When Jim Gilkerson, 56, returned to farm with his dad after college, it was his dream to transform the family’s

diversifi ed farm and small 60-head dairy into a specialized confi nement dairy operation.

His dad, David, turned the reins over and let him pursue his dream.

A home brewer for years, Jeff Drumm turned his hobby into a second career when he and his wife moved from San Diego to Spearfi sh fi ve years

ago.

“I started out as a home brewer using kits, then as my in-terest grew I started designing my own recipes. When we moved to South Dakota I thought this was a good time to try brewing commercially,” says Drumm, the founder and co-owner of Crow Peak Brewing Co. in Spearfi sh.

Armed with a degree in biology, a battery of recipes and a love for fl avorful beer, Drumm set out to build a business by providing consumers with a local choice when they visit the beverage cooler.

“Creating beer with fl avor is why I got into brewing in the fi rst place. My dad was in the military, so I grew up

in Europe and developed a taste for good beer,” Drumm says.

Drumm spends a lot of his time educating his customers on the diff erent styles and fl avors of beer available.

“When I fi rst opened, the Spearfi sh community was very supportive of us, but I had a lot of people coming in and asking me if they could try beer that was similar to Budweiser,” Drumm says. “Demand for microbrews is growing in South Dakota and our clientele increases every year.”

Drumm’s recipes made loyal customers of Josh Fritz and his wife, Tanya. Living on a ranch in Wall, S.D., the couple didn’t have access to microbrews, so they made a habit of visiting the brewery every time they were in Spearfi sh.

Planting in 60” RowsSouth Dakota Grower Bill Huber’s Answer to Area’s Lack of Moisture

In south central South Dakota, growers often search for ways to deal with dry soils and find the best crops to cope with the conditions.

Todd County producer Bill Huber says that with the lack of moisture in his area, he was looking for a miracle.

He turned to planting his sunflower and corn in 60-inch rows. While some might consider this on the “crazy” side, when Huber explains the benefits, it becomes apparent the ultra-wide rows may just be the miracle he was looking for.

The Idea’s GenesIs

A few years ago, Huber had a chance to meet with some agronomists from South Africa about planting in wide rows. “At first it didn’t make sense to me;

but for them it’s a matter of survival there in the arid regions,” Bill explains.

The primary benefit of the wide rows is water management. “First of all, we’re farming here in the desert,” quips Huber who farms near the town of Parmalee, S.D. “Our first concern is to conserve moisture. And what better way [to do that] than to have fewer plants competing for that precious moisture?”

This same concept of optimizing available moisture has been researched in skip-row planting, primarily for corn but also in sunflower. “Moisture utilization lies at the heart of how skip rows can benefit sun-flower and other crops under dry conditions,” points out Joel Schneekloth, Akron-based regional water

and expand his garden enterprise.

Like his father before him, Jim supported Trever’s vision for the farm.

“We’ve come full circle. When I started farming the thing to do was to become more specialized, so I wanted to focus on the dairy and cut back on other things. Then my son comes along and now we’re back to being a small diversified farm,” says the Brookings, S.D., farmer.

Jim adds that although he was skeptical of some of the changes Trever suggested – reducing his herd to 60, converting cropland to pasture, and implementing rotational grazing and spring calving practices – his son’s suggestions and the subsequent changes allow him to spend more time as a dairyman. And, spend-

ing more hands-on time with his cows, and less time managing manure and equipment is what he enjoys most about farming.

“I’ve always liked working with cows more than machinery,” Jim says. “With the grazing system I don’t spend as much time chopping corn and I get to spend more time with the cows, milking and checking calves – dairying – and that’s what I enjoy.”

Enjoying what they do is a running theme on the Gilkerson farm. Each family member, Jim, Trever and Jim’s wife, Kysa, manages their own, on-farm business that they are passionate about. Although each business is independent of the others, the family shares labor and resources. By operating their farm this way, the farm, which is small by today’s

“I spent some time in Fort Collins before moving to South Dakota, so I was around a lot of microbreweries and good beer before moving to Wall,” says Fritz who refers to the town as a “beer desert.”

With each visit to Crow Peak, their interest in the brew-ing process and microbrew business grew. In 2009, after making the decision to sell their ranch, the couple talked with Drumm about joining his business.

