Christopher Curtin is an award-winning Chef and Master Chocolatier who spent 14 years in Europe learning the classic chocolate and pastry making craft. With family ties in the largest cacao port in the country, Chris was naturally drawn to the Philadelphia area when he returned to the U.S. 10 years ago. Lee Broderick of Éclat Chocolate recalls how, in his search for the right place to continue his work, “Chris felt that West Chester, a town that was just beginning to take off, had the right vibe.” Today, Chris employs his skill and experience in the local community at the Éclat shop in West Chester, sourcing ingredients from around the world to make what Bon Appétit magazine describes as, “the best chocolates in America.”

4 Reasons to Love Éclat Chocolate1. They work directly with farmers and local partners.“The beans in our premier products come from organic one hectare farms in Peru, where the beans are hand selected by Christopher and the farmers are paid directly by him, with no middle man between chocolatier and farmer. Other ingredients, such as the Victory beer in our beer truf� es, come from local partners.”

2. They give back to the Peruvian farming community.“Part of the proceeds from the products made from these beans goes to the Peruvian Rice Hull Stove Project, an effort to improve quality of life for Peruvian women, reuse rice hull waste and decrease rainforest deforestation.”

3. They operate locally.“All of our products are made in our West Chester shop. Our packaging is also produced locally, and we strive to use the greenest packaging possible. Making chocolate begins with the pods growing on the trees, which are harvested and then ferment-ed. The beans are then dried and roasted in house, before being broken down into the nibs. The next step is conching or re� ning to create the chocolate that goes into the bars.”

Ingredients• 2 cups soy milk• 2 tsp apple cider vinegar• 2 cups flour• 2/3 cup cocoa powder• 1 1/2 tsp baking soda• 1 tsp baking powder• 1 tsp salt• 1 1/2 cup sugar• 1 cup Earth Balance Organic Buttery Spread• 3 tsp vanilla extract• 1 (3 oz) bar dark chocolate (well crushed)

Ganache• 2 (3 oz) bars dark chocolate (crushed)• 1 Tbsp soy milk• 1 Tbsp sifted powder sugar

Directions• Preheat oven to 350°; grease or spray Bundt pan.• Combine milk and vinegar and set aside.• Combine flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.Use a mixer to cream Earth Balance Organic Buttery Spread and sugar in a large bowl until fluffy. Mix in vanilla, and then dry ingredients and wet ingredients alternately in small batches.• Pour batter into Bundt pan, and sprinkle crushed chocolate bar onto the batter, being careful to keep it from touching the sides.• Bake for 45 minutes, removing from oven when a toothpick inserted comes out clean. Allow to cool 5-10 minutes before flipping onto a plate. Drizzle cool cake with ganache, or dust with powdered sugar. Garnish with fresh berries.

DirectionsMelt chocolate in a small saucepan with milk, over medium/low heat, stirring frequently. When melted, add sugar and mix well. Pour hot ganache over cool cake, for a decadent, but not overly sweet decoration.

Omega-3s are a heart smart choice for your family. Heart health risks, including high blood pressure, stroke and high cholesterol, are the top health concern. Yet people struggle to incorporate “heart-healthy” foods into their diet. Recently a national survey revealed that while eight out of ten Americans are aware of the relationship between omega-3s and heart health, less than half currently try to include omega-3s in their diet for this bene� t.

The Annals of Medical and Health Sciences Research, reported that supplementation with the omega-3s EPA and DHA, slashed hemoglobin A1c and fasting glucose levels in diabetics. Diabetics with uncontrolled blood sugar are at increased risk of heart disease.

Be heart smart. Help yourself to a daily dose of Omega-3 fatty acids. The Omega-3s EPA and DHA lower triglycerides, decrease blood clotting, reduce risk of sudden heart attack, support healthy blood vessels, and help moderate blood pressure. Fatty � sh: mackerel, trout, herring, sardines, albacore tuna and salmon are rich sources of the important omega-3 fatty acids. Fish is featured in the Mediterranean diet, widely thought to be the healthiest diet for longevity. I recommend taking 1000 mg combined EPA and DHA and eating a � sh based diet. I take a teaspoon daily of Carlson’s taste award winning Norwegian Cod Liver Oil which tastes like lemon, never � shy! As you pull into Stoudt’s Antique Mall in Adamstown, PA, behind the German-inspired architecture is a labyrinth of over 300+ antique vendors, complete with a German restaurant and brewery. Tucked behind this is the Wonderful Good Market, where the smell of coffee and bread greets you at the door. In the rear of the market stands Ed Humpal, owner of Hobo Ed's Artisan Coffees. Ed is a familiar face. He frequents Kimberton Whole Foods to deliver his freshly roasted coffee and to eat in the Café with his family.

“It’s been a family business since the beginning. All my kids participated in some way, and still do.” In 2005, Ed and his son purchased a food truck that they took to music festivals throughout the Mid-Atlantic region—serving up coffee and espresso drinks to festival goers. To supply his truck, Ed used the former Kimberton Whole Foods distribution

center in Leola, PA as his commissary where he began his artisanal ventures. Ed’s locally roasted beans interested longtime Kimberton Café Manager, Dave Biddison, and we soon began serving and selling his organically grown coffee on our shelves. Ed eventually gave up the truck to focus on wholesale distribution to local grocers.

Ed’s relationship with Kimberton Whole Foods started long before this, when he was the Maintenance Manager at the Kimberton Waldorf School. Across the street, KWF co-founders, Terry and Pat Brett, ran the farm store at Seven Stars Farm. Ed fondly remembers when he and Terry would “wave to each other while mowing lawns on opposite sides of Seven Stars Road”.

medium-dark roast (El Amor De Madre) sold, Ed donates $1 to Grounds for Health, an organization that works to increase coverage of cervical cancer prevention services in areas with enduring ties to the coffee industry. Buying globally and responsibly is important to Ed, who sources from organic, Fair Trade producers in Sumatra, Nicaragua and Ethiopia. “Buy globally, roast locally” is Ed’s true priority and practice. Because coffee is a tropical plant, he feels “to at least roast and distribute it locally is worth doing.” When working with artisanal coffee makers, consumers should “feel guaranteed you’re working with a community of producers that are honest and transparent.”

One of the things that make an artisan’s product unique is that their product reflects their personal style and preferences. Ed explains that roasting coffee means “operating out of my natural taste and temperament.” During the week, Ed and his son roast small 20 pound batches of his artisanal coffee to prepare for deliveries, samplings and the Sunday market. Hobo Ed’s Artisan Coffees produces 5 varieties of coffee and 1 espresso: Morning Mojo, Midnight Special, Lost Coal Mine, Sumatran Decaf, El Amor de Madre, and Train Hoppin’ Espresso.* You can find Hobo Ed’s coffee at our Douglassville, Downingtown, Kimberton and Malvern stores and in our Cafés, where we serve drip coffee.

How can you support the coffee roaster in your community?

Coffee that is locally roasted in South-eastern PA is available at our Kimberton, Downingtown, Douglassville and Malvern stores. Our Ottsville location is conveniently attached to Brig O’Doon Coffee House. We have worked with Brig O’Doon Coffee House since we opened our doors in Ottsville in 2008. We carry their coffee exclusively on our shelves in Ottsville, so that you can support this local vendor. Choose from nine different coffee varieties to take home.
