Disunity in the Filipino community

Minister Kenney talks skills training on tour of GEAviation Engine Testing Research and DevelopmentCentre

by W. Quiambao

Picture these : Philippine delegatescoming to Montreal to attend businessmeetings. Two Filipino organizationsare playing hosts in separatereceptions for the Philippine delegateson the same date, Aug. 17, and at thesame building, 6767 Cote des Neiges. One is the Federation of the Philippine-Canada Trade & Commerce ofQuebec, Inc. of Grace Yip, 4:00 p.m.,6th floor, and the other is the Councilon Philippine-Canada Board of Tradeof Al Abdon, 5:00 p.m.,1st floor.

When the Philippine delegates goback to the Philippines, they willdefinitely bring with them not onlymemories of the Filipino hospitality inMontreal but also the Filipino disunity.

Funny but embararasing because noone seemed to show even asemblance of unity between the twoorganizations or call a truce. Whocares if the visitors find out about theproblem of Filipinos in Montreal.

When Abdon was asked about theissue of hosting the Philippinesdelegates, he explained that during thebirthday party of Nathalie Pelausa lastJuly 27, he took the initiative to offerYip an olive branch for unity. Hewanted Yip and him to work togetherin hosting the Philippine delegates.

But Yip not only refused the offer butshe also brought up the issue that EdTupaz' Federation of Filipino-CanadianAssociations of Quebec (known as theFederation) where Abdon is a director,

is illegal. She insisted that JosefaNicolas' Federation, where she is adirector too, is the legal one.

"And why should I be working with Al?He should be working with me," saidYip.

Tupaz refuted Yip's claim that hisFederation is illegal. He made it clearwith Yip that his Federation is legalbecause it is registered with theregistraire des enterprise and it is hisname that is recognized by the bank."In fact, as the legal president of theFederation, I was approached by Corade la Cruz, president of the CanadaChamber of Commerce of thePhilippines, which is based in thePhilippines, to host the delegates. Ihave a copy of her email sent to me."

The conflict between the FPCTCI ofYip and CPCBT of Abdon stemmedwhen the two Federations held eachown election a few months ago andeach one of them represented theFilipino community in the July 1Canada Day celebrations.

To resolve the issue on hosting them, the Philippine delegates, who were puton the spot, agreed to be hosted bythe FPCTCI and CPCBT on the samedate and building but different timeand floor.

If the recent conflict is the kind ofleadership that our leaders areshowing, how can they convince theyouth to get involved in the communityand be the future leaders?

Dear EarthTalk: Is it true that fuel cellcars aren’t really any greener thanconventional gas- powered internalcombustion cars? -- Michelle Adamo,Portland, OR

A decade ago cars poweredby fuel cells seemed like the future ofgreen automotive travel, but manyanalysts now think otherwise.

These futuristic cars run onhydrogen fuel and emit only heat andwater vapor. Their engines mixhydrogen, stored on-board in fueltanks much like gas tanks, withoxygen in the air to produce electricitythat powers the drive train.Environmentalists love the idea of fuelcell cars given their lack ofgreenhouse gas emissions andreliance on a renewable fuel that canbe produced domestically.

Despite these benefits, fuelcell cars have not caught on andskeptics wonder if they ever will. Onebighurdle is that creating hydrogenfuel turns out to be highly inefficientcompared to other readily availablefuels. According to Richard Gilbert, co-author of Transport Revolutions:Moving People and Freight

Without Oil, the creation ofhydrogen gas uses about half theenergy it creates. Half of this resultingenergy then goes to the conversion ofhydrogen back into electricity withinfuel cells. The result is that“only aquarter of the initially available energyreaches the electric motor.” In fact, hydrogen fuel cell vehicles’ efficiencyvaries between 18 and 20 percent, while battery electric vehicles have77-80 percentefficiency.

Not only are fuel cells lessefficient than internal combustionengines, their implementation on awidescale would create enormousinfrastructure costs. New infra-structure would be required from“wells to wheels.” Also, fuel cell motorswear out five times faster than internal

combustion engines, therebyresultingin a shorter car life and moremaintenance. Hydrogen’s small sizeand extreme reactivity resultsin brittlemetal and engines prone to leaking, which reduces both environmentaland practical benefits.

But many still consider fuelcell cars a viable option. “Hydrogen isthe key to sustainable transportationbecause it can be produced in virtuallyunlimited quantities from renewableresources and because its use isnearly pollution-free,” says the non-profit INFORM. A significant financialcommitment to hydrogen research, says the group, could result in avariety of vehicles fueled by hydrogenthat perform as well orbetter than gasoline vehicles, with afraction of the environmental impact.

INFORM adds thattransitioning to hydrogen could beachieved without new federal dollars ifwe reallocate funds within the nationalenergy program from nuclear andfossil fuels. “The opportunities forinnovation and economic growth inhydrogen energy are largelyuntapped, and many nations areworking to establish an early positionin this fledgling field.” According toINFORM, Germany and Japan are farahead of the U.S. in hydrogendevelopment. The group would like tosee U.S. policymakers encouragemore development of fuel cells so wehave options open in a fast-transitioning energy future.

Meanwhile, sales of batteryelectric and hybrid vehicles continueto soar—rising 228 percent in 2013alone. There are currently no new fuelcell vehicles for sale at American autodealers, although Honda hashinted that it could have its FCX fuelcell engine ready for the mass marketby 2018.

Dear EarthTalk: Where are somegood “eco-travel” destinations righthere in the continental U.S.that I canconsider for a family vacation? --Janet Devino, Brooklyn, NY

Many of us are looking togreen our lifestyles today and thiscommitment to Mother Earth can alsoinclude how and where we travel. Andthose of us looking to take a vacationthat benefits instead of harms thenatural environment no longer have totravel to the ends of the Earth to doso. In the so-called

“Lower 48,” many resorts anddestinations work hard to minimizetheir impact on the environment.

