IN THE COLD! (continued):• Because Canada has long winters, it is no

wonder that they have a lot of people who like to ice fish. It is home to the greatest number of participants in the sport. In the year 2000, Canadian anglers spent a combined total of 4,489,296 days ice fishing!

• A small fishing village on the south shore of Nova Scotia, West Pubnico, was named for the native Mi’kmaq word, Pombcoup, which means: “a hole that has been cut in the ice for fishing.”

• More than 60% of the fish Canadians catch beneath the ice are caught and released. They eat less than one third of their catch. They practice CPR: “catch, photograph, release!”

• Minnesota is nicknamed the “Land of 10,000 Lakes.” There are actually 11,842 lakes in the state that are 10 acres or larger (4 ha). With so many lakes and cold winters it is no wonder that ice fishing is a popular sport.

• Minnesota is known for its abundance of ice shelters set up on the state’s lakes. If you’ve ever flown into or out of the Minneapolis-St. Paul International Airport you have probably noticed all of the dots on the lakes! Each year it is estimated that around 150,000 ice fishing shelters are set up. The state’s Department of Natural Resources estimates that about 30% of the fish caught in the state are caught when the lakes are frozen.

• Ice fishing is a risky sport and the depth of the ice is something to be taken very seriously.

has a soft spot for me so you are likely to meet me when you come into the shelter first thing, as I love to hang out in the office with her. I might bark at you when you first come in, I can be a little nervous when I first meet people. If you take some time with me though, I warm up and will let you pet me for hours. When you stop I am sure to remind you that I am still there

Stray Cat ShelterWe have received numerous phone calls from concerned citizens who have seen stray cats roaming their neighbourhoods. With the wicked cold snaps and storms we have been hit with this winter we understand peoples concern. Cat traps are helpful with catching stray cats, but are only available to rent during warmer weather (Mar. 1 – Oct. 31). Here are a few alternatives we have found online for use during the cold winter months.

Winter Cat Shelter Made from Rubbermaid Storage BinPurchase a large Rubbermaid storage bin (a.k.a. storage tote) with a removable lid. It’s important the brand is Rubbermaid otherwise the plastic walls may crack in frigid temperatures. You’ll also need an eight foot by two foot sheet of one inch thick hard Styrofoam, a yardstick, box cutter, and insulating material such as hay or straw.To assemble:1. Cut a doorway six inches by six inches in one of the long sides of the bin towards the corner. Cut the opening so that the bottom of the doorway is several inches above the ground to prevent flooding. 2. Line the floor of the bin with a piece of Styrofoam, using the yardstick and box cutter to cut the piece. It doesn’t have to be an exact fit, but the closer the better. 3. In a similar fashion, line each of the four interior walls of the bin with a piece of the Styrofoam. Again, perfect cuts are not necessary. Leave a cap of three inches between the top of these Styrofoam “wall pieces” and the upper lip of the bin. 4. Cut out a doorway in the Styrofoam interior wall where the doorway has been cut out all ready in the storage bin. 5. Stuff the bottom of the bin with straw or other insulating material (no blankets or towels!) to hold the wall pieces in place. 6. Cut out a Styrofoam “roof ” to rest on top of the Styrofoam wall pieces. 7. Cover the bin with its lid. 8. This shelter is easy to clean by taking off the lid and the roof. It is lightweight and may need to be weighed down. A flap over the door way is optional.

Build a Shelter Using a Styrofoam CoolerAn adequate shelter for one cat can be made from a simple Styrofoam cooler available at any hardware store for about $6. Glue the lid onto the cooler, turn it upside down and cut a hole in one side (anywhere but in the middle of one of the long sides). The Styrofoam containers used to ship meat can be turned into shelters in the same way and can, depending on their size, house 3 to 4 cats. If you want to get fancy, get a large Igloo cooler and, with a jigsaw, cut a hole towards the left or right of one of the long sides. The attached lid will allow for easy cleaning.

Interior Insulation - Insulating Your Cat ShelterPutting insulating materials inside the shelter will increase the comfort and warmth of the cats. Insulation materials should only be used if the shelter can be periodically checked to see if they have gotten damp or too dirty and need to be replaced. If regular check-ups are not possible, leave the interiors bare.Only insulating materials which the cats can burrow into should be used. Items which the cats will only lie on top of; such as blankets, towels, or flat newspapers, should not be used. These items, when they are underneath the cat will draw body heat out and actually make the cat colder.

