but I just wanted to turn tomy friend and say wow dude, no way. Perhaps I built up theeventual ending too much in my own head, but after being spoiledfor five years with as close as you could come to television perfec-tion, who can blame me?

The Walking Dead (2010-Hopefully Soon)I cannot wait for this show to end. Yes I was intrigued when it firststarted, as we were all sucked into this zombie craze. But I feelthere are no surprises left. Im sick of slowing moving corpseswho squirt blood when stabbed in the head followed by Rick whispering dialogue and trying not to lose his mind. And I hateCarl, and I hate his stupid hat. The way I see it there are only twoways for this to end, either everybody dies or they find a cure. I

can only hope some writer has enough creativity to end the showin a different way before it drags on any longer, like a broken ap-

    pendage on an undead.

Now that Ive worked my zombie simile into this piece, I ask youto abandon all faith in finales, as I have. For this is the only trueway to appreciate the good ones, and forget about the bad.