One example is California’sCostanoa, where guests can usetented bungalows—safari-stylecanvas tents with hardwood floors, heaters and real beds with highthread-count sheets—as base camps

for exploringthe surrounding 30,000acres of state parks and wildlifepreserves. Grilling stations forcooking as well as bathrooms withshowers are scattered around thegrounds so guests can take care ofworldly concerns.

Interested guests shouldthink ahead as the bungalows bookup a year or more in advance.

In Washington State, eco-tourists should check out the RollingHuts, a series of small mobile cabinsdesigned by modern architect TomKundig and situated in a fieldalongside the rushing Methow Riveramid one of the nation’s bestnetworks of cross-country ski andmountain biking trails. The “huts”sleep up to four and are heated withwood-burning fireplaces, while theadjacent restaurant Kelly’s serves uplocal organic fare with panache. Ifyou aren’t lucky enough to score oneof the six huts, you can alwaysrough it in the canvas platform tentsdown a footpath and a world awayfrom the everyday hubbub.

If a more refined form ofgreen is your thing, try SanFrancisco’s Orchard Garden Hotel, designed fromthe ground up toqualify for the U.S. Green BuildingCouncil’s Leadership in Energy andEnvironmentalDesign (LEED) status.

“There are a lot more of us coming downthe pipeline (but) this system is notoriented towardtaking care of peoplewho are living longer.”

The Ipsos-Reid poll of 1,000Canadians aged 45 and older wasreleased Monday to coincide with theopening of the organization’s annualmeeting in Ottawa, where seniors’ care, medical marijuana and doctor-assisteddeath are among the issues expected todominate debate during the three-daygathering of delegates.

Overall, 81 per cent of thosepolled said they are worried about thequality of health care they can expectwhen they’re older, with those nearingretirement the most anxious. Six in 10have little faith hospitals and long-termcare facilities have the resources evennow to handle the needs of a rapidlygreying population, or that there will beenough services to help seniors live athome longer.

Not surprisingly, the vastmajority — 95 per cent — endorsed theneed for a national seniors’ care strategy.

The doctors’ lobby estimates$2.3 billion a year could be used in moreeffective ways, for example, byaddressing the growing problem of so-called “bed blockers” — elderly patientswell enough to be discharged wholanguish in hospital beds while waitingplacement in a nursing orretirement home.

It costs about $1,000 a day tocare for a patient in hospital, compared to$130 a day in a long- term care facility, and $55 for home care, according to theCMA.

“We need to move from thestatus quo that the hospital is the end-all

and be-all of health,”Francescutti said.

More emphasis is needed onsmoking cessation, improved physicalactivity and better nutrition to reduce theburden of diabetes, heart failure andother chronic illnesses, he said.

“The emphasis should be onmaking sure Canadians don’t get sick inthe first place. And, if theydo get sick, assemble teams around that specificillness that uses the best evidence to takecare and manage that disease, which wedon’t have right now,” Francescutti said.

Instead, “We have a helter-skelter, hodge-podge mix of differentsystems,” he said. “And that’sreflected inwhat Canadians are saying. They don’tlike what they see.”

Those aged 45 to 54 have themost angst for the future, according tothe poll.

The proportion of seniors isgrowing fast: In 1971, Canadians aged65 and older accounted for eight per centof the population; today they make up 15per cent.

By the time all boomers turn 65,seniors could represent 25 per cent of thenation’s total population, according toIpsos Reid.

But the proportion of healthdollars spent on seniors’ care hasbudged little in the last decade, moving from 44 per cent in 2000, to 45per cent in 2011.

“We need to have a strategybased on the best evidence from othercountries that have done this and aredoing it far better than we are,”Francescutti said.

“It means we have to think verydifferently. This report sends a wake-upcall (to political parties) that babyboomers are just not going to put up withwhat they’re seeing being deliverednow,” he said.

“If you’ve pissed off aconstituency within society that you knowcan make the difference between gettingelected or not elected, hopefully that willmove a party to action.”

The poll of 1,000 Canadians wasconducted between July 17 and July 24.A sample this sizeprovides a margin of error of plus orminus 3.1 percentage points.

Among the findings:• 86 per cent of working Canadians haveconcerns about health care in retirement.

• Only half said they would be able toafford to pay for extra health services notcovered by provincial health plans or theirhealth insurance.

• 64 per cent are concerned about theirfinancial situation when they retire.Women and those living in middle-incomehouseholds (earning between $30,000and $60,000annually) are significantly more likely tobe concerned about their ability to affordhealth care expenses in the future.

• For those who don’t expect to retire foranother 10 to 20 years, half areconcerned about maintaining the samestandard of living for their spouse orpartner if they should die first.

• Overall, more than a quarter (26 percent) help provide care to an agingrelative or friend;

34 per cent of 55- to 64-year-olds areacting as caregivers.

• 64 per cent of caregivers areexperiencing high levels of stress.

• Three in four (75 per cent) of thosepolled expect they will be able to “die withdignity” in a place of their choosing. Menand those over 75 are more confidentthey’ll be able todie where they choose.

The Future of PrimaryHealth Care

You may not immediatelyrecognize primary health care, but it isessentially the first level of contact thatyou have with the health care system. That could mean seeing your familydoctor, health unit, pharmacy, or clinic.Or it could mean phoning an advice linestaffed by health professionals, or evenattending a self-care workshop to learnhow to take a more active role in yourown health. Primary health care involvestreating short-term health problems, managing long-term health conditionssuch as diabetes, and even helping youlearn how to prevent injury and illness.Prevention is a key objective of primaryhealth care.