When Fritz joined the business, the men expanded Crow Peak from a 5-barrell brewing system which produced 150 gallons of beer at one time, to a 30-barrel system which allows Drumm to brew 900 gallons at one time.

Drumm continues to serve as brew master, developing recipes for more than 35 flavors of beer. Fritz works in the distribution end of the business, managing logistics, packaging, canning and marketing of Crow Peak micro-brews. Crow Peak Brewing Co. employs four full-time employees and four part-time employees.

Named for a prominent Spearfish landmark, Crow Peak microbrews are distributed throughout all of South Dakota and portions of North Dakota, Wyoming and Nebraska.

The microbrewery is one of only three active breweries in the state, which make up an industry that is slowly growing says Cheri Rath, executive director for the Value Added Agriculture Development Center.

“We’re seeing the beer industry mirror what happened in the state’s wine industry,” says Rath, who helps producers find ways to add value to traditional commodities or dis-cover new markets to enter. “Breweries make up a newer phase of agriculture that involves smaller producers and people who are developing side businesses.”

Rath points to Crow Peak and hops grower and processor Steve Polley as an example.

Marketing Expert Weighs in on Latest USDA Reports and What they mean to South Dakota Producers

The USDA released three reports Jan. 12; the Crop Production Report, Grain

Stocks Report and the World Ag Supply and Demand Report from the Office of the Chief Economist. Matthew Dier-sen, SDSU extension risk and busi-ness management specialist, shares his thoughts on how he feels these reports will impact South Dakota farmers.

Question: How does this data compare to 2011? Answer: For the most part we have higher prices. That’s the biggest differ-ence. When we look at prices received for what has been marketed, and yet

to be marketed, the prices received are higher in corn and wheat and holding steady in soybeans.

Q: Overall what do these reports say for corn markets? And, how does this impact South Dakota producers?Answer: Several things impact these higher prices. First off, at the national level we’ve haven’t replenished corn stocks. 2011 was a good production year for corn, but it didn’t eliminate the tight ending stocks situation in corn, and this is keeping corn prices high.

The national numbers found in these reports drove the markets down, leaving South Dakota producers waiting for a

rally in order to receive the same prices as were available before the reports’ re-lease. There is a small increase in stocks of corn because of what is being held on farms. This year, farmers have more corn physically in the bin than a year ago. This is slightly negative news that puts downward pressure on the price. This impacted the local bids as well.

Q: Overall what do these reports say for soybean markets? And, how does this impact South Dakota producers?Answer: Soybean markets remain steady. Soybean’s price didn’t go up in 2011 relative to corn and wheat. By that measure, soybean prices were down in

relative value and relative profitability.

Soybeans face more global competition than corn and wheat, with South Amer-ican soybeans coming into the world market and taking pressure off the price and keeping a lid on U.S. prices.

Although South Dakota farmers have more soybeans in the bin this year compared to a year ago, 2011 pro-duction levels were down from last month. So it’s a wash. The fact that fewer bushels were produced this year, I think, will help provide a slight local market advantage. So, the relative price of soybeans should increase in South Dakota even though the national price

fl uctuated lower last week. I think there are local selling opportunities for South Dakota producers because of tighter regional supplies.

Q: Overall what do these

reports say for wheat markets? And, how does this impact South Dakota producers?Answer: High wheat prices refl ect what had been a tight supply situation a

year ago and has carried over into the prices we saw earlier this year. However, globally wheat stocks are strong, which is keeping the lid on U.S. prices.

Th e reports did not show

any new production estimates for 2011 spring wheat. Th e new informa-tion was on winter wheat seedings. Nationally, there is an increase of winter wheat seedings, especially

in Southern Plains states of Oklahoma and Texas. Winter wheat seedings are up, which generally means lower prices. In South Dakota seedings are down from last year, back

to 2010 levels. On-farm wheat stocks in South Dakota are also down.

Tight existing stocks and expectations of lower wheat production this coming year should mean higher prices, or better relative prices for winter wheat. Th e rub is that nationally, the price level for winter wheat is lower than expected because of expanded acres.

In South Dakota the basis has been fairly strong and relative prices have been good. I expect this trend to hold, or even get better.

