Irmo Chapin Life Magazine was launched in 2011 to serve the residents who live around the Lake Murray. The magazine was created as a direct-mail business solution and an enjoyable, reliable news source for its readers. Irmo Chapin Life is published bi-monthly in January, March, May, July, September and November of each year. 16,000 copies are printed per publication date and 13,500 are direct mailed to the 29063 (Irmo), 29212 (St. Andrews), and 29036 (Chapin) zip codes. The remaining 2,500 magazines are distributed to schools, high traffic locations, churches, restaurants and doctor’s offices in Irmo, Harbison, Chapin, Ballentine, Lexington, Prosperity, and the Gilbert areas. Based on a conservative estimate of two readers per magazines, Irmo Chapin Life has a reach of 32,000 potential customers. We are a family owned and operated, local business based out of Lexington.

I hope everyone had a great Father’s Day. I sure did. As our family matures (in age, at least), we seem to be spending less and less time to-gether as a group. Someone always seems to be missing, or we have extra friends with us. I guess this is just how life is with teenagers.

But on this Father’s Day, it was just the five of us. We took the pontoon out on Lake Murray. Joey likes to be captain, and did a great job of navigating the family around the lake and beach-ing when we decided to chill and float. He’s also the unofficial disc jockey of the vessel, and makes sure the tunes are blaring. Jenna and Don-na tend to just lay there and soak up the sun. We all made the unfortunate mistake of not wearing enough sunscreen for the first time out on the water this year. Please be sure to lather up!

As the boat owner, I pay for everything and try to fix what’s broken. I’m also the head chef, responsible for cooking burgers for the crew. Nine-year-old Noah is full of nine million ques-tions that he expects me to answer. I try my best to explain what the nests under the bridges are, and what happens if we run out of gas. He’s fas-cinated by the bright yellow Sea Tow boat that roars past, and the fact that some people live on houseboats.

Somehow my appreciation for this “typical” family time was different this Father’s Day. It was deeper and more intense, perhaps because I know that just like the short summer season, days like this won’t last. Before we know it and definitely before we’re ready, they’ll be off to col-lege and life’s cycle will move forward. I’ll keep the sunscreen handy, just in case.

I was talking with a friend this week about a story that’s been in the news recently. Because of what my friend does for a liv-ing, he actually knows far more about the situation than what has been reported, and I was surprised to find out how many of the supposed “facts” being widely discussed by the media were not even remotely accurate. Then, I found myself offended for my friend because much of the misinformation reflected poorly on him. His response was simply to shrug it off and smile—he knew the truth even if others did not. He understood that there is simply no way everyone will ever hear about or even believe what really happened.

At some point in our lives, someone is going to believe some-thing untrue, unfair, and maybe downright mean about us, and we will want to fire back. Even if we could figure out a way to control the accuracy of a story people tell about us, we would still never be able to control people’s opinions about what they hear or stop the spread of the story being passed to the next willing ear. The one and only thing we really have control over is how to respond when it happens. As it always does, the Bible offers a suggestion:

Psalm 59:9–10 (NIV)—9 You are my strength, I watch for you; you, God, are my fortress, 10 my God on whom I can rely. God will go before me and will let me gloat over those who slander me.

So embrace your choice: whether to drive yourself crazy chas-ing down people’s opinions about you or being able to shrug and smile, content in the knowledge that you know the truth even if no one else does—and knowing full well that the Perfect Judge will one day make it right.

LEADER

Accepting awards is not a novelty for Steven Mungo. His outstanding ca-reer as a premier homebuilder at Mungo Homes has brought him local and national recognition, and he continues to thrive in the building industry from his headquarters in Irmo.

The Mungo Company established by Michael Mungo has been a leader in construction and development for many decades. His sons Steven and Stewart joined him in the business soon after graduating from Wofford College, and the brothers have continued the standard of excellence.

As Steven tells it, “Mungo Company had been focused on land devel-opment until I came along. I persuaded the family that we should go into home building as well. My father was against it; he said, ‘Son, there’s no money in it.’”

Now Steven Mungo presides as CEO over Mungo Homes, which last year delivered over 1235 new homes and had revenue in excess of $325 million. The honors and awards continue to pour in: in 2005, Steven became the youngest inductee into the South Carolina Housing Hall of Fame. He is a three-time recipient of the Builder Executive of the Year Award (presented by the Greater Columbia Home Builders Association) and the 2008 recipient of the Gordon A. Harrison Award. In 2011, he received the Champion of the American Dream Award as well as the Thomas N. Bagnal

Builder of the Year Award. In 2012, under his guidance, Mungo Homes was rec-ognized as America’s Best Builder by Builder Magazine. That same year Mungo Homes was named National Green Advocate of the Year by the National Green Building Council of NAHB. Most recently, Steven appeared on the cover of Profes-sional Builders magazine.

