Many of us in the cheese world are familiar with Epoisses, and L’Ami du Chambertin is very closely related, but slightly smaller in size and a little taller, ripening differently as it ages. It is a soft-ripened, washed rind cow’s milk cheese produced in the Burgundy region of France, where Gaugry sources only local milk that exemplifies the lush terroir of the region. As it ages for two months it is washed with water and Marc de Bourgogne, developing the thin wrinkled orange-to-reddish rind, as well as the distinct piquant aroma of this beautiful cheese.

When eaten young, the interior paste is dense and cakey with a thin creamy veil just beneath the rind. As it matures, that cakey interior will turn to a rich creamy texture that is better served with a spoon than a knife. The rind produces a strong earthy flavor and as you work toward the center the flavors become more and more buttery, with notes of peanut. Pairing note: “What grows together goes together”

We all know that cheese and wine are natural companions; now how about a cheese that was specifically created for the wine of the region it’s produced in! L’Ami du Chambertin (friend of Chambertin) was created in 1950 by Raymond Gaugry to pair perfectly with Gevrey-Chambertin. If you don’t have a bottle of Chambertin in the cellar, a medium bodied Burgundy will do just fine. Cheers and enjoy!