Overall, these reports brought some good news and bad news for wheat markets. In the end, it looks like a wash in terms of cash prices. Expect local prices not to follow the national price down on winter wheat. It should hold steady.

standards, is able to sup-port three families.

“It’s really fun having a business where the whole family works together,” Jim says.

Like many kids who grow up on dairy farms, one of Trever’s first chores was caring for baby calves. He always thought there had to be a better way of man-aging the calves than fight-ing to keep them healthy in the dead of winter.

He was introduced to the idea of seasonal calving and rotational grazing while pursuing his degree in Plant Science at Dordt College. The concept made sense to him. In fact, it made so much sense, that he told Jim that managing the dairy this way would be the determining fac-tor of whether he would stay involved in the dairy operation.

“It puts the cows in a more

natural environment and now, they are responsible for their calves’ health,” Trever, 31, says.

“It also lowers feed costs, results in healthier cows and less labor,” chimes in Jim, who says it didn’t take too much to convince him that rotational grazing and seasonal calving was the best way for him to operate his dairy. “I have nothing negative to say about large confinement dairy opera-tions, but this is the way I want to dairy.”

Converting the 200-head confinement operation to one that utilized rota-tional grazing and seasonal, spring calving took about three years. With Trever’s help, Jim converted 140 acres of crop ground to pastureland and divided it into 41 paddocks using polywire electric fence.

Six months of the year his cows are on grass, receiv-ing a grain supplement each day. Jim rotates his cows through two of the 41, 3-acre paddocks twice each day. Each paddock is grazed once every 21 days throughout the growing season.

Transitioning to rota-tional grazing manage-

ment versus confinement did reduce Jim’s per-cow milk production by about 30 percent. However, feed costs dropped by 50 percent.

“I still come out ahead,” says Jim, adding that when they switched from year-round, to seasonal, spring calving, they are better able to take advantage of peak forage production.

Along with decreasing his feed expenses, Jim says as they predicted cow and calf health improved.

“The cows are more re-laxed, we have fewer lame cows, and because calves are on the cows for the first eight weeks, we experience

almost zero death loss,” Jim says.

It all works together

Trever helps Jim on the dairy in exchange for manure; a byproduct Gilkerson Gardens can’t do without.

“Everything on the farm is intermingled – even though we operate our businesses independently, we work together, sharing equipment and the manure is great for the garden,” Trever says.

He discovered his green thumb at a young age. He was only 8 when he took over managing his family’s garden.

“He had a small 4-H gar-den plot that he was tend-ing, and half way through the summer he kicked me out of the garden and said, “Mom, I can do this better than you.” He was right,’” Kysa says, retelling the story of how Gilkerson Gardens began.

Under Trever’s supervision, the family garden plot was soon producing bumper crops of vegetables.

“It was my goal to enter a vegetable in every division 4-H allowed,” Trever says

By the time he was 15,

Trever Gilkerson, 31, is a fourth-generation farmer who discovered his green thumb when he was 8 and has built a commercial gardening business, Gilkerson Gardens, which he operates on his family’s Brookings farm.

Trever added a small greenhouse to his garden enterprise. His senior year he began selling produce at the Brookings Farmers Market.

“That was when I realized that I might

actually be able to turn my garden into a business – that really excited me,” says Trever, who operates Gilkerson Gardens with his wife, Susan and their four young daughters.

Today the commercial garden covers 2 acres of land and fills three greenhouses. Within the controlled, greenhouse envi-

ronment Trever raises about 1,000 tomato plants. He discovered the early-season to-mato niche. And, thanks to the fact that his greenhouse tomatoes taste as good as those grown outdoors, Trever’s customers have come to rely on him for garden fresh tomatoes in early June.

“By growing them in the greenhouse I’m able to harvest tomatoes earlier in the sea-son – ahead of garden tomatoes,” he says.

Inside his greenhouse he also raises cucumbers, zucchini and watermelon. Outdoors he grows pumpkins, winter squash, gladiolas, musk melons, asparagus and late season tomatoes.

From May to October he and Susan mar-ket their produce at the Watertown, Sioux Falls and Brookings farmers markets.

To supplement the garden income, he also sells raw milk to 40 customers each week. He buys the milk from Jim at the market rate and is able to make an ad-ditional $3.50 a gallon by selling the milk directly to his customers.