Mungo Homes builds in South Carolina, Georgia, North Carolina, and recently entered the Huntsville, Alabama, market.

Steven Mungo and his brother Stewart believe in what Steven describes as “a conservative philosophy.” Their company came through the downturn of seven years ago because they never gave into over-leveraging: “We reinvest in our own company and take on what we can afford to carry,” he says. “We believe in corporate responsibility as well as community service. You take your character with you.”

This has been demonstrated in the long list of community charities supported by Mungo Homes. Steven has served as senior warden at St. Mary’s Episcopal Church, where they built the sanctuary; they also donate to Harvest Hope Food Bank, Community Medical Clinic, Prov-idence Home for Alcohol-Dependent, and many others. Of great interest to the community is the ongoing work at the Michael Mungo home in Whitehall, where Steven and Stewart grew up. Leeza Gibbons has been instrumental in establishing a support center for the caregivers of Alzheimer’s patients, and the Mungo home is being remodeled to serve as headquarters.

Steven and his wife Maria have two children, both Wofford graduates: Emily, doing post-graduate work at the Art Institute of Charleston, and Ward, employed with Mungo Homes in Charleston. n

Imagine floating in near-total silence, drifting slowly over the Lake Murray area while watching patches of green, brown, and blue merge, creating the illusion that it is the earth and not you that is moving. Your journey is simi-

lar to a dream, an airborne fantasy where loud ground noises are muffled and all motion slows. It is as though the earth is staging a slow-motion parade, and you are the only observer.

It wasn’t until the 1960s with the ad-vent of synthetic fabrics and a system of efficiently burning propane to get aloft—and to regulate the temperature thereafter—that hot-air ballooning real-ly took off.

Why the Interest In BalloonIng? At a time when many people seem ad-

dicted to personal watercraft and loud off-road vehicles, ballooning is an environ-mentally harmonious activity. In a hot-air balloon, one does not terrorize wildlife nor rend the air with raucous sounds. A balloonist travels largely at the mercy of the wind and in peace with nature.

It is an age-old childhood pastime: blowing iridescent soap bubbles and then watching them float away and wishing you could be on one, just for the fun of it. Ballooning may not exactly fulfill that wish, but today, as more and more people are discovering, it comes about as close as grown-ups can hope for.

From the vantage point of riding in a wicker basket and seeing things from beneath a seven-story-high balloon, the world seems transformed. The land shrinks to Lilliputian dimensions; horses run from this spectacle in the sky, while people peer up and wave. A balloonist can drift just above the treetops and see wild-life that cannot be seen from the ground. Viewed from the basket of a hot-air bal-loon, the world is halcyon, innocent. There is no sound when one is aloft, save for the occasional “whoosh” of the pro-pane burner.

Even people petrified at the top of a tall ladder seldom experience fear when stand-ing in a balloon basket. There’s no sensa-tion of movement because you’re moving together with the wind. There’s also no sensation of being parted from the ground. It’s like being in a museum and looking down at a model city laid out at your feet.

the BalloonIng experIenceWho can fly? Anyone who is in good

physical condition, can stand for an hour, is at least four feet tall and isn’t pregnant may take a ride in a balloon basket. An adult must accompany children under 12 years of age.

It is not uncommon for many people to express a fear of heights or uneasiness about flying. That’s natural, especially if you’ve never been around a hot-air bal-loon. The truth is: from the basket of a balloon, there’s no sensation of move-ment, and, unless you look down you’ll hardly realize you’re up in the air, or moving at all.

age-old dream. It is the fantasy of Dor-othy and Toto soaring with the Wizard over the Emerald City in The Wizard of Oz, and of Phileas Fogg crossing the En-glish Channel at the start of his 80-day trip around the world.

Some 120 years before the Wright brothers etched their names into avia-tion history at Kitty Hawk, two French brothers accomplished a feat that may have been more noteworthy. Etienne and Joseph Montgolfier, paper makers from Annonay, France, observed that small containers rose in the fireplace of the family chateau outside Paris, France, when the fireplace was lit. That gave them an idea.

The brothers began experimenting with smoke-filled balloons. Believing that smoke possessed some magical property, they tested several varieties, burning such items as old shoes and rotten meat.