Governments across Canadaare working to strengthen primary healthcare to improve health care services forCanadians. When properly organizedand coordinated, primary health carehas enormous potential to introduceimprovements in the health system. Foryou, your family, and other Canadians, itcan mean better care, shorter waitinglists, improved access to health careservices, and a more sustainable healthcare system.

Primary health care is about:

1. A team approachA team approach means that differenthealth care professionals work together- often in a single location - sharinginformation about treatment goals andwhat has worked and what hasn't, inorder to provide you and yourneighbours with the best and mostappropriate care. You are encouraged tobecome an active member of that teamand take part in the decision-makingprocess for your care.

2. InformationHealth care professionals, such as yourfamily doctor and your nurse orspecialist, can communicate with oneanother more easily and efficiently, thanks to advances in technology, suchas faster computers, greater electronicinformation storage capabilities, andimproved security measures that protectand secure private information when it isstored, retrieved, and shared.

Information sharing between membersof your health care team is vital toensure that each professional appliestheir own expertise to your carewithout duplicating effort or creatingconditions that would adversely affectanother aspect of your care. The resultis more efficient and appropriate care.Technology such as electronic healthrecords and small portable computersthat put health information quickly andeasily in the hands of health careprofessionals are important tools thatwill help to ensure the best healthoutcomes for you and your family.

You can be assured yourmedical records are private. Laws arein place across Canada to protect theprivacy of these electronic healthrecords.

3. AccessInitiatives are underway to improveaccess to health care information andservices when you need them, whereyou need them. Many people acrossthe country already have such accessto tools such as toll-free healthinformation lines and videoconferencing links. Primary healthcare initiatives are working to ensurethat you and every Canadian, nomatter where you live, have similaraccess to these types of healthservices. Not only will this reduce tripsto the more costly emergencydepartment when a conversation witha health provider can help, it helps toensure improved access toemergency services for you when youtruly need them. It also translates intolower overall costs to the healthsystem.4. Healthy livingPromoting healthy living helps preventillness and injuries. Primary healthcare providers support healthy lifestylechoices and contribute to safecommunities. Providers can also helpyou to manage chronic healthconditions to prevent complicationsand stay healthy. Healthier peoplemeans reduced treatment costs - andreduced treatment costs help lead to amore sustainable health care system.

Even if you have greatpersonality and dressed to the nines, you would not be attractive if you havebad breath. Bad breath, also calledhalitosis, can be a turn off. Manyindividuals with bad breath mayunaware they have as it is difficult toassess how your own breath smells.Ask a close friend or relative to confirmif you have it.

According to the Mayo Clinic, most bad breath starts in your mouth. There are many possible causes, andthey include:

Food. The breakdown of foodparticles in and around your teeth canincrease bacteria and cause a foulodor. Eating certain foods, such asonions, garlic, and other vegetablesand spices, also can cause badbreath. After you digest these foods, they enter your bloodstream, arecarried to your lungs and affect yourbreath.

Tobacco products. Smoking causesits own unpleasant mouth odor.Smokers and oral tobacco users arealso more likely to have gum disease, another source of bad breath.

Poor dental hygiene. If you don't brushand floss daily, food particles remainin your mouth, causing bad breath. Acolorless, sticky film of bacteria(plaque) forms on your teeth and if notbrushed away, plaque can irritate yourgums (gingivitis) and eventually formplaque¬-filled pockets between your

teeth and gums (periodontitis). Theuneven surface of the tongue also cantrap bacteria that produce odors. Anddentures that aren't cleaned regularlyor don't fit properly can harbor odor¬causing bacteria and food particles.

Dry mouth. Saliva helps cleanse yourmouth, removing particles that maycause bad odors. A condition calleddry mouth — also known asxerostomia (zeer¬o¬STOE¬me¬ah)— can contribute to bad breathbecause production of saliva isdecreased. Dry mouth naturallyoccurs during sleep, leading to"morning breath," and is made worse ifyou sleep with your mouth open.

Infections in your mouth. Bad breathcan be caused by surgical woundsafter oral surgery, such as toothremoval, or as a result of tooth decay, gum disease or mouth sores.

Other mouth, nose and throatconditions. Bad breath canoccasionally stem from small stonesthat form in the tonsils and arecovered with bacteria that produceodorous chemicals. Infections orchronic inflammation in the nose, sinuses or throat, which cancontribute to postnasal drip, also cancause bad breath.

Medications. Some medications canindirectly produce bad breath bycontributing to dry mouth. Others canbe broken down in the body to release

chemicals that can be carried on yourbreath.

Diseases, such as some cancers, andconditions such as metabolicdisorders, can cause a distinctivebreath odor as a result of chemicalsthey produce. Chronic reflux ofstomach acids (gastroesophagealreflux disease) can be associated withbad breath.

Mayo Clinic suggests thefollowing in reducing or preventingbad breath:

Brush your teeth after you eat. Keep atoothbrush at work to use after eating.Brush using a fluoride¬containingtoothpaste at least twice a day, especially after meals. Toothpaste withantibacterial properties has beenshown to reduce bad breath odors.

Floss at least once a day. Properflossing removes food particles andplaque from between your teeth, helping to control bad breath.

Brush your tongue. Your tongueharbors bacteria, so carefully brushingit may help reduce odors. People whohave a coated tongue from asignificant overgrowth of bacteria(from smoking or dry mouth, forexample) may benefit from using atongue scraper. Or use a toothbrushthat has a built¬in tongue cleaner.

Clean your dentures or dentalappliances. If you wear a bridge or apartial or complete denture, clean itthoroughly at least once a day or as

directed by your dentist. If you have adental retainer or mouth guard, cleanit each time before you put it in yourmouth. Your dentist can recommendthe best cleaning product.

