My annual production is around 10000 bottles, hand-made, hand-bottled. All the wine of My Wyn is unfiltered, labeled by hand (a bit off-centre at times), and with a wax cap instead of a capsule. The nude female on the label symbolises the contents – unadorned and authentic, just as Mother Nature made her. 100% Pinot Noir. The grapes were harvested at a low Balling with a high natural acidity. Only 800 bottles made. The base wine was fermented and matured in second fill French oak barrels for five months. A further 14 months bottle maturation on the lees before disgorging. Brut . Elegant and fresh with hints of strawberry.