The Montgolfiers finally settled on a combination of straw and wool (they did eventually come to realize that hot air alone is what provides upward thrust). The first manned hot-air balloon was built by the Montgolfier brothers and flown by intrepid volunteers Pilatre de Rozier and the Marquis d’Arldes on No-vember 21, 1783, in France. (King Louis XVI had initially wanted the volunteers to be prisoners, whose sentences he’d commute if they survived the trip, but his attendants convinced him that the thrill of the first flight should not be wasted on ruffians.)

Around the beginning of the 20th century, the smoke balloon (heated by a fire on the ground) was a frequent coun-ty fair opening event. After the initial climb, the hot air cooled, and the rider then jumped from the balloon, praying that his parachute opened.

Hot-air balloons have a distinctive place in history. Balloons smuggled

without a care in the world. At higher altitudes, it’s as though a huge carpet of scenery is being slowly unrolled beneath you. People who like speed probably won’t enjoy a balloon ride because it is anything but fast. But if you care to mo-sey along, you’ll find a balloon ride to be most enjoyable.

After an hour or so of flight, the pilot will select a safe landing site and notify the crew of his intention to descend. The chase vehicle’s crew that follows the bal-loon during the flight will meet you at the landing site, help you out of the bas-ket, and begin deflating and packing up the balloon.

Part of the ballooning ritual involves champagne. After landing, the first sound often heard is the pop of cham-pagne corks. In the early days, French aeronauts got into the habit of packing along bottles of champagne to placate pitchfork-bearing farmers who weren’t overly fond of trespassers on their prop-erty; over time, the habit became an en-grained part of the ballooning tradition.

Balloon flights typically are offered twice a day. The morning flight departs at (or soon after) sunrise; the afternoon flight leaves approximately two hours before sunset. Balloon pilots prefer these times because winds then tend to

be the calmest. The breezes will carry you over meandering streams and fields, as well as much visible wildlife, which can include red-tailed hawks, eagles, squirrels, and deer.

If you’ve ever seen a balloon in flight, you know it’s akin to something out of a fairy tale. To see a balloon above you is an exhilarating experience, to be sure. However, to ride in the basket of a bal-loon is to know freedom.

In the film To Fly, screened at the Smithsonian Institution’s National Air and Space Museum in Washington, D.C., the opening scene shows a balloonist in colo-nial times. As he is about to leave Moth-er Earth, he addresses the crowd that has gathered to cheer him on, proclaiming:

the quest to touch a rainbow continues in a manner stretching back over 200 years. Shimmering like bubbles blowing in the

air, hot-air balloons drift freely with nature, carrying with them those unhurried indi-viduals who seek only sunshine and the wind’s gentle caress. The Lake Murray area has never looked more beautiful. Enjoy. n

with anger, sadness, or worry. Although each of these feelings plays an important role in an emotionally balanced lifestyle, when they get out of control, our emotional health begins to suffer and we fall victim to undue worry, insecurity, and hostility. When our emotions continue to go unchecked, the consequences grow and spread to other parts of our lives, affecting our relationships with others and even our physical health. Luckily, we all have laughter on our side. Humor—like anger, sadness, and fear—is an en-during characteristic of the human condition and acts as nature’s counterbalance to the other three. Consider the following reasons for adding laughter to your routine.

laughter Dissolves DistressWhen we experience anger, the neural activity that occurs in

our brains makes it physically impossible to think clearly. Simi-larly, science has shown that introducing humor to the emotional equation temporarily bars our brains from experiencing fear, an-ger, or sadness. If we can consciously apply this technique, it can help us in just about any situation.

For example, if you can’t shake a bad case of the nerves while preparing for a job interview or a business presentation, just take a step back and have a little laugh—whether at your situation or something else—and feel the anxiety disappear. It’s the same

principle behind the age-old technique of picturing an audience in their underwear. Learning to limit how seriously we take our-selves can have positive long-term effects, such as increasing our ability to find solutions to complex personal issues and helping us maintain a healthy self-image.

If your emotional burden stems from something more far-reaching, like the loss of a loved one, it may take more effort to interrupt the cycle of negativity. Sadness has its rightful place on the emotional spectrum, and grieving is a normal, healthy re-action. Yet if it gets out of hand, you can try remembering your loved one in a humorous way or just purposefully devote some time to laughter every day and see if your emotional scale doesn’t tip back in the direction of balance.

It may sound difficult, but just remember that painting humor into your perspective goes a long way toward creating a psycho-logical distance, which can in turn provide relief from the toll taken by a heavy emotional load.

ingful—when it’s shared. It’s often the irony in different perspec-tives that brings the humor in a situation to light. Other times, we simply need someone less burdened by a negative outlook to point us toward the brighter side. In any case, whether we’re dealing

with frustration, bitterness, or loss, sharing the emotional weight of our circumstances with another person can make the difference between being able to bear it and being crushed beneath it.