Keep yourself hydrated and avoid drymouth. To keep your mouth moist, avoid tobacco and drink plenty ofwater — not coffee, soft drinks oralcohol, which can lead to a driermouth.

Chew gum or suck on candy —preferably sugarless — to stimulatesaliva. If you have chronic dry mouth, your dentist or physician mayprescribe an artificial salivapreparation or an oral medication thatstimulates the flow of saliva.

Get rid of bad habits like smoking andconsuming sticky, sugary foods.

Regularly get a new toothbrush.Change your toothbrush when itbecomes frayed, about every three tofour months, and choose asoft¬bristled toothbrush.

Schedule regular dental checkups.See your dentist on a regular basis —generally once or twice a year — tohave your teeth or dentures examinedand cleaned.

Halitosis is something thatcan be treated and avoided altogetherwith consistent proper dental hygiene, lifestyle changes, and visiting yourdentist.

Bad breath? No thanks

Sure you can. We have seenexamples of movies costing a fractionof that amount, and if you already havea smartphone with a decent camera, then the total figure is nearer to $1,200.

Making a movie is no longersolely in the realm of the rich orconnected, or in the control of the bigstudios. Anyone, and we meananyone, with a creative spark canmake a short or a feature-lengthmovie. Of course, it helps if you have alittle production knowledge, but we’veseen great examples in which themovie maker has been a ompletenovice, simply inspired because he orshe had a camera at their disposal —it came with their smartphone.

For the purpose of this article, let’s presume you are a relativenewcomer and have a couple of grandburning a hole in your pocket, plus agreat idea for a movie. What are wewaiting for? Let’s start with the basics.

Angling for a Camera You can’t shoot your movie

without a camera, and this piece ofhardware is going to be the singlemost expensive item on your list. Well, guess what, you can save approxi-mately six or seven hundred bucksright away, because if you have one of the recent smartphones with adecent camera in your pocket, you’reall set and can avoid this initial outlay. Let’s say you’re ready to upgrade yoursmartphone and want one that is goodenough to shoot a low-budget movie.

Apple’s iPhones have beenthe driving force in mobile movie-making, but camera- wise they are nolonger top dog. However, I’m recom-mending Apple iPhone 4Sat roughly$450 to buy (without a contract),because it looks classier than the iPhone 5c, and is about $300 cheaperthan an iPhone 5s. The iPhone 4s maynot have the best camera, but it’s gotloads of apps and accessories

available to help you shoot a movie. It’s small and its 8-megapixel sensor is not too shoddy for 1080pvideo.

If you really have an aversionto all things Apple, then othersmartphone contenders are SamsungGalaxy 5 at roughly the same cost asan iPhone 5S, or the Nokia Lumia 1020

with its 41-megapixel camera and$600 price tag. Yes, we know there aregoing to be some readers who thinktheir smartphone is convenient formaking calls, texting and takingphotos, and would not dream ofmaking a movie on it. You’ll still makea call for the production, right? Youcan use a consumer camcorder like aCanon VIXIA, or maybe splash out onother prosumer HD gear, but the betteroption is to invest in a DSLR at $850 orthe slightly cheaper NIKON 3200 at$600. OK, we have our camera orsmartphone — what do we need next?

Light it up As we’ve established that we

are using an iPhone 4s to make ourmovie and we are on a budget, a goodstarting point is a compact LEDlighting panel, which will set us back$220. While bigger budget shoots orprofessional filmmakers will have theluxury of using lighting kits by industryleaders such as Lowel or Arri( three-light kits are around $2,000-3,000) theMicro is a great, low-cost solution forextra lighting, especially whenshooting on a smartphone in a low-light environment.

“Less than ideal lightingconditions will cause excessive digitalnoise to dance across your footage,”Goldstein suggests avoiding thesmartphone’s built-in LED light, and ifyou need a little extra lighting, $25worth of work lights from the hardwarestore can do the trick. If you’reseverely budget-restricted, it’s okay toget creative and save yourself some

cash.

Pump Up the Volume When recording audio for film

and video production, usually the

internal mic on the camera won’t cut it.We are considering two types ofmicrophones, both are external, theSHURE Wireless ($499) or a camera-mountable shotgun mic such as theRODE which starts at $329. While eitherwill do the trick, for the purposes of thisarticle, we’ll opt for the latter.

This little beauty uses astandard shoe mount and attacheseasily to a variety of devices. But thereal benefit is that the RØDE keepsthings nice and simple and has onlytwo controls: a basic switch with off, on,high pass filter and a control for audio levels so that even rookies can’tgo wrong.

Hold ‘er Steady If you are shooting with a

DSLR, then good old, sturdy tripod kitsfrom manufacturers such asSACHTLER or LIBEC will do the trick. For iPhone movie makers who require astabilizer for those cooltraveling/motion shots, check out theSTEADYCAM at $149, which we’regoing to add to our arsenal, becauseevery mobile movie maker should haveone.

Tip: A great way to quicklycreate a dirt cheap stabilizer! Get afender washer and six-feet of string. Tieone end of the string through the washer. Drop the washer to the groundand step on it to hold it in place. Wrapthe other end of the string around thehand that's holding the camera, thenpull the string taught while shooting tokeep your hand steady. (courtesy ofGoldstein)

Which editing software should you use? You can’t get much better than

using professional editing softwaresuch as Apple’s Final Cut Pro, AdobePremiere Pro or Avid Media Composer, but if you don’t already have access toany of these professional options, purchasing one now is going to blowour budget. Considering our budget, dear fledgling movie maker, there’s littlereason to fork out a king’s ransom atthis stage. However, what do we do withall those hours of footage you shot foryour short film?

