Zucchini Skillet By
Phyllis Wheeler
2 medium zucchini, peeled
2 cans of mushrooms, drained
2 small jars of red peppers, diced
Minute rice
1 can chicken broth
1 1/2 sticks oleo
1 1/2 teaspoons garlic salt
In a 2 quart saucepan combine the minute rice,
chicken broth and 1/2 stick of oleo. Heat to a boil
then add 1/2 teaspoon garlic salt. Cover and let
sit while preparing the vegetables.
Slice zucchini into 1/2” slices, about 2 cups. In a
10 inch skillet, melt a stick of oleo. Add zucchini
into the pan with the mushrooms and red pepper.
Add rice and stir together with 1 teaspoon garlic
salt. Turn down the heat to low and cook for 10
minutes. It is now ready to eat!

What You Think Upon Grows
In 1952, Norman Peale wrote the best-selling book The Power of Positive Thinking. Many psychologists have proven since then that positive thinking can have major effects on lowering stress, improving resistance to the com-mon cold, reducing the chances of cardiovascular disease, and increasing your life span. For this reason, May 31 is What You Think Upon Grows Day,
honoring Peale’s birthday on May 31, 1898.
Certainly, hard work and dedication are important components of finding success, but it is also important to direct your hard work and dedication toward positive goals by thinking posi-tive thoughts. Studies show that regular exercise and humor help create positive attitudes,
and all of these activities reduce stress. Now isn’t that worth thinking upon?
Wonder Ingredient Vinegar is the essential ingredient in many salad dressings. Malt vinegar is poured on French fried po-tatoes. Balsamic vinegar is drizzled on strawberries. But this month it’s time to start appreciating its many amazing other household uses. May is Vinegar
Month. Vinegar has been around for thousands of years. In 5000 BC, the Sumerians of ancient Babylonia used vinegar as a cleaning agent. During the Roman Em-pire, Julius Caesar and his armies drank vinegar. Helen of Troy used to bathe in vinegar to relax. What makes vinegar such a versatile cleaner? Vine-gar is acidic. Its acid dissolves dirt and mineral de-posits from surfaces and deodorizes. Many also be-lieve in vinegar’s medicinal benefits, although few have been scientifically proven. The ancient Greek physician Hippocrates, known as the father of mod-ern medicine, used vinegar to treat fever, ulcers, and chest pains. Vinegar has long been used as a food preservative, and it has also been shown to have antibacterial properties. People can save lots of money using vinegar around the house in place of expensive cleaners. For example, diluted solutions of vinegar can clean sooty bricks around your fireplace, brighten wood, and even revitalize faded carpets. Is your shoe closet starting to stink? Simply soak a slice of bread in vinegar and leave it in the closet overnight. By morning the smells will be gone. Remove bumper stickers or glue. Soak the sticker in vinegar, wait ten minutes, and then simply scrape it off. Adding vinegar to the water when making hard-boiled or poached eggs helps prevent the eggshells from cracking and the egg white from running. Vine-gar can make your skin look and feel fresh, ease headaches, kill weeds, sharpen knives, and even treat jellyfish and bee stings. You’ll soon be asking yourself, “Is there anything vinegar can’t do?”
New and Improved Games The week leading up to Memorial Day, May 20–27, is Backyard Games Week. While this week could be en-joyed playing traditional games such as croquet, bad-minton, and horseshoes, there are many new and in-novative games to challenge your backyard gaming skills. Bocce: An Italian game similar to the French game petanque, it involves rolling or throwing balls along a court near to a smaller ball, known as the pallino or jack. The team that rolls its ball closest to the pallino earns points. Each team typically rolls four balls, with the opportunity to knock opposing balls or even the pallino out of the way. KanJam: This game is similar to horseshoes but is instead played with a Frisbee. One person attempts to toss a plastic disk into a basket on the other end of a fifty-foot-long court. However, each team consists of two members. The disk thrower remains stationary while the other team member may, at any time, knock or redirect the flying disk into the basket. Ladder Golf: This game requires a free-standing, three-runged “ladder” and “bolas,” which are two golf balls connected by a strand of nylon rope. The goal is to toss your bola at the ladder in an attempt to hang your bola around one of the rungs. The top rung is worth three points, the middle rung is worth two, and the lower rung is worth one. The first player to earn twenty-one points wins. Crazy Croquet: This game is a combination of croquet and miniature golf. Arrange your wickets along a chal-lenging course of obstacles such as ramps, tunnels, sand traps, and bridges. The first to pass through all the wickets is the winner.