In South Dakota, Grade A, State inspect-ed dairies are able to sell raw milk directly to consumers.

“We haven’t had any issues. To start with, we run a clean operation. The bottles are sanitized and the milk is refrigerated immediately,” says Trever, whose business has grown by word of mouth.

Like his dad, Trever found his niche on the family farm.

“I’m doing what I love to do. I look forward to each day and working with my family,” he says.

Trever and his wife, Susan, have four daughters under the age of 4; 4-year-old Melody; identical 2-year-old twins, Harmony and Lydian; and 18-month-old Ancora. When the twins were born, Kysa decided she wanted to spend more time with her granddaughters on the farm. She quit her town job and opened a tack store.

one had attempted to grow commercially in the state.

“I like a good challenge,” says Polley, who has explored all aspects of the hops industry – from growing and harvesting to processing and marketing.

“We were doing something no one else had done in the state and had a lot of questions to answer. First, we needed to know if hops would grow in South Dakota,” he says.

He planted his first hop yard utilizing a $2,200 grant he received from the South Dakota Department of Agriculture. Pol-ley soon discovered that not only does the perennial, vine crop grow in South Dakota, hops thrive here.

“Once they get established they become very prolific – growing 20 to 25 feet each year. They are very hardy plants and tough to kill,” he says.

He also discovered they are a labor in-tensive crop which require irrigation and need to be hand-tied to their trellises each year. About 1,000 plants can be planted on an acre of land. Each plant produces

about 2 pounds of cones which resemble spruce cones, only much lighter.

Because Polley’s 700-plant hops opera-tion is much smaller than the commercial farms in Idaho, Oregon and Washington, which can range in size from 300 to sev-eral thousand acres, he needed to develop small-scale harvesting equipment.

Again utilizing grant dollars, Polley spent two years working with engineering stu-dents at the School of Mines and Tech-nology to design a small-scale harvester. Hops vines are cut in the field and then transported to the stationary harvester that strips the vines of leaves and the hops cones.

Once his hops were harvested, he realized that the traditional way to process hops would not work for him. Large kilns are used to dry the hops commercially. They are then pelletized before being shipped to breweries. So, while he waited for a better preservation option, he stuck his freshly harvested hops in the freezer.

“When I pulled them out of the freezer, they still looked good. I thought, Wait a minute, we freeze other food, why not hops?”

Rapid City, SD—A total of $3,000 in cash and prizes will be awarded to champi-ons of the Boehringer Ingelhiem Commercial Pen Show and Sale during the 2012 Black Hills Stock Show and Rodeo.

The Commercial Pen Show has been a strong tradition at the Black Hills Stock Show, kicking off the week’s cattle sales with a commercial cattleman’s day on Sun-day, Jan. 29th. The show will begin at 10 am at the James Kjerstad Event Center with a commercial heifer and bred heifer sale to follow. A cattleman’s luncheon will be served following the sales.

Pens will consist of five heifers, and will be separated into light, medium and heavy pens. A panel of three judges will evaluate the pens of cattle with the prize money awarded to top participants.

Ranch Rodeo Entries Set New RecordBlack Hills Stock Show Awards 2nd annual Cattleman’s Family

Legacy ScholarshipThe second annual Cattleman’s Family Legacy Scholarship was recently award to Raina Perli at the Western Junior Livestock Show.

Perli is is the daughter of Jacque and Keith Perli of Rapid City. She currently owns 10 cow/calf pairs and along with her father’s registered Angus operation. In an essay Perli stated, “I’m working on expanding my herd to my expectation.” As a seventh grader she is involved in 4-H and exhibits cattle in many local fairs with hopes to one day showcase her genetics at the Black Hills Stock Show.

The Cattleman’s Family Legacy program is a scholarship program designed to pass on a donation heifer from a Black Hills Stock Show cattleman’s legacy to the next generation. Eligible participants must be a Western Junior Livestock Show exhibi-tor ages 8-17 years of age. The scholarship is sponsored by Farm Credit Service Agency, Black Hills Stock Show and Western Juniors Livestock Show.

Perli will take possession of a gelbvieh heifer donated by CJ&L Livestock at the conclusion of the 2012 Black Hills Stock Show. She will be responsible to provide progress reports, select genetics, and show the donation heifer at the 2012 Western Junior Livestock Show as a bred heifer.