We’re giving you two or threeoptions here, buy iMovie for iPhone for$5 or get the WeVideo mobile app forfree. It’s far from ideal, but it is doable. The second option is to use iMovie forMacs or Movie Maker for Windows andmake the cuts on your desktop orlaptop. Even better, especially forWindows users a free professional

editing software that was used to cutOscar-winning movie The King’sSpeech, among others.

We need back up One crucial thing we should

have mentioned earlier is that the entry-level iPhone 4s has 8GB maximumcapacity, which is not great if you areplanning on shooting a three-hourblockbuster.

No matter, because whatever

device you use, you are going to needto backup and store all of that preciousfootage on a hard drive. You’ll need alaptop and probably an external harddrive that you can transfer the data to,and perhaps view the footage on set.

Get Your Lenses On For the iPhone, at least there is

every type of accessory available to thehumble and pro movie maker alike, andfar too many to mention here but oneitem that is essential to your arsenal, especially if you are shooting on asmartphone, is a decent lens. lens includes fiveinterchangeable lenses: a macro, wideangle, super wide, fisheye andtelephoto.

The super wide angle lensdoubles the iPhone 5 lens' field of viewand the fisheye offers a 180-degreeview. According to Schneider Optics, the 2x telephoto lens was builtspecifically to take advantage of theiPhone’s higher resolution. The iProsystems are also compatible with iPadsand the Galaxy Samsung S4, and is $49for the iPhone 4s. For $70, why not optfor an Olloclip 4-In-1 fisheye, wide-angleand macro 10x and 15x clip-on lenssystem?

“In addition to being a greatlens accessory, the Olloclip may be themost adorable iPhone accessory evermade,” filmmaker Taz Goldstein said. What do I do now? If you’ve taken thefrugal route, outlined above, your totalspend should be between $1,400 and$1,800.

Now comes the tricky part. Thisarticle was written as a guide to the typeof essential equipment you need to getyour movie produced. Remember, youcan have the best kit in the world, andfor that matter, all the money in theworld, but it doesn’t necessarily meanyou will end up with a great feature orshort film. Often, if you have a greatscript and solid execution, even themost bare-bones supply of video gearwill suffice.

Chicken Recipes

½ cup soy sauce2 tablespoons olive oil or

thinly sliced (1½ cups)1 head of garlic, cloves separated,

flattened, peeled, and roughlychopped. (about 6 tablespoonschopped)

1 tablespoon plus 1 teaspoon Thaifish sauce or Filipino fish sauce

1 teaspoon freshly ground blackpepper

2 dried bay leaves

Instructions

Marinate Chicken: Put chickenin a non-reactive bowl or casserole.Combine the vinegar and 1 tablespoonof the chopped garlic. Pour over chickenand turn to coat. Marinate in the fridgeor in a cool place for 30 minutes.Remove chicken from the marinade, allowing excess to drip back into thebowl and transfer chicken to a cleanplate. Reserve the marinade.

Brown Chicken & Aromatics:Heat oil over medium heat in a largedutch oven or another heavy pot with alid. Pat chicken lightly with a paper towelto dry. Brown in batches (4-5 pieces at atime), starting skin side down for 3-4minutes. Turn and brown for just aminute on the other side. Transfer to aclean plate. Repeat with all the chicken.Pour out all but 2 tablespoons fat fromthe pot. (hint: It's easier if you pour it allout, into a small bowl or coffee cup, andthen add back the 2 tablespoons) Setthe heat to medium-low, add onions andthe rest of the garlic to the pot andsauté, stirring occasionally, for about 10mintutes, until the onions are softened.

Simmer Chicken: Return thechicken to the pot along with anyaccumulated juices, vinegar-garlicmarinade, soy sauce, fish sauce, blackpepper, bay leaves and ¼ cup of water.Toss chicken with onions and sauce tocoat. Bring to a boil. Lower to a simmer.Cover and cook at a low steady simmerfor 30 minutes.

De-fat the sauce beforecontinuing (I don't like a lot ofunnecessary fat in my food so this is astep I often do when I'm cooking a soupor stew, though it's not required.) Turnoff heat for 5 minutes to let the fat rise tothe surface. Use a teaspoon to carefullyskim off several spoonfuls of fat. The fatwill be clear vs the sauce, which isbrown. No need to get all the fat. Youcan always skim more when the dish isdone, if you like.

Finish: Return the pot to asimmer. Toss chicken to coat withsauce. Cover and simmer gently for 30more minutes, until the chicken is tenderand the sauce is a rich brown color.Serve over rice.

payment.Was the amount legally

justifiable when the payment wasmade after the Supreme Court hadalready rejected distribution of sharesof stock as full compliance with theagrarian reform law?

De los Reyes may not worrymuch over the legality of the paymentor about the source of funds. Rather, ifX stands for the unknown, then therewould be a few Xs that the agrarianreform chief has to properly identify.

For instance, since thepayment to the president’s family is aknown number, will De los Reyesidentify the farm lands, which in De losReyes’s computation should berepresented by an X, that weredistributed by the Cojuangcos to theirtenants? How many hectares has HLIalready lost to its 4,900 tenants that itshould be compensated for?

Where then did the money go?Was it to pay for the shares of stockHLI gave to the farmers?

De los Reyes, with hisstatements limited to defending hispolitical patrons, may want to reviewHLI documents before opening hismouth. The truth, which has probablyescaped him and his fellow DARofficials, is that the recipients of HLIshares of stock were to pay for them. Here is what Due Diligencerdiscovered in reviewing HLI’s financialfilings with the Securities andExchange Commission.

“Acquisition cost of the shares which

amounted to P3.9 million yearly,” afootnote to HLI’s financial statementaudited by SGV and Co. shows, “ischarged to salaries, wages andemployees’ benefits . . . .”

