Maria Lucas
Maria Lucas Rodriguez was born in Ayutla,
Jalisco on June 11, 1937. Maria recalls that
as a child she enjoyed sharing her love of
nature with her father. One day he took her
to a raven’s nest to experience one of
nature’s marvelous birth miracles and was
delighted when she saw their white feathers
appeared. Maria lives a pleasant life with
her son Pedro and his wife Julieta Efigenio.
Julieta brought Maria to the Community
Center 19 years ago where she started
volunteering in the garden. Every day we see
Maria sitting by “La Tiendita” knitting or
embroidering while attending to the Gift
Shop. Thank you Maria, for the help that
you lend to our community.
Maria Lucas Rodriguez nacio en Ayutla,
Jalisco el 11 de Junio de 1937. Maria
recuerda que cuando era nina le
maravillava compartir con su padre el
milagro de la naturaleza; un dia el la llevo
al nido de un cuervo para que viera el color
blanco de sus plumas al nacer. Maria vive
una vida placentera con su hijo Pedro y
Julieta Efigenio su nuera, quien la trajo
hace 19 anos al Centro de la Comunidad
adonde empezo como voluntaria en el
jardin. Todos los dias vemos a Maria
sentada afuera de “La Tiendita” tejiendo o
cosiendo y siempre atendiendo en la
tiendita. Gracias Maria por la ayuda que
prestas a nuestra comunidad.

Club Health and Wellness Dance Class Arts and Crafts Class Fitness Class/Activity
Stress Management Yoga - Design for the disabled student to recognize stress symptoms and
become aware of signals which cause triggers in stress. Learn stress management skills from
passive to active take-charge role.
Yoga - A slow-paced, very beginner yoga class for those with more seasoned bodies and those new
to yoga. The class will use chairs and other props to ensure that the benefits of yoga are accessible
to folks of varying degrees of strength and flexibility.
Sit & be Fit -Is an exercise program for older adults and individuals with limited physical motion.
This class promotes functional fitness, healing, and independence.
Soul Line Dancing – Is a low impact aerobic exercise. The music selection includes the following:
R&B, Blues, Jazz, Hip-Hop, Country, and Latin.
Tai-Chi – This format is often described as “meditation in motion,” but it might as well be called
“medication in motion.” There is growing evidence that this mind-body practice, which originated
in China as a martial art, has value in treating or preventing many health problems. And you can
get started even if you aren’t in top shape or the best of health.
Samba – It’s time to move to the rhythm of Latin Music! This is a free style dance format where
you dance along as you wish. Directed by one of our volunteers that loves to dance!
Estrés Yoga Gestión - Diseño para el estudiante con discapacidad a reconocer los síntomas de estrés y tomar conciencia de las señales que causan los factores desencadenantes de estrés. WHAT’S COOKING?
Rosmary Lemon Chicken with Vegetables
We are serving this dish on Monday, March 14!
Ingredients
1/2 lbs. small red potatoes rinsed and cubed
1 1/2 cups baby carrots
1 cup green beans, trimmed
2 boneless, skinless chicken breast
1 tbl. olive oil
1/4 cup lemon juice
2 tbl. honey
1 tbl. Chopped fresh rosemary
1 tea spoon grated lemon peel
1/4 teaspoon ground black pepper
Preparation
1. In a medium pot bring 8 cups of water to boil.
2. Add potatoes, carrots, and green beans and cook for 5 min. drain and set aside.
3. Cut chicken breasts in half. Place olive oil and chicken breasts in a medium skillet; cook over medium heat for 5 min. on each side.
4. Add potatoes, carrots, green beans,and all remaining ingredients to skillet, except 2 tlb. lemon juice
5. Cook over low heat for 5 min. more or
until chicken is fully cooked. Add remaining lemon juice to taste and serve.

Ingredientes
1/2 Libra de papas pequenas
1 1/2 tazas the zanahorias pequenas
1 taza de ejotes sin las puntas
2 pechugas de pollo sin hueso y sin piel
1 cucharada de aceite de oliva
1/4 taza de jugo de limon.
2 cucharadas de miel*
1 Cucharada de romero (Rosemary) fresco, picado o 1 cucharadita de romero seco (dried rosemary)
▪ cucharadita de ralladura de cascara de limon
1/4 cucharadita de pimiento negra molida
Preparación
1. En una cacerola mediana, ponga a hervir 8 tazas de agua.
2. Agregue las papas, las zanahorias y los ejotes, y deje cocinar 5 minutos; escurralos y apartelos.
3. Corte las pechugas de pollo por la mitad. Ponga el aceite de olive y lad pechugas de pollo en un sarten mediano, cocine a fuego medio por 5 minutos en cada lado.
4. Agregue las papas, las zanahorias, los ejotes y los demas ingrediented en el sarten.
5. Cocine a fuego lento por 5 minutos mas o
hasta que el pollo este totalmente cocinado. Agregue el jugo de limon al gusto y sirva.
