Letter from the EditorJanuary – a month when we should all be thinking about being a little bit healthier after the excesses of the festive season. A month when we should be all getting out and about for that much needed fresh air; a challenge when the days are still so dark and gloomy.
Hopefully my centre page feature this month will encourage you to get out and about. Please let me know if you discover anything of interest, or something unusual, in our beautiful Buckinghamshire, so I can share it with everyone.Some people try out Veganuary in January. A month to follow a plant based diet. This means no meat products or dairy. I know a few people who follow this diet and they all have their own reasons for doing so. I also know of some people who have had to give up a plant based diet because of ill health. If you are giving it a go, please make sure you are eating a balanced diet from all the remaining food groups.Rachel’s Creative Cooking feature a vegan curry this month. It’s delicious; I know because we had it for dinner last night. I cooked the rice to accompany it in a traditional Indian way. I added a teaspoon
of cumin seeds to a tablespoon of oil and cooked over a gentle heat until the seeds popped. I then added a cupful of basmati rice and stirred it so every grain of rice was lightly coated in the oil. I then added two cupfuls of hot water, brought it to the boil and then simmered for 12 minutes, keeping the saucepan lid on. No need to stir, no need to do anything else. The rice is always perfectly cooked and every grain stays separate; no more soggy overcooked rice! MINI RACING LEGEND IS INDUCTED INTO BUCKS SPORTING HALL OF FAMELegendary rally driver Paddy Hopkirk MBE was inducted into the Bucks and Milton Keynes Sporting Hall of Fame at a glittering awards night in November 2019.Paddy, 86, who lives in Penn, is famed for stunning the world of motorsport in 1964 by winning the Monte Carlo Rally in the now classic Mini Cooper S – a victory which helped make the Mini a 1960s’ icon.The crowd of nearly 300 people at Aylesbury’s Waterside Theatre, who were guests at the 14th annual Bucks & MK Sport Awards, cheered and clapped as he became just the fourth Hall of Fame inductee. He followed Olympic legends Sir Steve Redgrave CBE and Greg Rutherford MBE, and Paralympic hero Sophie Christiansen CBE.The evening is organised to pay tribute to the people and organisations who make grass-roots sport and activity happen in the area, while also giving the special Hall of Fame tribute to the county’s elite-level athletes.Paddy, whose wife Jenny Hopkirk is a former High Sheriff of Buckinghamshire, won numerous other races in his heyday and is still hugely involved with motorsports.He is a global brand Ambassador for MINI, as well as Ambassador for the Institute of Advanced Motorists Road Smart - a leading road safety charity. Along with serving until recently as President of the British Racing Drivers' Club, Paddy is a keen supporter of the Wheelpower charity based at Stoke Mandeville Stadium.Paddy told of his delight at being inducted into the Hall of Fame alongside three sporting greats: “I am terribly honoured and I didn’t expect it. To be associated with all these great people is wonderful – it’s terrific.”Sue Imbriano, Chairman of Leap – the County Sport and Activity Partnership which co-ordinated the awards – told the nominees in her opening speech: “This is your evening and we are delighted to be able to recognise your commitment and your dedication to making sport happen on the ground and providing inspiration and opportunities for your communities to participate whatever their level, their ability or disability.”

He has also recruited a number of under 15s to complete their Young Match Officials training developing both the players and officials of tomorrow.Most importantly of all, Paul ensures that every child who comes to the club has the best experience they can and leaves with a smile on their face. LOCAL SCHOOLS scoop national sustainable travel awardSt Marys and All Saints C of E School in Beaconsfield and The Iver Village Junior School have been awarded a national acclaim for their savvy sustainable school travel plans which encourage children and young people to walk or cycle to school.
They were among 100 schools across the country that were nominated at the Modeshift STARS National School Travel Awards, and among 4 schools in Buckinghamshire that received gold accreditations this year.
The scheme, which is sponsored by the Department of Transport, recognises efforts to promote a more active and sustainable school run. Both schools were nominated for all the hard work put into their School Travel Plans and
praised for focusing on the impact on the environment and safety.
The schools’ representatives recently met at County Hall in Aylesbury to celebrate their success and were presented with their certificates and plaques.
Executive Director for Transport, Environment and Economy Neil Gibson said “It is fantastic to see such forward-thinking by children and young people in the county when it comes to transport and the environment.”“This award is well-deserved by both schools for their drive and determination in inspiring parents, peers and other children in Bucks to make small changes to their journey that could help make big changes to the environment, as well as improving pupils’ health and wellbeing and learning some important life skills too.”Across the county 56 schools now hold accreditation in the scheme which promotes active, safe and sustainable travel by families making the school journey.