If the farmers were to shoulderthe payments for their participation inthe ownership of HLI, then thequestion that begs for an answer fromDe los Reyes is: Haven’t HLI and itsowners been wrongly compensatedP471.5 million for farm lands they didnot lose?.

Hacienda-LuisitaThere wouldbe more questions raised against theuse of funds allocated under theDisbursement Acceleration Plan (DAP)on uneconomical activity that did not infact generate employmentopportunities. Will the government, forinstance, go after the Cojuangco-owned HLI to recover the DAP moneywhen President Benigno SimeonCojuangco 3rd is himself a member ofthe family that owns the company?Being one of the heirs to HLI’s vastlandholdings, Aquino is not expectedto willingly lose his own inheritance.

As far as the Department ofAgrarian Reform is concerned, DAP’sP471.5 million went to HLI. Here is aquote from a press release issued byDAR on the issue: “We must alsoremember that the Supreme Court hadnot yet decided with finality theHacienda Luisita case when theacceleration of the cash release forlandowners compensation wasapproved in 2011,” said DARUndersecretary Anthony Paruñgao.

But on top of all thesequestions is this: If HLI has been paidP471.5 million as “just compensation”,what for was the money. Due Diligencerhas already raised this issue in a pieceon July 11 which was titled, “DAPmoney for Hacienda Luisita? What for?”but it has yet to find the answers.

If the Cojuangco-Aquinos, whoare in power now, don’t talk about theirclaims on the hacienda, it is becausesomebody else is doing the talking forthem. They could count on the DARand its top officials to fight for their rightover HLI lands, forgetting that the DARis the government’s agrarian reformarm just as the Land Bank is thefinancing arm.

At this point, Agrarian ReformSecretary Virgilio de los Reyesdeserves the benefit of the doubt. Butunless he comes out with a morecredible statement, he won’t be able tojustify the payment made by Land Bankof P471.5 million to HLI as “justcompensation”. Right now, his defenseof Hacienda Luisita and its ownerscould be interpreted simply as anexpression of loyalty to the family ofPresident Aquino, to whom alone heowes his allegiance.

De los Reyes could haveclearly explained the use of P471.5million in paying the Cojuangcos whathis department has defined as “justcompensation” had he supported hisstatements with statistics such as thenumber of hectares that the family gaveup in favor of their tenant farmers. Healso should have done somecomputations of his own to find out thetruth behind the P471.5 million

Hacienda Luisita got 47.1M from DAP for shares ofstock it sold to farmers

Mark Bautista did not have highexpectations when he auditioned forthe role of former President FerdinandMarcos in the West End production ofDavid Byrne and Fatboy Slim’s “HereLies Love” – a musical about the riseand fall the Marcoses.

In fact, he said he did not evenexpect a call back on account of thehigh turnout of good actors andsingers that also auditioned for therole.

It was then a big surprise when hegot an email from Atlantis Productionsaying he aced the part. He relatedhow his heart practically “jumped” anotch when the news sank in.

The 32-year-old singer-actor said,“Si Lord, unexpected palagi angblessings niya.”

Mark shared that his auditionpiece was Tom Jones’ version of“Kiss.” With a British panel at theaudition, “(Inisip ko) baka familiar sakanila ’yung song,” he added.

Although he was intimidated withthe other actors and singers vying forthe part, seeing how they preparedwith script and dance steps perfectlymemorized, Mark’s talent saw himthrough.

His faith also gave him thecourage he needed. “Basta magingpatient ka lang kasi si Lord maysariling way para maging successfulka at totoo ‘yung sinasabi Niya na ‘Ihave bigger plans for you,’” he said.

He believes going to London is his“destiny.”

So far awayThe production of “Here Lies

Love” requires Mark to stay in Londonfor six months, or even longer –depending on how the audiences willrespond to the musical.

Mark is not worried about how hewould cope with being away fromhome. He is more anxious as to howhis local fans would take to hisprolonged absence.

“Kasi sabi nila na kapag umalis ka

ng bansa it’s either makakalimutan katalaga or may mangyayaring masmaganda sa ’yo,” he explained.

To stay in the loop, Mark plans tokeep active via social media. Asidefrom that, he would also keep hispresence felt on “Sunday All Stars.”

“Sabi nila magsend lang daw akong video ko palagi para mapakita saTV,” he shared.

Hello, goodbyeIn previous interviews, the Kapuso

singer-actor shared how he’s foundnew inspiration. Apparently, he hasbeen following a commercial modelon Instagram whom he contacted tohopefully star in his music video.Luckily, she agreed to a meeting.

He made clear however that itwasn’t exactly a date. “Wala pangmasyadong attachment,” he said, laughing.

Asked if the girl already knowsthat he will soon be leaving forLondon, Mark said, “Ngayon ko palang formal na sasabihin… anotherloss…”

That said, he is open to thepossibility of finding love there. “Malaymo European pala mahanap ko,” hejoked.

The singer is set to leave forLondon on Aug. 16.

Mark said “Here Lies Love” willfocus on Imelda, touching on the lovestory between her and Ferdinand. Itends just at the onset of the EDSARevolution.

“Hindi namin ipapakita dito ’yungmga problema nila sa politics dati… atwala ’yung mga shoes ni Imelda,” hestressed.

Also included in the cast areAustralian actress Natalie Mendoza asImelda, and “Britain’s Got Talent”semifinalist Dean John-Wilson asNinoy Aquino.

Directed by Alex Timbers, themusical play will be staged at theNational’s Dorfman Theatre in SouthBank, London from Sept. to Jan. 2015.

Marian Rivera and DingdongDantes look forward to spendingforever together.

The two, known to fans asDongYan, will exchange “I do’s” onDec. 30 at the Immaculate ConceptionCathedral in Cubao, Quezon City.

At a press conference dubbed“The Royal Engagement,” the coupleshared why they chose the venue anddate.