CJ&L Livestock is a registered Gelbvieh and Balancer operation started by sisters, Lori and Julie Maude of Hermosa, SD. The registered seedstock operation is an extension of the family’s commercial cow-calf operation. CJ&L Livestock focuses on producing functional, maternal cattle that will add growth and performance for cow-calf producers. As third generation cattle producers, Lori and Julie understand the value of a family legacy.

Kadee Hande, Black Hills Stock Show Livestock Coordinator, said, “This scholar-ship teaches the value of livestock production to our youth. We want to ensure the success of our young ranchers for future generation and this scholarship teaches them responsibility, business sense and hard work.”

Black Hills Stock Show News

The Central States Fair has announced that the Pioneer Bank & Trust Profes-sional Saddle Bronc Match will return to this year’s show on Wednesday, February 1, 2012 starting with a cowboy meet and greet at 5 pm.

Thirty of the top saddle bronc riders in the nation will compete for $10,000 in added prize money. Entries include the likes of Chad Ferley, Jesse Bail, Chuck Schmidt, Toas Muncy, Wade Sundell, Tyler Cor-rington, and Ty Atchison, all just return-ing from the 2011 WNFR. The lineup of cowboys includes 14 NFR qualifiers, four World Champions with five titles, two Canadian National Champions, and two Indian National Finals Champions.

This event will feature the rankest broncs

from four PRCA stock contractors includ-ing Burch Rodeo, Korkow Rodeos, J Bar J Rodeo and Powder River Rodeo. Scoring in a bronc match is based on 50 points for the cowboy and 50 points for the bronc. The contractors will be compet-ing for additional prize money if their ten broncs have the highest average score for the event. This format will ensure the best quality bucking stock for the event. “When you match up the top bronc riders with this pen of horses, you are going to see some fireworks!” according to Wade Vos, Rodeo Committee Chair.

The Black Hills Stock Show & Rodeo is pleased to announce that the Ranch Rodeo has set a new record for team entries with sixty teams entering the 2012 contest. The 240 team members represent nine states. This surpasses the 2011 event that drew fifty-three teams from eight states. “The popularity of this event continues to push the seating capacity of the Rushmore Plaza Civic Center to its limits”, said event chair Kevin Schmidt. “There is not a bad seat in the house and this year they will be hang-ing from the rafters!” he said.

The sixty team format requires an elimina-tion round starting at 9 am on Tuesday,

January 31. The sixty teams will compete for event money during the day and the chance to be one of the top twelve teams to advance to the finals at 7:30 pm. Tick-ets are available for either performance.

The total prize package will be over $20,000 with cash and prizes. The Crew Crop Insurance team from Philip won the event in 2011 and will return to defend their title. “Bragging rights is just about as important as any prize money on this deal,” said Schmidt. You can bet you will see the best wranglers and cowboys at this year’s event.

BROOKINGS, S.D. - SDSU Extension and South Dakota Ag in the Classroom will host a "Kids Take Stock in Science and Agriculture" program at the Black Hills Stock Show. This program received the National Teamwork Award from the National Asso-ciation of Extension 4-H Agents, and it promises to come back even better this year.

The program is two-fold; the first part is primarily scheduled for schools. Interested classes can attend the program from 9 a.m. to 2 p.m. MST Jan. 31-Feb. 1. The second part is geared toward walk-through traffic, and parents can bring their kids through the event from 2-5 p.m. both days. Kids Take 'Stock' takes place in the Rodeo Zone at the Rapid City Civic Center.

The event is done in conjunction with SDSU Exten-

sion and South Dakota Ag in the Classroom. Both or-ganizations bring hands-on learning opportunities to youth who may not be familiar with South Dakota's largest industry - agriculture.

"This program is designed to teach youth about both science and agriculture - two areas that are everywhere in the state, but sometimes are far too intangible to youth," said Jessica Eikmeier, a co-coordinator of the event and an Extension Community Development Field Specialist.

She adds. "The program is geared towards elementary-aged kids from schools as well as home-schoolers, and we hope to bring these hands-on activities to stu-dents who might not get the experiences otherwise," Eikmeier said. "We take what they have learned in the

classroom and build on it and put a new twist on it so that they can see it in a different light."

