    Theres a refreshing chill in the air, and yes folks, fall is nally here. Or, at least its here a few times a week,

    for now. I love seeing yellow, orange, and maroon mums, pumpkins and gourds of all shapes and sizes in

    every grocery store; for some reason fall makes me want to break out my repressed Martha Stewart side

    and start building leaf wreaths. However, when I get this urge I usually consider how much trouble that

    would be and abandon the entire project. This is not to say that at some point this month I wont carve the

    lone pumpkin sitting on my kitchen counter. Carving a pumpkin is easy, right? (FYI: Check out The Busy Bee

    Pumpkin Patch ad on page 7.) Happy fall to you all, and carve away.

    Its Time for FallIndulge in your pumpkin cravings!

    It is ocially fall! Do you know what that means? If youre reading this food article and havent guessed already, shame on you.Its time for pumpkin-avored everything! And I do mean everything. Fall is my favorite time of year. Its cooling down, holidaysare coming up, school is halfway over and the overindulgence of pumpkin dishes is totally acceptable.

    Its not surprising that cans of pumpkin have been available at stores near you for a few weeks now, with Libbys famouspumpkin pie recipe on the back of the label. Generations have passed down their recipes, and Starbucks once again has fall-inspired drinks, with a pumpkin spice latte included in the lineup.

    The same things have been done year after year; the simple pumpkin pie, or the more modern pumpkin roll. Weve seen it amillion times, weve had all the varieties, with nutmeg, without nutmeg, with extra cinnamon, with cream cheese and so on andso forth.

    Its nice and all, and you just cant go wrong with a simple traditional homemade pumpkin pie. However, with Pinterestconsuming my everyday life in and out of the kitchen, I have found countless recipes using pumpkin that Ive never seen before.It makes my mouth water as I type!

    I recently went to the store and stocked up on cans of pumpkin before the fall baking rush comes and wipes it all out. With

    that being said, in the next few weeks, Ill be featuring quite a few pumpkin recipes on my Facebook page and food blog. Ill beexploring desserts such as chocolate chip pumpkin pie bars, pumpkin coee cake, pumpkin dump cake, pumpkin donuts andpull-apart pumpkin bread. All of them are a mouthful, literally and metaphorically!

    So lets go on a pumpkin-avored adventure, and see what you can come up with or nd across the internet that will satisfy yourpumpkin tastebuds. Enjoy!

    Directions:1. Mix together eggs, oil, sugar, vanilla andpumpkin.2. Fold in dry ingredients and pour into a large

    jelly roll pan.3. Sprinkle top o batter with chocolate chips.4. Bake at 350 or 30 to 40 minutes until atoothpick inserted in the center comes outclean. Do not over bake.

    All In. That is the mantra for the Nor man North football te am this year. Usually a coach ora team nds a catchphrase or word that they will rally around for the season, but this team,sta and fan base lives it and breathes it!

    You could see this come into vision on the night of the Crosstown Clash, when Jordan Evans,a linebacker, was back to return kicks and made the play of the game returning a kick 71yards after Norman High had taken what many thought was the go ahead touchdown. ThenChanning Meyer, who shares time at quarterback with Peyton Gavras, comes in and scoresthe game-winning touchdown.

    Jordan Evans, a young man who started the year in the Oklahoman Super 30, has beenasked to do a little of everything: return kicks, wildcat quarterback, line up at wide receiverand catch passes. He has done all that with no questions and has helped this team to a 5-1record and 3-0 record in district 6A-3.

    Hold on Evans is not the only one doing multiple duty, just look at the newly unveiledU-Haul package, where defensive lineman Justin Martin and linebacker Beau Proctor lineup to lead block for fellow linebacker Jaxon Uhles. This heavy load resulted in a touchdown

    in an important part of the Yukon game, and in that game Proctor even caught a swingpass and Evans caught a two-point conversion, returned a kick for a 95-yard touchdownand scored his 4th rushing touchdown of the year out of what we have named the WildWolf formation.