“Gusto namin mangyari sasimbahan bilang we’re both RomanCatholic and yung (ImmaculateConcepcion) ang isa sa mgasimbahan na madalas namingpuntahan…and Dec. 30 becausegusto namin a day before the yearends, and we also wanted namapaghandaan siya,” said the actor.

Marian echoed his futurehusband’s statement, adding,“Importante talaga sa akin na sasimbahan. Gusto ko talaga andiyan siGod.”

The couple hasn’t decided yet onother wedding details, including theentourage and the reception venue;nor has Marian chosen a designer forher wedding gown.

If anything, they are certain of twothings: Marian’s best friends, RoxanneBarcelo and Ana Feleo, will both bemaids of honor; while Dingdong’syounger brother, Angelo Dantes, willbe best man.

As to Principal Sponsors,DongYan has veteran star VilmaSantos and President NoyNoy Aquinoin mind.

“We have not spoken to (PNoy)yet but we would love to have him ifever,” said Dingdong.

Why public?Dingdong shrugged off

insinuations that he made the weddingproposal public because he aims torun for public office in 2016.

He finds the accusation “unfair,”explaining that all he wanted was toshare the “happy” moment with fans.

“Everyone has been part of ourstory. We can choose to keep thisprivate but hindi namin ginawa. Wecan’t deny the fact that we both startedin GMA…”

Marian and Dingdong first workedtogether on GMA-7’s “Marimar” in2008.

Happy familyThe two plan to start a family the

soonest time possible. In fact, Marian, an only child, is

already readying herself as a mom —and to a lot of children at that.

She said, “Hanggat kaya gumawang madaming anak, bakit hindi?Mahirap maranasan na nag-iisa kalang, ayokong maranasan ng anak ko‘yun. Ang sarap kaya ng malakingpamilya!”

In a serious tone, Dingdong said,“Ako, basta mahalaga sakin merong(anak).”

To infinity and beyondWith God in the center of their

marriage, the couple is confident thatthe union will stand the test of time.

“Walang imposible kapagnananalig sa kanya. Lahat ng bagaynadadaan sa pagdadasal,” Mariansaid. “Wala namang relasyon napalaging smooth kasi lahat ay kahitpapaano may pinagdadaanan.”

Dingdong couldn’t agree more, citing this as the very reason it is amust for them to be wed in church.

The actor believes that once theyare one through the sacrament ofmatrimony, “’yung paghihiwalay atpagtatapos ng relationship should notbe an option.”

To further strengthen their bond, the Kapuso actor also considersattending wedding seminars, sayinghe is “very much willing to take part inthat.”

“I believe may ibang mga groupswho offer seminars and it won’t hurt toadd something great and good towhat we already have,” said he. a

Anne Curtis’ 18 years in thebiz have taught her to roll with thepunches.

Talk about her supposedly stillgetting drunk in public – even afterbeing allegedly involved in alcohol-related scandals – does not botherthe actress.

She pointed out, “Well, I don’tdeny naman that I drink, and, ofcourse, minsan nalalasing namantalaga. At least I’m honest about it.”

She added, “At least ’yung tao, hindi nasa-shock na, ‘Oh, si Anne,napaka-scandalous!’ Kasi alamnilang, ‘Ah, she’s like us. It happens.’”

by W. G. Quiambao Filipinos gained their

independence from the Spanish rule onJune 12 , 1898. In the Philippines,Filipinos celebrate their Independ-enceby holding a parade and variousactivities on the same day which is anational holiday. But In Montreal, it' scelebrated on the closest Sunday of June12 to enable the fun-loving Filipinos andnon Filipinos to enjoy the celebration.

That was what happened lastJune 22 . About 1,500 people watchedthe jubilant Filipinos' celebrate their 116thPhilippine Independence. Smiling facesof Filipinos proudly waving their flags andsaying "hi" to their friends, high-spiritedgroups of ethnic dancers energeticallyperforming their numbers, talentedFilipino singers passionately belting outsongs and even the delicious smell ofbarbecue momentarily wafting throughthe air - they were all parts of the grandcelebration.

In his message, James de laPaz, president of the CCFAQ, urged allthe Filipinos to set aside their differencesfor a united community. Unity was thetheme of the day. He said that it's fromunity that our forefathers got the strengthand courage to gain the freedom thatwe're enjoying today.

Unlike last year, the weather onJune 22 was sublime - warm and sunny. The parade, with loud Filipino musicblasting in the background, kicked off at11:30 a.m. from St. Kevin St. Joining thecolorful parade were businesses, associations, the Miss Earth-Canadacandidates and folk dancers from Japanand Bulgaria. Among the Filipinoassociations in the parade were theFederation of the Filipino-CanadianAssociations of Quebec of Ed Tupaz,Cordllera, UPS and Knights of Rizal, withtheir Queens in floats bedecked withbanners, balloons and ribbons.

The parade slowly wended itsway along Victoria St., right to Van HorneSt., left to Legare St., then to MackenzieKing Park where the associations wereintroduced in the parade of colors. Oneof the highlights of the celebration wasthe deafening sound of the gun salute bythe Canadian Army while the Philippine

and Canadian national anthems werebeing played. After the gun salute, PierreArcand, MNA for Mont-Royal, LionelPerez, Cote des Neiges Councillor forDarlington, Rachel Bendeyan, Liberalcandidate for MP and Eric Tamayo,Consul General of the Philippines toCanada, profusely congratulated theFilipinos for remembering theirindependence and heritage.

While the Filipinos and theirfriends, young and old, were enjoyingtheir lunch that included lechon, barbecue, adobo, pansit, they were

entertained by the local performers andethnic groups from the Philippines,Japan, Chile, Columbia, Grenada,Bulgaria, who showcased their uniquedances . The spectators, standing in frontof the stage, were asked by the emcee tosit down on the grass so the people in theback could better see the show.