Straw, Hay and Other Good Insulating MaterialsStraw and hay are good insulating materials to use. Straw is better than hay because it can absorb more moisture and is less prone to mold or rot. Shredded newspaper will also work. One innovative idea is to loosely fill a cotton pillow case with Styrofoam peanuts, the kind used to pack fragile items during shipping, and tie the pillow case closed. Then put the stuffed pillow case inside the shelter. The pillow case will conform to the cat’s body and wrap her in heat capturing peanuts.

Pro athletes watch a lot of game film to learn opponents’ tendencies. But no sport canmatch poker for the information to be gathered from watching tape. Televised pokergives you a chance to see how a player handles every situation, and all the while youknow exactly what he has in his hand.

I have long studied Tom Dwan, one of the best high-stakes players in the world. I pat-terned my game after his, and I don’t think I would have made the “November Nine” orwon a World Series of Poker bracelet had I not paid such close attention to Dwan’s tele-vised play.

Recently, I watched an old “High Stakes Poker” episode for the umpteenth time toanalyze Dwan’s approach. Playing eight-handed, Dwanopened with K♥ Q♥, a pretty big hand in an aggressivegame.

Ilari “Ziigmund” Sahamies made a standard raise, three-betting to 13,000 on the button with A♠ 3♦. This hadn’tbeen Sahamies’ finest session, and he was playing position,trying to gain any edge he could. Dwan called — a play Ireally like. His hand had value, and there was no reason tofour-bet when both players were deep-stacked.

The flop came A♣ J♣ 10♦. Dwan took his time andchecked his straight.

Lesson No. 1 from Dwan in this hand: Take your time. Dothe same thing on every move. Be robotic when checking orbetting. The more regulated your movements, the tougher itis for good players to get a read on you.

Sahamies checked back with top pair, as he rightly shouldhave. There are so many combo draw hands thatwould check-raise a bet, and his top pair wasn’tenough to build a big pot.

The turn came 7♣. Now there were possibleflush combinations out there, and Dwan’s handwas vulnerable, with a club on the river meaningSahamies would only need to hold one club tohave a winning hand. A lot of amateurs wouldhave bet in this spot to protect their hand. But the better play was to dowhat Dwan did: Check the turn and allow your opponent to think he hasthe best hand. That set ups up a check-raise on either the turn or river.

Sahamies correctly checked. The way the action was going,Sahamies probably thought he had the best hand, but there were somany combinations that could beat him. He wanted to keep the potsmall.

The 5♠ hit on the river.What I love most about this hand is that Dwan checked again. He

flopped the nuts ... and checked. He also checked the turn and river.Great play.

Sahamies bet 16,000 into a pot of 28,600 — a standard bet. You don’twant to bet too small because you’ll get check-raised. You want to betenough so that it looks like it could be a bluff or a value bet. But I did-n’t like this bet, as it left the door open for Dwan to own the action with either a bluffor a better hand.

Sahamies should have just checked. The board texture simply wasn’t lined up in hisfavor, and value-betting is so thin when holding top pair against someone capable ofraising with or without better cards. Sahamies would be in a tough spot if Dwan wereto raise, and Sahamies wasn’t going to be called if Dwan had a worse hand.

Dwan made it 60,300. Sahamies called.Dwan raked in a pot of 150,000. Had he played it any other way, he would have net-

ted about half that amount. Dwan is among the best in the business at knowing his oppo-nent and knowing the perfect way to play a hand.

Yielding to Emergency Vehicles

What do you do when you see an emergency vehicle approaching with it’s lights and siren on? This is one of the most troublesome problems encountered by emergency service providers and sometimes one of the most confusing for motorists.

When an emergency vehicle is heard and or seen, motorists should carefully pull their vehicles to the right of the road and STOP. Motorists should remain stopped and wait until they are certain all emergency vehicles have passed. Motorists must stay at least 300 feet behind emergency vehicles. If approaching an emergency vehicle that has stopped on the side of a highway, reduce speed to an absolute maximum of 60 km/hr. Proceed with caution.