Attendees will have the opportunity to see a balance of agricultural and science-based stations. Each station will take 8-10 minutes and will range in topics from egg experiments to water quality to branding. Teach-ers will receive a packet of lesson plans to take back to their classrooms to further build on what the youth see in the short stations.

resource specialist with Colorado State University. “As the plant roots down, it will also root out away. If we have a larger space for the plant to root away from the row, we can utilize moisture at a later date when it’s critical — like during the reproductive stage.

“Whereas if you have planted in standard 30-inch rows, once those rows meet, that’s the end of the moisture between the rows,” Schneekloth continues. “So all the plant can do then is go down; and if there’s no moisture left going down, it’s ‘out of gas.’ ”

All of Huber’s 12,000 acres are

in a no-till system — and have been for many years. This year he had 2,000 sunflower acres (all confection). He usually plants into corn stubble or occasionally after wheat, typically applying 60 to 80 lbs of ammonium nitrate fertilizer to start. He also adds 50 lbs of ammonium sulfate, which he says seems to help with what some might call the “sun-flower hangover” to replenish the soil health.

Huber’s planter, set for 30-inch rows, required a little ingenu-ity to adapt to the 60-inch row width. At first they tried to simply shut off alternating row units; but that wasn’t ideal, so they ended up disassembling

the planter. “Our corn planter was getting worn out; and we’re the frugal type, so we rebuilt it,” Huber explains. “We reconfig-ured it and took half the units off and centered the planter on the 60-inch spacing — 12 rows, 60 feet.”

The wide row setup also has advantages from a mechanical standpoint, Huber says. “It’s a very simple planter, really, with 12 rows. Now we have half the row units and half the parts to mess with fixing and maintain-ing.”

Most of this year’s crop was planted in mid-June. Another half section was planted on July 11. “They actually made it,” he says happily. “I knew I was

pushing it, but the planter was sitting there full of seed, so I gave it a shot.”

In his first year in the 60-inch rows, Huber was shooting for about 14,000 seeds per acre and ended up with a population of 12,500-13,000. This year he dropped it to 10,000 per acre with a projected in-row plant

spacing of eight inches. Being in the wide rows, the plants have plenty of room to grow; and it’s evident by the robust plants that sunflower uses every inch it’s given to flourish.

huge, healthy stalks. The plants were as healthy as Huber has ever seen. “Plant health was excel-lent,” he says. “The seed fill and seed size looked good.” Since beginning to plant sunflower in 60-inch rows, his yields have averaged between 1,200 to 1,500 lbs/ac. Huber was pleased, once again, with the 2011 crop ranging from 1,800 to 2,000 lbs/ac.

A healthy canopy also helps with weed control. “It’s kind of amazing — with the plants denser in the row, they get more leaves,” Huber explains. “We had complete row canopy this year.” To help with weed management before that canopy develops, Huber applies Spartan preplant or pre-emergence and then comes back with a poste-mergent grass herbicide usually tank mixed with an insecticide. They haven’t had an issue with insects in recent years, but in defense of the seed weevil, they are very adamant about regular treatment.

Crowded plants make for little air movement. And lack of air movement fosters disease. Huber credits the 60-inch row spacing with allowing more air movement between the rows. This, he says, has resulted in fewer fungi-

cide applications. Huber reports few issues with rust or other diseases in his sunflower.

Planting on 60-inch rows and at a plant population of about 10,000 would accomplish two things that would help minimize disease, according to Tom Gulya, USDA-ARS sun-flower plant pathologist. “One, the air flow through the canopy would lead to less dew formation, and thus fungal spores would be less likely to germinate and infect,” he explains. “Two, the stalk diameter would be significantly greater, and the stalks would be slower to succumb to stalk-rotting pathogens.”

Some might question whether it takes longer for such large, robust plants to dry down for harvest and pass through the combine. Huber says it’s not a prob-lem with his all-crop head-er. As an added benefit, the healthy plant is stronger and better able to sustain fall wind and rain storms. “We had a terrible wind come through here [this fall],” he notes. “I plant my ’flowers in a north-south direction so the heads hang off to the east. This helps to cut down on the heads rub-bing against neighboring plants, so there’s less shatter loss. Those huge stalks

[allow them] to survive in the strong winds we get in the fall.”