Michael B., a Canadianfreelance photographer who ispublishing a book that features photos ofevents in the neighborhood, was at thepark busy talking to some Filipinos andmembers of the Chilean dancers whiletaking pictures. "I love to see peoplecoming together, getting to know eachother and just having fun. Arcand, Perez,Bendeyan and Tamayo thanked andpraised the CCFAQ for organizing aprogram that showed the diversity of thecity.

The festivity, emceed , by FelyRosales and Ed Vasquez, was cannedby MM Television for its next episode onVideotron Channel 16/616 HD, and BellFibe 216/1216HD.

CCFAQ's Philippine Independence Daycelebration a whopping success A couple of time, I was asked by

few a friends information about writing. In asituation like this, I'll think of what the lateNestor Ambas, former TV Pinoy host andsinger, told a friend who claimed to be awriter.

"We can all sing but are we intune? Can we read notes? It's the same inwriting. Do you really know how to write?Simply because you wrote for your highschool newspaper, you call yourself awriter?

Can anybody call himself awriter? What qualities should an aspiringwriter possess? Is it easy to be a writer?

To answer this kind of questionsis difficult. I remember reading a book thatsays "You can call yourself a writer if youhave been paid for what you wrote." Thereare many writing books available in thestores that can answer the rest of thequestions, but each author has differentanswers and suggestions. What mattersmost is for the aspiring writer to get usefultips that will help him in his chosen career.

What I'll discuss are a few tips, like having a good English grammar andbroad vocabulary, Journalism backgroundand inherent talent, that an aspiring writermust have. Others might agree with me,others might not.

It's true that an aspiring writermust be good in English grammar andmust have a vast vocabulary. But havingthese qualities doesn't necessarily meanthat a person can be a writer. Writing is anart. Good grammar and broad vocabularyare important, but they are just tools inwriting. Like a carpenter who needs ahammer, chisel and saw to build a house.Beside, nowadays, grammar andvocabulary aren't really a problem as itwas before. A writer can use the computer.Personally, I don't completely depend onthe computer. Who feed the information onthe computer? They're people like us. Onetime, a friend asked me which tense to usein this sentence, "Yesterday, Peter told methat Ottawa is/was the capital of Canada."My choice was the present tense "is" implybecause Ottawa is a permanent truth. It'sstill the capital. My friend's choice was thepast tense "was"perhaps, because of"yesterday" . To get an answer, I emailedJosh Freed, Sunday's Gazette columnistwhose wife is a Globe & Mail writer. He wasnice enough to answer my question. Hereis what he said : "I will use the presenttense which will be approved by my editor,

but my wife will use the past tense andher editor will not change it. Both of usare native-English-speakers - are unsure

which is exactly correct -so I think it's oneof those many English language greyzones where either/neither is correct.Language technicians mightagree/disagree but I think in day to daylanguage and writing both work just fine. The idea is to communicate. I wouldn'tsweat it if I were/was you."

One of the common mistakes ofthe beginning writers is their tendency touse words that are not only highfallutin butalso difficult to pronounce. The basis ofbeing a good writer isn't his excellentgrammar and wide vocabulary. It's hisability to convey his message which issupposed to be his only goal as a writer.Nothing else. It's funny but what anexperienced writer once said was right. Ifa reader checks the meaning of everydifficult word he encounters, he will throwwhat he is reading. If it happens, the goalof the writer to convey his message fails.Furthermore, a beginning writer mustpicture his target readers. Are the readersintellectual or ordinary people. Pretendthat he attending a party. He has to find outif the guests will be wearing formal orcasual clothes.

Meanwhile, it's good to have aJournalism background. For me, however,an aspiring writer can just take a writingcourse because not everything aboutJournalism is taught in the university.Although I have a Journalism degree, I wasreading a lot of writing books andsubscribing to the Writers Digestmagazine, the writers' bible, then. Thereare so many useful tips that I learned fromreading this magazine. For example, whenwriting, make sure that your lead sentencewill hook your readers. Sometimes, evenafter reading two paragraphs, the readersare still unable to grasp what a writerwants to convey. The ending sentencesare as important as the beginning. Thereaders must remember what they justread.

For me, inherent talent is themost important quality that a would-bewriter must have. It can not be taught. Itcomes naturally. The falling leaves in falldoesn't mean anything to an ordinaryperson but to a creative writer, it meanssomething. Talent can not be taught but itcan be developed.

Another important thing that anaspiring writer must bear in mind is thatwriting is storytelling. For example, heshould be able to tell a story about theperson he met or the house he just saw.One of my favorite writers is Joe Fiorito, former Gazette column but now writesin Toronto. He likes to write about

people, people who are underdogs. Heis a master of storytelling.

In the last issue of the NorthAmerican Filipino Star, I featured ArlySantos, a pianist. He mentioned thatwhen he was beginning to play thepiano, he would spend six to eighthours practicing a day. To hone his skill,a writer should write everyday. Write.Write! Write!

Inabutan mo ngpera, pera may pansigarilyo.

Maymaganda, may pangit. May mayaman,

may mahirap. May matatag, maymahina.

Saakin. Ipinaa-alaala at tinuturuan tayong lalaki sa Van Horne Ave. nahuwag mabilis manghusga . Maypagkakataong nakalilimot tayo naang buhay ng tao, parang gulong.Minsan, nasa itaas, minsan, nasaibaba. At sabi nga ni Joseph`Erap`Estrada, dating Pangulo ngPilipinas, at ni Kuya Kim, sikat naweather anchor ng ABS-CBN TVanchor, ang buhay ay "weather-weather" (pana-panahon ) lamang.
