for its beauty, its history, itsSouthern hospitality, its culture,its annual Spoleto Festival ofmusic and theater, its luxuryaccommodation, and its nedining. In a petite buildingtucked back away on one ofthe its main streets, Roberts ofCharleston supplies a uniqueblend of haute cuisine andmusic: piano music duringdinner, and songs by host RobertDickenson, who entertainsbetween courses and whilehis guest enjoy disserts. AnEvening at Roberts is not just asumptuous feast but an event,suitable for celebrating importantoccasions. At the end of a

jewel box of a room, betweenthe diners and the kitchens,stands a large reproduction ofBotticellis Venus rising from the

sea, a reminder that Robertsis not just a restaurant but anestablishment devoted to art --the art of ne dining and the artof ne music.

Robert himself is trained toprovide both. After studying atthe Culinary Institute of America,when it was located in NewHaven, he pursued an early loveby going to London to study

opera. When he returned, hefaced a dry period in the hiringof opera singers, and he had afamily to support. By the timean invitation arrived to join thecompany of the New York CityOpera, he was committed tothe restaurant he had started.Today Roberts is a family affair,his daughter MariElena also aCIA trained chef, her husbandJoseph Raya manager of the

house.

Roberts offers one sitting a nightwith a xed menu of multipleappetizers and dessert, anda choice among three maincourses. On the night we were

there, we dined on pate maision,a sea scallop mousse, and asavory pear and goat cheeseturnover. We chose the duckrather than sh or beef, endingwith a cake lled with fruit andcovered with a bourbon caramelsauce. All the while, red andwhite wines owed freely.During the leisurely repast,Robert came on stage threetimes, his high lyric baritone

lling the room with a variety ofoperatic and show tunes, somepopular Italian songs, and amedley from My Fair Lady. Thiswas not background music, but ashow, and the smiles of Robertsguest revealed their pleasure.

One afternoon on our visit toCharleston we walked along itsmain shopping street, stoppingat a store with a sign exhorting

passers=by to keep alive the artof live music. Alas, whateverperforming venue had existedthere was now permanentlyclosed. Charleston offers livemusic, not only during theSpoleteo Festival, but in manyrestaurants from which a hybridof jazz, pop, and rock wafts outon the streets. For those wholove cabaret however, Roberts isthe place to go.

We are hopeful that CharlestonArts.sc will be a major benet to local artists and arts organizations by

to native Carolinians, and ifyoure spending some timeout-of-State, it will probablybring a tear to your eye to see itwhizzing by on a bumper stickeror rippling in the soft blue skyof a native license plate. Mostfolks, however, consistentlyconfuse our ag for a simplerepresentation of a moonlit palmtree. The truth it, the sliver ofcrescent suspended in the upperleft hand corner is not a moonphase: its a piece of ornamentalarmour known as a gorget.

A holdover from the days ofknights in shining armour, thegorget was originally used toprotect the throat and blockblows from non-projectileweapons such as swords. Sincethe gorget originally rested

around the throat, the shapewas that of a crescent. In formalarmour, the gorget was placedbeneath the breastplate andbackplate set and supportedthe weight of the armour. They

were often equipped withstraps in order to attach someof the heavier armours. By theRenaissance, the gorgets hadalready achieved an ornamentalstatus and by the AmericanRevolution, it could be seenhanging from delicate chains andribbons around the throats ofofcers, signifying their rank.

The rst South Carolina ag,

designed in 1765, displayed thedark blue of the American troopsuniforms and a large crescentwith the word Liberty writtenwithin it. While most historiansagree that the crescent is therepresentation of the gorget,which was also worn as asymbol on the caps of Americansoldiers, there is some argumentthat the symbol could also stand

for the river bend on whichCharleston sits (the crescentwas a common symbol used byearly American settlements whentheir Town rested on the curveof a river), or it was a borrowed

symbol from the crest of the Bullfamily, one of Charlestons earlysettlers.

The palmetto tree on todaysag was not included untilJanuary 28, 1861, the day ofSouth Carolinas secessionfrom the Union. The palmettotree represents the defense ofFort Moultrie from British attack,as the Fort itself was made of

palmetto logs: an unexpectedlybrilliant construction, as thelogs of the palmetto tree areincredibly resilient and absorbedthe enemy cannon re like asponge.

Either way we have a pretty coolstate ag, and gorget is hard topronounce!

howtomakeGritsBy now, you should know that grits are not only the starch ofchoice in South Carolina, its also the acronym for Girls Raisedin the South; so if you dont have your recipe down by now, itstime to get boiling.

Proper grits do not come in an easy to open, plastic-lined paperpacket. As My Cousin Vinny put it, Real grits take at least20 minutes to cook. In fact, they take a couple hours, but itsworth every simmering second.

So get rid of the Quaker Instant Grits and mosey on down to therice isle. Grits can usually be found either here or in thebaking isle. If youre lucky enough to live near a locallyproduce market or farmers market, 99% of the time youll ndmore than enough grits in stock. Some local favorites includeAnson Mills grits and Charlestons Favorite Stone Ground Grits.

