    Cold Appetizer

    Creamy Spinach Dip.

    Ingredients

    • 1 (9-oz.) pkg. Green Giant® frozen chopped spinach

    • 1 (8-oz.) container sour cream

    • 1 cup mayonnaise

    • 1/2 teaspoon ceery sat

    • 1/2 teaspoon dried di !eed

    • 1/" teaspoon onion sat

    • 1/" cup chopped green onions

    • # ta$espoons chopped pimientos or red $e pepper% if desired

    • 1 (8-oz.) can !ater chestnuts% drained% finey chopped

    Directions

    1.   1&ook spinach as directed on package. &oo' sueeze to drain.

    WILD MUSHROOM SOUP

    Ingredients

    25g dried porcini (ceps)• 50g butter

    • 1 onion , finely chopped• 1 garlic clove , sliced

    • thyme sprigs

    • 400g mixed wild mushrooms

    • 850ml vegetble stoc!

    • 200ml tub cr"me fr#che

    • 4 slices white bred , bout 100g, cubed

    • chives nd truffle oil, to serve

    DIRECTIO!

      $ring !ettle to the boil, then pour the wter over the dried porcini %ust to cover& 'et hlf thebutter in sucepn, then gently sile the onion, grlic nd thyme for 5 mins until softened ndstrting to brown& rin the porcini, reserving the %uice, then dd to the onion with the mixed wildmushrooms& *eve to coo! for 5 mins until they go limp& +our over the stoc! nd the reserved %uices, bring to the boil, then simmer for 20 mins& tir in cr"me fr#che, then simmer for few minsmore& $lit the soup with hnd blender or li-uidiser, pss through fine sieve, then set side&

    • 1 tbsp Unsalted Butter

    Directions