    This is a fun team to watch and they are improving ever y week. Up next for the Timberwolvesis a huge matchup against the Edmond North Huskies who could be ranked number one inthe state and then a matchup with a quickly improving Putnam City North team led by atalented Tae Moore. Playos look certain for the Timberwolves, the only question will bewho will they play and will they host or travel? If they keep getting performanc es like theyhave so far it could be a good run for this team that is ALL IN.

    Football tends to follow trends like fashion does; that is why I credit Norman High Head CoachGreg Nation for not following the trend of the four-wide air raid oense you are seeing mosthigh schools emulate right now. The Tigers line up and pound you with a great combination

    of speed and power.

    Norman is familiar with great running teams, from the day of the Sooners and the Wishbone these Tigers led by their three-year starter at quarterback Zach Long and a maulingoensive line, Norman High is chewing up the eld on a regular basis in 6A football.

    In their most recent game against the Choctaw Yellowjackets the Tigers rolled up 275 yardson the ground, but have had a game of almost 500 yards rushing against Mustang. Long hasshown how smart he is at running the option game and with the help of Aerion Hines andImond Robinson the combination of speed and power between these three make it a joy towatch them work the option to almost perfection.

    The oensive line has done a superb job as leaders Zac Uhles and Patrick Murray (to namea few) are opening up holes big enough to even make a rst down within four carries. This

    group up front is really doing a great job and making the choices easy for Long. There are timeseither Long, Hines or Robinson are not touched until they get in to the secondary. Speaking ofbeing in the secondary, the wide receivers led by Jakcob Dean are making great blocks down

    eld as well.

    Now I cant talk about old-school football and not mention the Tiger defense: this group ismaking stands and not giving up many points. Coach Nation wanted the defense to startmaking more turnovers, and in the game against Choctaw they responded with Michael Pipersinterception returned for a touchdown, and forced four fumbles.

    The defense and oense will have to continue to perform at a high level, as they are sitting at5-1 and 3-0 in District 6A-4 with the meat of the schedule coming up. The next game for theTigers is a matchup with Southmoore, a team that had their way with the Tigers last year, andthe SaberCats are coming o an upset of the then number-one ranked Lawton Wolverines. Stilllooming are those Wolverines and the Edmond Santa Fe Wolves. Playos are looking good forthe Tigers and I think in this dicult district winning it is not out of the question. If the Tigerskeep playing good old-school football, look for the Tigers deep i nto November.

    Thinking of remodeling? Wondering what to remodel rst? What will add the most value to your home? The answer may surprise you! The rst question you need to ask yourself is why are youremodeling? If it is for you own personal enjoyment, focus on the items that will bring you the most pleasure. If you are not intending to sell your home soon, but would like to make your kitchenmore functional, focus on that area.

    However, if there is a possibility that you may want to sell in the f uture, you will want to think about what will result in the most return on the money that you spend remodeling. You always hear toremodel kitchens and baths. While that is a selling point, you need to think like a buyer. Basic maintenance items will impress buyers the most. Roofs, windows, hot water tanks and air conditionerstend to be big ticket items that concern buyers the most. They will shy away from homes that might cost them big bucks soon after they purchase. Replacing those items may help in getting yourhome sold quicker and on average yie lds you about an 80% return on investment.

    Still wanting to remodel? Kitchen and bath remodels continue to be the two best investments you can make in your home. Deciding how much to spend on the remodel will largely depend onthe value of your house, the value of homes in your neighborhood and the housing market. Be careful not to over-improve for the neighborhood. Talk with a local realtor about the current marketvalue of your neighborhood and stay within a reasonable budget. Youll only be disappointed if you need to sell your home at $150,000 because of remodeling expenses when the neighborhoodaverage sale price is $100,000.

    Pedal OnThe biking trend in Norman is on the rise.