This is the fourth year Huber has also planted his corn in 60” rows, and he’s

“absolutely, hands-down convinced it’s the way to go.” It’s difficult to argue with someone who has such conviction — espe-cially when he is able to back it up with numbers.

“We’ve cut as good as 150-bushel or better corn,” Huber says. “Sure, we’ve had some around 80 bushels some years in some areas. But I’m convinced it’s the best for corn in my dry environment.”

Farming in a no-till system in a very dry area brings many challenges and often requires unconventional approaches — like this one. Bill Huber emphasizes they are doing whatever they can to be sustainable. “Sunflower may be more difficult to grow, but in the end they are worthwhile,” he remarks. “They pay you well.”

When analyzing the frozen hops in his lab, Zehfus says he first measures the levels of alpha and beta acids – im-portant to the brewing industry because the alpha acids are what give beer its bitter flavor.

“Because each variety of hops has a different level of alpha acids, it is best for the brewers to know the amount of acids in the hops before they start the brewing pro-cess,” Zehfus explains.

He then compares the frozen hops samples to dry hops samples to see if there are any differences in their alpha

acid levels. He compares both samples right after harvest and 6 months following harvest. At this point, he has not found any differences.

“I really enjoy working on this project because there is a direct, tangible, everyday connection that helps people in the community around me,” says Zehfus, who adapted his student’s curriculum to include running tests on hops. “The students really like the idea of working with hops, so I can use their interest to get them doing some good chemistry work.”

Along with chemistry analysis of his hops, Polley depends on microbrew masters and home brewers like Byron Howard, to let him know if there is a difference between brewing with his frozen hops versus dry hops. And, more importantly, is it a difference they can taste? Howard a home brewer from San Antonio, Texas, has brewed several batches of beer using Steve’s frozen hops. He says there is a difference, and he likes what he tastes.

“I think they are more potent. My personal belief is that the potency stays with the hops longer because they are frozen,” says Howard, who works at Home Brew Party, a home brewing supply store that services San Antonio’s large community of home brewing enthusiasts.

Polley says Howard is not alone in his beliefs.

“Everyone who tests these hops is saying frozen hops sim-ply make better beer. They tell me it has more aroma and more flavor. When I think about it, it does make sense. Frozen foods have better flavor than those that have been dried,” Polley says.

He is eager to cash in on this difference. Polley is cur-rently applying for a patent that will protect the process he uses to freeze his hops.

“I’m doing something no one else in the country or world is doing commercially,” Polley says. “I would like to see these frozen hops capture a piece of the hops market.”

Because freezing his hops allows him to cut out the middle man and sell directly to micro breweries and home brewers like Howard, it may not be too long before Dakota Hops LLC. does just that.

BROOKINGS, S.D. - Th e SDSU Equine Issues & Leadership Class invites the public to watch and enjoy as the students provide a workshop that looks into diff erent disciplines in the Equine Industry from western and English, to various timed events.

Learn about behind the scenes training methods and techniques implicated within diff erent events during the "Pressure to Perform" workshop held during the Black Hills Stock Show, Feb. 3, at 4:30 p.m. at the Civic Center in Room 206.

"Th is is a neat opportunity to learn across disci-plines - Western, English and timed events," said Rebecca Bott, Assistant Professor and SDSU Exten-sion Equine Specialist. "Th e students will talk about some specifi cs and some of the underlying similari-ties within the disciplines."

Th e herd consists of 1,050 Holstein-Friesians on 1,500 acres in South Somerset, with about one third of the milk going into their own Handmade Vintage on-farm Cheddar production. A horse lover and owner of four, Kysa saw a need and thought she’d fi ll it.

“I had diffi culty fi nding a place to buy what I needed for my own horses because there wasn’t a tack store in Brookings,” says Kysa, who has been riding since her grandpa put her on a horse at 1. “Jim’s fi rst comment was, “if all horse people are like you, then you should have plenty of business.’”

Named for her favorite horse, Too’Shay Tack is a full service tack supply store. Because their farm is located on the eastern edge of Brookings city limits, Kysa built her shop on the farm. She is able to run her business and help care for her granddaughters when Susan needs a break.

“I wanted to be here to watch them grow up. Th at’s one of the nice things about our family farm, everyone is able to work together,” Kysa says.