Winter Birding WalkWednesday 1st January 2020 10.00-13.00 Spade Oak Nature Reserve
Wild Marlow are joining the RSPB Local Group for their traditional New Year's morning bird-watching walk around Little Marlow gravel pits and along the Thames. This is a level walk of around two miles, on footpaths that are often very muddy - Wellingtons strongly recommended.
There should be plenty of wildfowl and gulls. Most likely are wigeon, shoveler, gadwall, teal, lapwing and snipe, with a chance of goldeneye or even goosander on this man-made lake and sand spit. There is woodland with common woodland birds.
In 2019 they recorded 60 species - can we do even better this time?
Meet at 10am in the Spade Oak car park on Coldmoorholme Lane SL8 5PT. No facilities, but there is a pub just up the road.

Migraines and MeI was eleven when I got my first migraine. This is my
story about migraines and me.
Have you ever heard that you’re often ill after you finally relax from a stressful or tiring time in your life?
Unfortunately this happened not to me but my sister last month when we attended the Christmas BBC Good Food Show which we do yearly at the Birmingham NEC. About an hour into the event her eyes began going fuzzy with an aura. It was so frustrating because a blurry eye sight is not ideal anywhere, but especially not when far from home and in a busy environment at an event you’ve been looking forward to all year!
I don’t know about you but I carry tablets everywhere with me in case of a migraine or headache. I basically have a little medical kit in either my pocket, handbag or rucksack wherever I am in the world. Luckily this meant that my sister could take the maximum dose of pain killers quickly and hope that the migraine would be gone very soon.
Much to our despair (and her horror) the pain killers didn’t kick in soon enough and it was a trip to the medical centre and a sleep in a quiet environment for a few hours whilst the rest of us returned to the event; it wasn’t the same without her!
This migraine thankfully disappeared within 12 hours but that doesn’t mean the next will be the same! Please make sure for the New Year, if you suffer, you pack yourself a mini medical kit suited to your needs and take it everywhere in case a situation like this happens to you!

Let’s all do our bit …
Addressing the problem of climate change can seem like this. The issues are so many and varied, and the changes needed are so great, in such a short time, it’s easier to pretend there’s no problem. But individuals, businesses and governments making like the ostrich, is exactly what has led to the current crisis.
Climate change affects us all, and there are things we all can do to help. The key to making major changes is setting small, measurable targets. If you make one manageable change in your routine, you are more likely to stick to it. Then you will have a sense of fulfilment and confidence, thus be motivated to take on more. If everyone was “doing their bit” it would amount to huge improvements for the planet.
So what changes could you make? Why not walk or cycle to the local shops instead of driving to the supermarket? You will enjoy fresh air, moderate exercise, time to think rather than curse the traffic, and perhaps a chat with a friendly neighbour or shopkeeper, while saving money. You could choose to eat one less meat meal a week, or to only buy local, organic and unpackaged fruit and veg. Home composting helps sequester (store) carbon, rather than releasing it into the atmosphere, whereas food in landfill generates volumes of greenhouse gases. Stop buying bottled water – tap water is just as good! Save empty plastic bottles to refill at a shop like Dan’s Refill Store in Chalfont St Peter – pardon the plug – or The Refill Project at Amersham and Chesham market.
On the more active side, you could volunteer, perhaps for one afternoon a month, with a wildlife organisation such as BBOWT or the RSPB. The Woodland Trust is encouraging people to plant trees, and supplying saplings and advice to boot. Trees are priceless to the environment, providing a habitat for all manner of wildlife, as well as oxygen to the atmosphere and reduced risk of soil erosion and flooding.
Whatever we choose, it’s important we all do something. You will be helping yourself, humanity and the planet. Together we can turn our New Year’s resolutions into a revolution!