    With high gas prices and a limited budget, its no wonder that many OU studentsrely solely on bicycling instead of driving. While saving money is just one benetof bicycling, more exercise, faster mobility and zero emissions make it all the moreenticing. Of course, there are plenty of things to consider before bicycling in Norman.Safety, bike routes and appropriate gear are just a few of the things that new cyclistsshould look into.

    On the whole, Norman has a walkability score of 35/100, according to walkscore.com, a website that uses an algorithm to score nearby amenities. A score of 35 placesNorman in the Car-Dependent category with just a few amenities within walkingdistance. The good news for Normans walkability score is that people with the 73069zip code have a score of 57, which walkscore.com considers Somewhat Walkable.Add a bike into the mix, and youll be able to get where you need to faster.

    In April 2011, the City of Norman was recognized by the League of AmericanBicyclists as a Bicycle Friendly Community for welcoming cyclists by providing safeaccommodation for cycling and encouraging people to bike for transportation andrecreation, according to LABs website.

    According to the City of Normans Transportation Engineer Angelo Lombardo, Normanapplied to become a Bicycle Friendly Community several years ago and was awardedan honorable mention before actually winning the bronze-level award. The mention

    also came with several suggestions on how the city could improve, including theaddition of bike lanes.

    At that time the city had residential streets with signage, but no designated lanewith a yellow line, Lombardo said. ... since then weve added close to six miles ofbike lanes.

    Streets that have or that will soon have designated bike lanes in Norman includeMcGee Drive, Shiloh Drive, Vicksburg Avenue, Beaumont Drive, Brandywine Lane andOakhurst Avenue, as well as sections of Brooks Street and Boyd Street. Additionally,Normans already extensive bike routes throughout the city continue to grow. Amixture of advanced paths, basic routes and paths are already available from IndianHills Road to just south of Highway 9 and from 48th Avenue NW to 36th AvenueSE. The citys future bike plans consist of making all I-35 bridge crossings bike andpedestrian-friendly and adding a separate (advanced) path along the north side of

    Highway 9 out to Lake Thunderbird. Normans Bike Route Map is available on the cityswebsite at http://www.ci.norman.ok.us/parks/bike-program.

    Another thing that makes Norman more enticing for cyclists is the recent passage ofa $42 million bond to improve city streets. On August 28, 2012, 62 percent of votersapproved the bond, and construction will begin next year to widen several streets,provide storm water improvements and make roads safer for bicyclists. Some of theupcoming changes will include improving or adding sidewalks on Cedar Lane, 24thAvenue SE, W Main Street and W Lindsey Street.

    For three years, Tobin Vigil, owner of Buchanan Bikes on Campus Corner, was partof the City of Norman Bicycle Advisory Committee, which was created to reviewthe Bicycle Transportation Development Plan and produce recommendations toencourage and support biking.     FeaturePortland and state ofCalifornia, he said thathe feels safer riding inNorman despite thefact that the otherplaces have moreinfrastructure.

    I think its becausehere its laid out like agrid and its really easyto navigate. You donthave to get on a bigarterial street, normallyyou can go throughneighborhoods, Vigilsaid. I think its real bikefriendly.

    In addition to the citysbike paths, several bikepaths are availablean the University of

    Oklahoma, thoughstudents should beaware of the rules forkeeping and ridinga bicycle on campus.

    The rst thing anyone with a bike at OU should do is register it at the OU PoliceDepartment Headquarters. In case the bike is ever stolen and recovered, police willbe able to trace it back to its rightful owner.

    [M]ore than 75% of owners who reported their bicycles stolen to OUPD did notknow the serial number stamped into the frame of their bicycle, according to theOUPD website. Registering a bicycle is free, and only the serial number is needed.If a bicycle does not have a serial number, one will be assigned and logged duringregistration.