Now that you have the dry goods, make sure you have somefresh chicken stock, milk, cream and butter. Oh yes, youremaking these the way God intended.

Measure out your dry grits (1 cup of dry grits makes roughly 2servings) and clean them by placing them in a bowl andlling the bowl with water until the water is an inch or so above

the grits. Skim off the chaff and drain.Dont worry, it doesnt have to be com-pletely dry, just get it as close as pos-sible. Now, dump the wet grits into apot and pour in twice as much chickenstock as grits. Bring this to a boil, thenreduce to medium-low. Now add equal

portions cream and milk up to 2 and times the amount of grits. So, if I wasmaking this recipe for two, I would haveused 1 cup dry grits, 2 cups chickenstock, 1 cups cream and 1 cupsmilk. Add salt and pepper to taste, thensit back and let it simmer. The lon-ger the grits simmer, the richer theyllbe. Typical time is 20-30 minutes, butsome of the best grits sit for an hour totwo hours at low to medium-low heat,

just soaking up that cream and milk.

Right before you serve the grits up, stirin a healthy pat of butter and, if yourefeeling a little wild, grate a handful ofparmesan or cheddar cheese over thetop.

Play with and perfect this dish to yourliking. The recipe is purposefully simplefor the sole reason that its up to eachsouthern girl to come up with her ownspecial twist on thisSouthern Classic.

Now, thisisnt saying that you have to runout immediately and havevisiting cards printed, or go buya sterling silver tea set, buthaving knowledge of little thingslike place settings means a lot tolocals and ultimately, shows thatyou truly care for and respectthe civility which is the heart ofSouth Carolina.

Even at an informal dinner, its agood idea to create acenterpiece. This can be aweek-long labor of love or, inmost cases, a small settingthrown together about veminutes before the guests

arrive. A few snippings from thejuniper tree for frilly greenery

and aromatic scent, a handful ofowers arranged in a low bowl orsmall vase, a couplestrategically placed pieces offruit and a candle or two and

your centerpiece is complete. Abouquet of owers from the localorist or, better yet, a nearbyfarm, would also work, but nomatter what, the point is that youhave one. Another little pointer:dont make the centerpiece tallerthan eye level. Guests wouldlike to be able to see each otherwhen they speak and it couldmess up a lovely arrangement ifyoure having to part the

sunowers every time you wantto ask a question.

As for your silverware, if youhave sterling silver, use it. Even,and especially, if its your greatgrandmothers set thats beenpassed down for generations.

aBout mt. pLeasantOriginally occupied by the Sewee Indians, Mount Pleasantsrst white settlers arrived from England on July 6, 1680under the leadership of Captain Florentia OSullivan. CaptainOSullivan had been granted 2,340 acres which included not

only the island that bears his name, but also the land that wasto become Mount Pleasant. On the earliest map of the timethis area was called North Point.

In 1696, 51 new settlers arrived. Each family was allottedseveral hundred acres in the area that became known asChrist Church parish. In 1706 the Province of Carolinawithstood several attacks by the Spanish and the French andwere victorious in defeating French invaders in an area knownas Hobcow Plantation.

Hobcaw Plantation, located between Shem Creek and the

Wando River. Later, it was also known as ShipyardPlantation because its deep water and abundance of goodtimber made it ideal for a shipbuilding.

On September 24, 1860 a public meetingwas held in Mount Pleasant thatproduced the rst secession resolutionof the state. With the advent of the CivilWar, Battery Gary and an adjacentoating battery between Mount Pleasantand Sullivans Island were instrumental in

defense of the town, as well as attacks onFort Sumter. The town was also defendedby a line of fortications from ElliotsCreek at Boone Hall to Copahee Sound.Mount Pleasant was also the secrettraining ground for the nine-man crew ofthe Confederate submarine H. L. Hunley.It was from Breach Inlet in 1864 that thissmall vessel was launched to attack andsink the USS Housatonic.

Mount Pleasant is separated from

Charleston by the Cooper River. Formany years it was primarily populatedseasonally by Charleston residentswealthy enough to afford summer homesacross the river from the Charlestonpeninsula. The population of MountPleasant was centered in an area of thetown now known as The Old Village.

On July 16, 2005, the eight-lane ArthurRavenel Bridge opened for trafc,replacing the two aging bridges. A weekbefore the new bridge, one of the longestcable-stayed bridges in the westernhemisphere, ofcially opened,pedestrians were allowed to cross thebridge, and commemorative coins weredistributed. Also, a reworks display wasa part of the ceremonies leading up to theactual opening of the bridge. Several carsfrom the same time period as the GraceMemorial Bridge, including severalrestored Model A Fords, made a nal

crossing of the old bridges. Theremaining portions of the old bridgeswere demolished. Local residentswatched as the bridges were blown up inspectacular shows.
