Kitchen TipsIf you place your meat in the freezer for a bit, it'll be

Don't bother peeling garlic, just cut off the root end

You can peel ginger with a spoon without losing all

Bringing back the glory of Blood Fruit: A success

story of conservation through cultivation*Dr. Pooja Bohra and Dr. Ajit Arun Waman

Artificial colours are commonly used for colouring various food

products including beverages, for which a set of permitted colours

have been notified by FSSAI. However, at times, some unpermitted

chemicals are also used for imparting shades of different hues to food

products. These colours make the products look very attractive but

may pose serious health hazards in long run. Plant based pigments

have widely been used by human beings since ancient times in food

and fabric colouring. These colours, being natural in origin, are free

from any health hazards. Hence, they have better acceptability amongst

the consumers and offer diversified applications worldwide. For

identification of novel pigment sources, lesser known species need to

be studied systematically.

Blood fruit, locally known as khoonphal and aaltaphal, is a tropical

species naturally distributed in the forests of Andaman & Nicobar

Islands and North Eastern States. Fruits are borne in bunches originating

directly from the stem of these vines. Fruits of this species yield small

quantity of edible pulp and was once very popular among the Bengali

households in the North and Middle Andaman Islands. However, in

the recent past, natural populations of this species have been drastically

reduced due to manmade and natural disasters. In order to conserve

this important genetic resource from the Islands, a dedicated project

was funded to the researchers at ICAR-Central Island Agricultural

Research Institute (CIARI), Port Blair by Department of Biotechnology,

Government of India.

Under this project, systematic studies were carried out in blood

fruit. Pulp of the fruits was observed to be natural source of red

pigments, technically known as anthocyanins. Team of scientists from

CIARI viz. Dr. Pooja Bohra and Dr. Ajit Arun Waman, in collaboration

with ICAR-Indian Institute of Horticultural Research, Bengaluru,

carried out profiling of these pigments and it was observed that the

pulp had Pelargonidin as the dominant anthocyanidin, followed by

Cyanidin, Peonidin and Petunidin. All these compounds have

been reported to have a number of medicinal activities including

antioxidant properties and immunity boosting. Further, studies also

revealed that the pulp also contains phenolic compounds, which again

are strong antioxidant agents. Considering these qualities, blood fruit

was found to be a potential colourant for food and dye industries.

These findings have recently been published in a reputed international

journal- Journal of Food Science and Technology, Springer-Nature

Publishers.

In order to popularize this species, nursery techniques have been

standardized by the research team. Planting material of the same is

being multiplied and sold/ distributed to the interested stakeholders at

Garacharma campus of the CIARI.With planting material and technical

help from the scientists, more than 80 plants of this fruit have been

planted in about 30 locations including gardens of farmers, premises

of schools, Government Offices, Forest and Agriculture Departmentetc.

throughout the Andaman Islands. One can plant a few vines of this

novel fruit cum colourant in their backyards and relish the fruits in

future. This will also help in conserving this unique plant resource in

the islands. For booking of planting material, interested persons may

contact Dr. Pooja (9531878352) or Dr. Ajit (9531898559).