    If you already have a bike, great. If not, then there are plenty of local options when itcomes to bicycle shops. Als Bicycles, Buchanan Bikes, Sun and Ski Sports, 405 Bicyclesand Bike One, all located in Norman, oer bicycles, parts and accessories includingthe ever-important bike lock and helmet.

    Having worked at Buchanan Bikes since 1993 and becoming the stores owner in2002, Vigil said the best place to start is with a bike store you can trust.

    A professional is going to be able to guide you in the right direction, for sure. Findthe right shop, a place that you really feel like you t in and youre going to get good,solid advice, Vigil said. At a bike shop you can tell somebody your goals. Is your goalto commute? Well, were going to steer you in one direction for that. Is your goal tocommute and do tness riding? Theres a bike for that.

    A single speed cruiser at Buchanan Bikes runs about $250, and custom road racing

    bikes can run up to $15,000. One large part of any bike, whether its brand new or oneyouve had for years, is t. Once youve identied your bicycling goals, a proper-ttingbike will greatly help you reduce injuries, increase your comfort and allow you to ridefaster and longer.

    Everyone can benet from a proper bike tting. Everyone from just a commuter orsomeone whos just wanting to go to the grocery store to the elite level racer canbenet, Vigil said.

    Once youve got the bike, accessories and t, hit the road and check out the local bikeroutes to take in some new scenery. The city is split between at roads in the westand rolling hills in the east, so there is always something new to see. If you have amountain bike or hybrid bike, which can be used in nearly any situation, check outthe extensive bike trail system at Lake Thunderbird State Park. The 18.5 mile Clear

    Bay Recreation Area Trail System oers a variety of lengths and diculty levels forbeginning and advanced bicyclists. The trail entrance is located o Highway 9 on CleBay Avenue.

    If staying out of the trails and in the city is your goal, there are several options.Oklahoma Cycling, the ocial collegiate cycling team for OU, meets four days a weeat the Seed Sower statue on the South Oval, and each ride is open to members ofthe public. The Bicycle League of Norman also holds bicycle rides on Tuesday andThursday.

    Nothing beats a little friendly competition. Throw out the lone wolfmentality and join the pack with some of these fun rides.

    Eating on the Wild Side

    Wild Gae Recipe: Bison KabobsServes 4

    Ingredients:1 lb bison or elk sirloin cut into 1-inch cubes1 small onion, cut into 1-inch pieces2 green or red bell peppers, cut into 1-inch pieces1 zucchini, sliced

    marinade:1 1/2 tbsp. olive oil1/3 cup red wine

    2 tbsp. lemon juiceSalt and pepper1 garlic clove, crushed and diced1 tbsp. Worcestershire sauce

    Directions:1. Combine marinade ingredients; mix well. Add meat cubes, cover marinate in refrigerator for 3-4 hours or overnight.2. Alternate marinated meat with vegetables on skewers. Grill or broil over medium heat, turning often, until meat is cooked to medium-done (160degrees F).

Accordingto the USDA Nutrient Database, bison and elk are lower incalories, cholesterol and fat compared to beef. For example,beef contains 73% more fat, 14% more calories and about 1%more cholesterol than elk meat. Bison and elk are both high inprotein, iron and vitamin B12.

    Bison meat also has an excellent ratio of polyunsaturated:saturated fat and high levels of conjugated linoleic acid(CLA), which has been shown to increase metabolism and decrease body fat. Researchers from the University ofWyoming (Laramie) reported that range-fed bison contain up to 20% of fatty acids in the form of polyunsaturated fatcompared to 6% for feed-lot-fed c attle. Bison also provided 28% more CLA than feedlot beef. Moreover, wild game is

    grass-fed and has no growth-inducing antibiotics, hormones or steroids.

    Bison and elk dont taste gamey or wild either. In fact, the taste is similar to beef, but with a slightly sweeter, richeravor. To incorporate new lean protein source into your diet, simply substitute wild game in your traditional beefrecipes such as burgers, chili, spaghetti, steak, stew and more.