Drivers of emergency vehicles know that they cannot help anyone if they do not get there! Generally emergency drivers will move left, since other motorists are supposed to move right. Sometimes due to traffic conditions, they may have to travel in opposing lanes. This is why it is so important for motorists to respect emergency response vehicles by moving out of the way and STOPPING. That will provide the space needed and ideally give an escape route if something goes wrong.

When you or someone you care about needs the help of an emergency responder, you will be thankful for the motorists who did not impede response and allow their safe and prompt arrival.

Great Lakes. They became stranded when ice broke away where they were fishing. The Coast Guard rescued all, however, one died in route to the hospital due to hypothermia. This life threatening condition occurs when body temperature falls below 95° F (35° C).

• It is imperative when ice fishing to get expert advice. Knowing the area and the ice conditions can make the sport fun; not knowing can lead to disaster. It is recommended that ice thickness for someone fishing alone (not really advisable) be almost four inches (10 cm). For groups, where more are standing on the ice, the ice should be about 7.5 inches (18 cm). When vehicles are taken on the ice, which does happen in some cold climates, the ice should be 11-12 inches (28 cm).

• Icebergs are much thicker than the ice that freezes over lakes in the winter. Icebergs are chunks of ice that developed on land, then break off and float in a lake or ocean. The word “iceberg” originates from the Dutch “ijsberg”, which means ice mountain.

• Icebergs are found in all shapes and sizes, from very small pieces to ice islands that can be the size of a small country. The term “iceberg” actually refers to ice larger than 16 feet (5 m) in diameter. Smaller icebergs are known as growlers and bergy bits. Even though they are smaller, they are harder to spot and therefore very dangerous for ships.

• Even though most icebergs are found floating in oceans of salt water they are made of pure fresh water. Most of the icebergs on earth are found in the frigid waters surrounding Antarctica and in the northern Atlantic Ocean. Most icebergs originate near the west coast of Greenland.

• “Iceberg Alley” is the name given to an area from Baffin Bay, off the west coast of Greenland where many massive icebergs break into the water, to the coast of Newfoundland and Labrador on the east coast of Canada. The Newfoundland and Labrador area is known as the Iceberg Capital of the World.

• Approximately 90% of the icebergs that are in the waters near Newfoundland and Labrador originated from the glaciers of western Greenland. They are among the fastest moving icebergs in the world. Even so, by most standards, the four miles (7 km) per year that they tend to move seems slow. It takes an estimated two to three years for the massive icebergs to cover the 1600 nautical miles (2963

• After the sinking of the Titanic in 1912, near Newfoundland, the United States, Canada, and eleven other countries formed the International Ice Patrol. The patrol uses airplanes and radar to track icebergs that make their way into the major shipping lanes. The U.S. National Ice Center monitors icebergs larger than 5,400 square feet (500 sq/m) near Antarctica using satellite data. Icebergs are not just studied and watched to protect ships, scientists use them as tools for studying ocean processes and climate.

• A way that some inventive Canadians have chosen to use the abundance of icebergs floating in their waters is in creating vodka and other alcoholic spirits. The Iceberg Vodka Corporation, based in St. John’s Newfoundland, produces spirits “made from naturally pure 12,000-year-old icebergs harvested off the coast of Newfoundland.” They use Ontario-grown sweet corn in making their beverages as well. They also make Iceberg Rum and Iceberg Gin.

“Potatoes or rice?” That’s one of the most common questions home cooks ask themselves, or their families, when preparing stews or braises, those perfect dinner main courses for delivering warmth and satisfaction on a cold winter’s night. With such dishes, you need to serve some sort of starch as a side. How else can you soak up every last drop of delicious sauce, not to mention helping everyone leave the table feeling perfectly, contentedly full?

Of course, as a child, I ate more than my share of potatoes and rice (or other grains). But some of my favorite meals came when my mother or grandmother made traditional Austrian dumplings. Sometimes, they were the popular treat known as spaetzle (literally, “sparrows”), boiled and butter-browned dumplings that looked like little birds if you squinted your eyes and used your imagination. At other meals, there might be potato dumplings, studded with onion and bits of crispy bacon.