Sharing humor helps us in many other ways as well. It triggers positive feelings and strengthens the emotional bonds we share with others. The stronger these bonds are, the better equipped a relationship is to withstand stress and disappointment. Laughter in a relationship can also be synonymous with joy, satisfaction, and buoyancy because humor helps us be more spontaneous and expressive as well as less defensive. Incorporating more laughter into our lives can aid us not only in our most intimate relation-ships, but also in our interactions with friends, colleagues, and even strangers.

Although we might not think of humor as a habit, it can be a healthy one to cultivate. When we’re in the middle of a de-structive emotional storm, sometimes laughing seems like the last thing we care to do. The chemistry behind our negative emotions can make finding the humor in a situation a nearly impossible task. The good news, however, is that if we make a habit of laugh-ter, we will not only be less likely to fall under the dark spell of our own anger or anxiety, but we’ll also be more capable of break-ing any cycles of negativity in which we find ourselves. There are many ways to do this, but maybe the simplest way is best: Laugh sincerely, laugh often, and laugh together. n

Blueberry French Toast Casserole 2 Tbsp. salted butter, and extra to butter dishOne 1 lb day-old loaf challah or white bread,

unslicedTwo 6-oz. containers blueberries (about 2 1/4 cups)6 large eggs3 cups milk1 1/4 cups heavy cream2/3 cup plus 2 Tbsp. granulated sugar1/2 tsp. pure almond extract1/4 tsp. kosher saltOne 16-oz. container strawberries, slicedOne 6-oz. container raspberries1/2 tsp. vanilla extractPinch of Confectioners’ sugar, for dusting,

optionalGrease 9 x 13 inch baking dish with butter.

Slice bread into 3/4-to-1-inch-thick slices. Place bread in dish, overlapping each other. Scatter blueberries on bread. Whisk eggs, milk, 1/2 cup cream, 2/3 cup granulated sugar, almond ex-tract and salt in a medium bowl until the sugar is dissolved. Pour over bread and berries; press down gently. Dot 2 tablespoons butter over top of casserole. Cover, refrigerate 8 hours or overnight. Preheat oven to 350 degrees F. Bake uncovered until brown and firm, 45 min., dust with confec-tioners’ sugar if desired. Toss strawberries and raspberries with 1 tablespoon granulated sugar; whip remaining 3/4 cup cream with remaining 1 tablespoon granulated sugar and vanilla. Serve with whipped cream and berries. Serves: 6 to 8

Parmesan Grilled Corn4 ears corn1/2 cup mayonnaise1 1/2 cups sour cream1/4 cup freshly chopped cilantro leaves1 cup freshly grated Parmesan1 lime, juiced

Red chili powder, to taste2 limes cut into wedges, for garnish

Remove husks corn leaving the core attached at the end. Cook on hot grill or use cast iron griddle pan until slightly charred, turning occasionally. Mix mayo, sour cream and cilantro; grate Parme-san. While corn is still warm, slather with mayo mix. Squeeze lime juice and Parmesan over corn, season with chili powder; serve with lime wedges.

Buttermilk Pork Chops2 cups buttermilk3 Tbsp. packed light brown sugar4 Tbsp. extra-virgin olive oilKosher salt6 cloves garlic, smashed6 bay leaves2 tsp. hot sauce12 black peppercorns1 lemon6 bone-in center-cut pork loin chops (1 inch

thick; about 3 pounds total)Vegetable oil, for brushing6 ears of corn, husked1/4 cup chopped fresh parsley2 Tbsp. chopped fresh chives

Brine: Mix buttermilk, brown sugar, 2 table-spoons olive oil, 3 tablespoons salt, garlic, bay leaves, hot sauce and peppercorns. Remove 4 strips of lemon zest and add to brine; squeeze half of the lemon juice. Pierce both sides of chops and add to the brine, turning to coat. Cover and refrigerate 4 hours or overnight. Cook on medium heated grill until marked, about 7 minutes, flip and continue cooking, about 7 more minutes. Rub corn with 1 ta-blespoon olive oil and season with salt. Wrap in foil and grill, turning occasionally, about 10 minutes. Remove chops from grill; cut corn kernels from the cobs. Combine corn, remaining lemon juice, 1 ta-blespoon olive oil, parsley and chives in a bowl and toss with salt. Serve and enjoy!
