Whether this applies to winning a coveted football championship or being widely acknowledged for his wine making skills, Coby Ladwig is an expert on both fronts. Few will forget the fever that gripped Denmark last year when the Magpies won their first Premiership in over three decades. As Captain of the victorious team, Coby recalls the excitement of playing- and winning - in front of 4000 people and the many celebratory drinks that reinforced his team’s fantastic efforts! Celebratory drinks and winning awards, however are very much part of Coby’s life. He is now entering his ninth year as a wine maker and was invited to work at Matilda’s Estate four years ago. According to Coby, wine making is a complex process with a lot of chemistry involved. “ere is also the challenge of tailoring styles to suit Denmark’s cool climate and cater for changes in consumers’ palates, especially as this region is attracting a lot of attention as a significant wine growing region,” he said. Matilda’s Estate’s reputation as one of Denmark’s leading boutique wineries was further enhanced when Coby was nominated in 2010 for the Australia and New Zealand Young Wine Maker of the Year Award. The Denmark Markets aim to provide an outlet for regional craft, art and performing arts in a village atmosphere. First established in 1981 by Denmark Arts Council at Berridge Park, the Markets have become a showcase for local craftspeople, entertainers and arts community. Held only four times a year the event now attracts over 100 stalls of handcrafted items, art, home produce, food and refreshments and provides free entertainment throughout the day to over 9,000 visitors each year.Family entertainment is the priority for the day’s free entertainment and local performers and groups are encouraged to participate. A special guest usually headlines the program.

Gourmet GossipSpicy Prawn San Choy Bow Shared by Silas, Chef at Pepper and Salt RestaurantIngredients: 4 tblspn peanut oil; 5 shallots, finely chopped; 3 tsp ginger minced; 3tsp garlic minced; 2tsp red chilli finely chopped; 500g fresh prawn meat, halved; 100g pork mince;1small tin drained water chestnuts; chopped, 6 squirts fish sauce;1 tblspn soy; ¼ cup lime juice; 2 tsp grated palm sugar; 50gms snow peas; julienned, 1med carrot, julienned; ½ cup Vietnamese mint leaves; 1 cup coriander; 10 basil leaves; 1 cup bean shoots; 8 fresh crisp iceberg leaves (whole as possible); toasted sesame seeds. Method: 1. Heat peanut oil in a wok until it begins to shimmer slightly, add shallots, ginger, garlic, chilli and sauté until ingredients become translucent. 2. Add pork mince and prawn meat, sauté for a few minutes until combined. 3. Add water chestnuts, fish sauce, soy, lime juice and palm sugar and cook for a further minute, reduce heat slightly and fold ingredients until the prawn and pork are well amalgamated with the sweet, sour, salty flavours. 4. Add snow peas and carrots and cook for a further minute. 5. Remove from heat and add herbs and bean shoots. 6. Serve on a platter and allow guests to fill lettuce cups with the spiced prawn mixture. 7.