But one of my favorite kinds was something known as servietten knudel, or a “napkin dumpling.” And, no, that doesn’t refer to the dumpling’s ingredients

any more than spaetzle does! This particular treat gets its name from the way it’s traditionally cooked. A mixture of dried bread cubes, buttery sauteed onion and garlic, chopped fresh herbs, egg, and milk is securely wrapped up as a plump sausage shape inside a clean white cloth napkin and then poached in boiling water until firm, then unwrapped and cut into pieces. The result, similar in texture to a very moist bread-based dressing you might prepare to go with a roast, makes a perfect companion to any dish that features a wonderful, rich sauce. We often ate it with a spicy goulash or paprikash made with pork, beef, veal, or chicken.

You can enjoy a napkin dumpling with either of those Austrian favorites, or with any other braise or stew of your choice. And you don’t even need a napkin to make it. I’ve developed another convenient method, first rolling up individual portions with sheets of plastic wrap and then sealing them securely inside a second wrapper of aluminum foil before cooking the dumplings in simmering water.

Once you’ve tried my recipe the way it’s written, you can start customizing the mixture to your own tastes and to what you’ll serve it with. Substitute whole-wheat bread for white. Caramelize the onions if you like.

Try different herbs or spices. Add a little chopped, toasted nuts, some dried fruit, grated cheese, or chopped mushrooms cooked down to a thick paste. In other words, vary it as you might for a dressing or pilaf recipe.

And when the question of “Potatoes or rice?” next comes up, smile and know that you have another option!

AUSTRIAN “NAPKIN” DUMPLINGS Serves 6 By Wolfgang Puck

-6 ounces unsalted butter -2 tablespoons minced garlic - medium-sized yellow onion, minced -1 regular-sized loaf white bread, about 1-1/4 pounds, crust trimmed and discarded -2 tablespoons minced fresh chives -2 tablespoons minced fresh marjoram -1 tablespoon minced fresh parsley -1 large cage-free egg -2 cups milk -Salt -Freshly ground white pepper -Freshly grated nutmeg -Butter-flavored nonstick cooking spray Preheat the oven to 250 degrees F. In a saute pan over medium-high heat, melt the butter. Add the garlic and onion and saute, stirring frequently, just until tender and translucent, 3 to 5 minutes, taking care not to let the mixture brown. Remove from the heat and set aside. With a sharp serrated bread knife, cut the bread into 1/2-inch cubes. Place on a baking sheet and bake in the oven just until dry but not yet browned, about 20 minutes. Transfer the cubes to a large mixing bowl. Spoon the onion mixture evenly over the bread. Add the chives, marjoram, and parsley. Toss to distribute the herbs, onions, and garlic evenly among the bread cubes. Break the egg into a small bowl and beat it lightly. Stir in the milk. Add the egg and milk to the bread mixture. Season with salt and white pepper to taste, and just a hint of nutmeg.

On a work surface, place 6 lengths of plastic wrap, each about 12 inches long. Lightly spray each length with nonstick cooking spray. Divide the mixture into 6 portions, spooning it across the center of each sheet of plastic wrap, leaving 2 to 3 inches at each end. Roll up each portion inside the plastic wrap to form a large, even sausage shape, twisting the wrap to seal each end. Securely wrap each plastic-enclosed portion in its own generous length of aluminum foil, folding and crimping together the edges to seal securely. Halfway fill with water a pot large enough to hold all the dumplings. Over high heat, bring the water to a full boil. Season with salt. Carefully slip in the dumplings and reduce the heat to maintain a steady, gentle simmer. Cook for 20 minutes. Drain the dumplings thoroughly. Very carefully remove the foil from each dumpling. On a work surface, carefully unroll the plastic wrap from each dumpling and, with a knife, cut each dumpling crosswise into 6 pieces. Place the dumpling pieces on each serving plate and serve with your stew or braise.

Mommy Dearest!

As I was trying to pack for vacation, my 3-year-old daughter was having a wonderful time playing on the bed. At one point, she said, “Mom, look at this,” and stuck out two of her fingers.

Trying to keep her entertained, I reached out and stuck her fingers in my mouth and said, “Mommy is gonna eat your fingers!” pretending to eat them before I rushed out of the room again.

When I returned, my daughter was standing on the bed staring at her fingers with a devastated look on her face and tears down her face.

I said, “What’s wrong honey?”