I haven’t visited this public open space for years so when I found myself having a walk there recently I was thrilled to see this beautiful graffiti. Painted by Dan Wilson and volunteers from the Chiltern Rangers (permission was sought and received) this stunning artwork brightens up what would usually be two unsightly containers in a dark corner.The message they are getting across fits in so well with my “Let’s all do our bit” blog and who knew the River Wye is an internationally rare chalk stream? The painting of the kingfisher is particularly spectacular and it’s well worth the visit to the recreation ground just to see this.

An historical review of the development of Seer Green from its beginnings as a tiny agricultural hamlet to today's thriving modern community. Aspects considered will include its relationship to Farnham Royal, of which Seer Green formed part until the middle of the 19th century, the impact of the enclosure acts, local religious practices, changes in industrial and agricultural activities, and the opportunities provided by the coming of the railway.

A stew is a mixture of food ingredients cooked in a liquid and served in the resultant gravy. It’s often a family meal that can be reheated several times and it seems to get better every time!
Stews are suitable for less tender cuts of meat as the slow cooking in moisture softens the meat making it juicy and tender, melting in the mouth. Although thickening a stew can be achieved through adding flour, a slow cooking simmering reduction works well to intensify flavours.

• For the meat lovers an option is easy Irish stew; stewing lamb cooked with onions, carrots, swede, leeks, pearl barley and potatoes in a lamb stock with a pinch of thyme, mouth-watering!
• For those looking for something different how about chicken, chorizo and butter bean stew. Chicken thighs and diced chorizo cooked with soffritto mix, garlic, smoked paprika, chopped tomatoes and butter beans in a chicken stock, and this 55 minute recipe contains 2 of your 5 a day!
Stews have been made since ancient times with the heat from below method very suitable for cooking over a fire. There is evidence of recipes dating back to the first century BC in the oldest cookbook known, "Apicius de re Coquinaria" with recipes including fish and lamb. Stew could go back even further with evidence of Amazonian tribes using large turtle shells as looking vessels.

When chatting to customers I'm often encouraging them to try the chipotle paste. My latest success has been pairing roast duck with szechuan pepper and pul biber (a turkish condiment of salted dried red pepper flakes) and don't get me started on how lovely black garlic is!

All the recipes include prep and cooking time as well as the nutritional information, so it's a great resource for new ideas if you are looking for changing up your midweek meals, or are looking to impress your dinner party guests! If you are using any root vegetables or potatoes, par boil to speed up the cooking of the curry.
In the meantime, stir all of the curry paste ingredients together in a bowl until combined. Transfer to a medium-large saucepan and cook on a medium heat, stirring continuously for about 5 minutes to soften the onion and bring out the flavours.
Pour in the chopped tomatoes, coconut cream and vegetables.
Turn the heat down to medium-low and simmer for 10-15 minutes, stirring occasionally, until the sauce has reduced and the vegetables are tender. Taste the sauce and season with salt and pepper.
Serve with rice, naan bread or chapattis.

Breakfast is supposed to be the most important meal isn’t it? There is no way we could contemplate a busy working day without eating something; we just couldn’t function properly, and we know that we wouldn’t give our best service.With this in mind, we headed to The Ivy Marlow Garden to sample their breakfast delights. We’ve eaten afternoon tea and dinner here before, but never breakfast.The restaurant wasn’t overly busy when we arrived so we were able to have a good look around. The décor takes you back to a time of opulence and beauty, with stunning prints on the walls, colourful comfy seating, huge plants and very clever lighting. It’s all very exotic and sumptuous and we loved it! Were we really in Marlow High Street? The atrium lets in that all important light (especially at this time of year) whilst the conservatory to the rear really is an inside outside space with pot plants galore; right up our street.
Choosing the vegetarian full English and the fluffy pancakes with yoghurt and berry compote, we were soon tucking into delicious fayre. Our tea was served in timeless silver teapots with tableware to match the décor of a bygone era, where elegance and sophistication was the order of the day. Yes, this really was a breakfast extravaganza, but at an affordable price.The Ivy Marlow Garden describes itself as “Relaxed yet sophisticated dining in the heart of Marlow. in Marlow. The decor at the back of the restaurant where we were seated, even in the winter, felt like a summer garden.

