It is hard to believe I am already writing this article for the March issue of the Log Sheet. February has proved to be another fabulous month at GYC. I would like to thank Kathy Hage and Committee for the wonderful job they have done. The Super Bowl and the 1st Annual Chili Cook-Off was well attended and all had a great time. I also would like to thank Sam Vasquez and his young Adult Commit-tee for initiating and spearheading the Chili Cook-Off. It was a big hit and hopefully will become an annual event. Despite the weather and canceling of the Gulfport parade, the Party Hardy Mardi Gras Party was a great success. I would like to thank all who braved the weather and attend-ed this function. I know personally I had a lot of fun and enjoyed the great food, especially the raw oysters. These functions are sponsored by our Entertainment Committee but would never happen if it were not for Steve, our Man-ager, and his great Staff. Please take time to thank them and let them know how much we appreciate their services. Looking forward to March, the club has many activities planned so mark your calendars and get ready for lots of fun. Remember, this is your club and your participation is what makes it so special.

GYC Safety Tip: Cold Weather Over? We’re into March and I’m sure many of you remember the weekend snowstorm we had at this time several years back. Don’t forget the Wind Chill Factor when protecting your plants and animals. The Wind Chill Chart was revised in November 2001 and can be viewed at http://www.nws.noaa.gov/om/windchill/. What a successful night we had at the club for our Valentine’s Gourmet Dinner. The ambiance was perfect and the food was ex-ceptional. We had nothing but praises about the menu and the number one entrée sold was the Lamb Tenderloin over Balsamic Pomegranate Reduction. I hope everyone enjoyed Mardi Gras 2012. In spite of the rescheduled Gulfport Gemini Parade the party went on. If you missed the Party Hardy Mardi Party here at the Club you missed a great time that included Frozen Hurri-canes activities for the entire family and a New Orleans style buffet with freshly shucked oysters. It was a great celebration to kick off the Lenten Season. On Ash Wednesday and Fridays through Lent we started offering more seafood specials for everyone’s taste and budget.

I’m very excited about our membership drive being so successful. We are very close to reaching our targeted goal. Thanks to all of you for shaking the trees and reaching out to your community to help us provide a sound future for the club. In the private club in-dustry there are numerous clubs today that struggle retaining and recruiting new members. There are also clubs that spend thou-sands of dollars hiring membership recruiting companied in the hope of building a solid membership base. We have accomplished our goal with hard work, dedication and the simple concept of Ownership while keeping our dollars working for us in our com-munity at our club. Thanks again for your help. a link to our revised club rules and regulations. If you have any questions about any of our procedures or policies, especially per-taining to our billing and credit system, please go to the site for clarification.

This year because of the St Patrick’s Day City parade schedule we will celebrate the Irish Holiday with a Friday, March 16th St Patty’s Day Kick Off Party. Come out for a great Irish menu, green beer and live entertainment. We will offer the Irish Buffet only, no A-la-carte menu served this night. Don’t forget to wear your green!

As promised, each month I will ask a Trivia question in my letter. The first member who brings me the correct answer in PERSON when dining at the club on a Friday will receive a $20.00 Gift Cer-tificate. Last month winner was Tom Landrum, Congratulations!

Ladies Auxiliary Happenings:Since the last publica-tion, we have had the January luncheon, at which time we were happy to hear our new Commodore, Laurence Hage, speak about his

exciting plans and foresight for GYC in 2012. He brought the Auxiliary up to date on the Port of Gulfport expansion and the possible neighboring casino. The Auxiliary presented Commodore Hage with a gift of a shirt and tie with GYC logo and wished him success in the New Year. New officers installed by Commodore Hage were Dot-tie Long, President; Lynn Bates, Vice Presi-dent; Camille Williams, Secretary; Judy Karl, Treasurer; and Candace Ozerden, Parliamentarian.

Our January bridge winners were Maybelle Dukes and Margaret Blount. Bridge has been a tradition at GYC and we hope that many of our new members will join in this activity. Several Auxiliary members have shown an interest in bridge lessons and we

are hoping to get them started soon. If you are interested, let any board member know.At our February luncheon, we enjoyed a program presented by Betty Shaw. She en-lightened us with historical information and a slide show with pictures from her re-cently published book: Gulfport, Images of America.

We are very grateful to Coasting, Inc., Domino House, Fabrics to Fringes, Fagan’s St. Thomas Rental, Gulfport Galleria, Ham-mett’s Auto, Heritage House, and Karl’s Jewelry for purchasing ads in our 2012 yearbook. This will enable us to mail year-books to the many members, (other than regular Auxiliary members), who chose to support the Auxiliary and our efforts to en-hance our GYC. If anyone has had changes in address, phone numbers or Email since our last publication, please let us know. The Auxiliary has a mail box in the Yacht Club office where you may leave any correspon-dence to the Ladies Auxiliary. The year-books will go to the printer later in March.Members and spouses are encouraged to

mark their calendars for March 28 as we are sailing towards summer with a style show unlike any we have EVER had. Our GYC BOARD MEMBERS (men) and a few ladies will be modeling sailing and boating attire that will look good whether on the water or shore. Cheese and a glass of wine will be served at no cost to members as we mingle with friends and our new mem-bers. We are gathering at 5:30 to enjoy the festivities. The evening gathering is espe-cially for our members who are working and cannot attend our regular luncheons. Hostesses are Wilda Switzer, Bettye Brown and Marge Montgomery. After the show we hope you will plan to enjoy the Wednesday Pasta Night.

Veal PiccataYield 4 Servings

Ingredients • 1/2 cup all purpose flour • 2 teaspoons salt • 1/2 teaspoon freshly ground black pepper • 4 veal scallops, about 3/4 pound, pounded to a thickness of 1/8-inch • 1 1/2 tablespoons vegetable oil • 5 tablespoons butter • 1 cup dry white wine • 1/2 cup chicken stock • 1 garlic clove, chopped • 1 lemon, juiced, or more to taste, (about 2 table spoons) • 2 tablespoon capers, drained • 1 tablespoon chopped parsley leaves, optional, plus sprigs for garnish

DirectionsIn a shallow bowl or plate combine the flour, 1 1/2 tea-spoons of the salt and pepper and stir to combine thor-oughly. Quickly dredge the veal scallops in the seasoned flour mixture, shaking to remove any excess flour. Heat the oil in a large skillet over medium-high heat until very hot but not smoking. Add 1 1/2 tablespoons of the butter and, working quickly and in batches if necessary, cook the veal until golden brown on both sides, about 1 minute per side. Transfer to a plate and set aside. Deglaze the pan with wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. When the wine has reduced by half, add the chicken stock, chopped garlic, lemon juice and capers and cook for 5 minutes, or until the sauce has thickened slightly. Whisk in the remaining 1/2 teaspoon of salt, remaining 3 1/2 tablespoons of butter and the chopped parsley. When the butter has melted, return the veal scal-lops to the pan and cook until heated through and the sauce has thickened, about 1 minute. Garnish with parsley sprigs and serve immediately. Best served over Angel Hair Pasta.

Sailors needed! This a a 5 part course for beginners and refreshers covering all aspects of sailing. Now, with our fleet of big boats we have room for ice chests and stereos. It was a outstanding day of Chili. Teams showed up with their own recipe but, only one turned out to be the winner. Justin McGuffe and Randall Love’s Jalepeno and Cheddar took top prize by two points over Sam & Alex’s Triple Threat. Cassidy/Hassin in 3rd, and Team Maddame II in 4th. We would like to thank all competiors and judges for participating and cannot wait for the 2nd Annual in 2013!