We immediately delved into the cocktail menu which is filled with a whole range of flavours. Whether you’re a rum drinker, a gin drinker or looking for something alcohol free, they’ve got you covered. We tasted the Tiki Thyme, Raspberry Disaronno Sour, Pink Gin Punch and the Passionfruit Colada and we can highly recommend them all! The famous hanging kebabs, which are definitely a must, offer a vegan tofurkey sausage (which was surprisingly meaty) as well as crispy halloumi with garlic butter and meat options such as five spice duck with hoisin sauce, lamb kofta with harissa jam and salt and pepper pork with sweet chilli, lime and soy. To our amazement, the pies are all available gluten free and we can confirm that the pastry was the best we have

ever tasted. Make sure you’re hungry though because every main meal we had was a generous sized portion and trust us, you won’t be leaving any of it! We are happy to share food at our table and for dessert we taste tested the vegan crumble, lemon tart, sticky toffee pudding (all available gluten free) and chocolate brownie hanging kebab. When we revisit it will be a struggle to choose what to eat again as everything was delicious and well worth squeezing into our full tummies! The Botanist in Marlow offer private cocktail masterclasses, a botanical brunch and musical bingo, as well as live music on certain evenings which creates a buzzing atmosphere.

The Chiltern Lifestyle Centre development in Amersham has been given the go ahead.
We are excited about the prospect of being part of the new Chiltern Lifestyle Centre and of designing a brand new library for Amersham.
This is a large project so the development works will take some time. This means we have temporarily relocated the library into the Chiltern District Council building on King George V Road, for the duration of the build.

Medical non-fiction has been a rapidly growing genre, with Adam Kay’s successes being some of the most notable in the past few years. However, the hidden world of medicine in prison was very much unexplored. Now, Buckinghamshire resident Doctor Amanda Brown has opened the lid on this underworld with her eye-opening book, ‘The Prison Doctor’.
Back in 2004, Doctor Amanda Brown was a hardworking GP at a surgery she had set up herself in Buckinghamshire. But, when a new list of stringent rules
and guidelines came into play, she walked out the door and never looked back. Six months later, she was practicing her occupation on a brand-new set of patients, in the form of young offenders at HMP Huntercombe.
‘The Prison Doctor’ is a no holds barred account of the visceral and shocking life of a doctor behind bars, as she navigates the world of three different prisons in her new career path. In what reads almost like a description of a parallel universe, Brown takes the reader through her time in Huntercombe, then into the notorious HMP Wormwood Scrubs, before bringing us to the present day in HMP Bronzefield, Europe’s biggest female prison.
The gritty reality of violence, drugs and suicide is displayed in full colour by Brown, who gives every grim detail of her daily grind. She introduces a variety of fascinating characters, each with their own story to tell from the horrifying to the heart-breaking, and she never pulls any punches; some of her stories are so graphic, it’s almost unfathomable.
However, whilst it all may sound rather doom-and-gloom, ‘The Prison Doctor’ is also a story of hope, inspiration and most importantly compassion. Brown gives life and agency to a population so often dehumanised by ugly media portrayals and unfair criticism, with her natural inclination to care and see the best in people with empathy and understanding; she gives the other side to the story of the voiceless.
With tear-wrenching precision, Brown combines these stories with tales of her equally hardworking colleagues, with inspiring and motivating descriptions of the close-knit nature of the team she finds herself working within.
Is ‘The Prison Doctor’ a disturbing narrative? At times. Are some of the stories sad? Certainly. Yet Brown’s intentions are not to shock or to sadden, but to leave us with a sense of hope and optimism. Is she successful? Undoubtedly.
