Cooking with ChemistryMicrowave Peanut Brittle

It wasn’t until my junior chemistry class in high school that I finally realized that some aspects of cooking were a real science – that while making certain things, chemical reactions were happening right in front of you.

It was in this class that we were given the option to make peanut brittle for extra credit. We were learning about chemical reactions at the time but I honestly can’t remember which because the peanut brittle was distractingly fun to make with my friend Amber. I am not sure if we cheated or not because my mom’s recipe was for microwavable peanut brittle and not for traditional peanut brittle. Either way, we learned a thing or two about thermophysical properties.

In my mom’s recipe, you microwave and stir the heated sugar multiple times. This happens once when you add in the peanuts and once when you add in the butter, soda, and vanilla. I, being the naïve chemist, chose to use a plastic scraper instead of a wooden spoon for this. I was stirring the concoction, folding, mixing, etc. when I noticed, “Wow, this plastic scraper kind of looks smaller” but I shrugged it off. It wasn’t until the scraper was only a little nub left on the handle that I was truly convinced that it had actually melted. That day, in addition to learning how to make peanut brittle, I also learned that the melting point for plastic isn’t that high. Needless to say, we decided that we couldn’t serve plastic-laced peanut brittle to our fellow classmates, but we still finished making that batch. We then proceeded to make another batch to share using a wooden spoon. The one that had the “extra” ingredient was a little darker so it was pretty easy to keep them straight.

I still think back on that experiment with a smile.

Here is my mom’s recipe:

1 cup sugar½ cup light corn syrup⅛ teaspoon salt1-1 ½ cups roasted, salted peanuts1 Tablespoon butter1 teaspoon vanilla1 teaspoon baking soda

Combine sugar, syrup, and salt in a 2-quart casserole dish. Microwave on high for 5 minutes. Stir in peanuts. Microwave 3 to 5 minutes, stirring after 3 minutes, until syrup and peanuts are lightly browned. Stir in butter, vanilla, and soda until light and foamy. Spread on a well-buttered cookie sheet to cool.

Perry Romanowski: ChemistsCorner.com

Why Cosmetic Chemists Should Always Try Their ProductsThe number of people I’ve known who work on products that they’ve never even tried has always amazed me. They miss so much when they don’t have direct experience with a product. Perhaps it’s understandable if you are not in the target market for your product, but anyone can safely use most any product and the information you’ll learn from the experience will be invaluable. Here are 5 reasons cosmetic chemists should be trying every cosmetic formula they work on.

1. Learn the most important characteristics

When I first started working on the cosmetic industry, I was making hair care products. While I always used shampoo, I rarely used conditioner. It seemed like a waste of time. But when I was given the task to make a new hair conditioner formula, I needed to figure out the most important characteristics. Reading about slip, spreadability, and hair conditioning properties didn’t make sense until I tried the product. After using it a few times, I figured out what these terms meant and why they were important. This gave me a basis for evaluating new formulas, allowing me to know when I made something better.

If you don’t try a formula, you can’t make it better.

2. Build your powers of observation

Many of the formulas you will work on are ones you’ve tried all your life. But most of the time you use them without thinking. Your mind has become dulled to the experience. When you try a product thoughtfully, you can build your powers of observation and discover all sorts of details you never noticed.

For example, you might start to notice the ease at which your hands slide while applying a lotion, or the length of time it takes to “work into the skin.” You might notice the bubble density of your body wash or shampoo. In short, using a product frequently and mindfully can make you an excellent evaluator.

You can’t make formulas better if you don’t know what to change.

3. Figure out formula problems

Sometimes your Market Research data will come

By: Perry Romanowskiback suggesting there is a problem with your formula. This will be surprising to you because companies do not like to field consumer tests with formulas they know will exhibit problems. Even if all your lab testing shows your formula is good, there may be some subtle things you miss if you don’t try it.

For instance, the product might sting or cause another unpleasant sensation during use. There might be a foul odor which you only smell when it’s exposed to skin, hair, or moisture. You might feel tiny particles that interfere with the experience.

Trying a product identifies unseen problems.

4. Learn the effects of raw materials

A great benefit to trying your formulas is that you learn quickly how different raw materials change the experience. You can read all you want about a raw material but until you actually experience it from a formula, your knowledge isn’t useful. Every cosmetic chemist should have a standard “blank” formula which they can incorporate a new raw material in and try it to determine the effects. This is the best way to learn. Even if the raw material isn’t meant to affect performance, it can have a subtle impact that you would never notice unless you used it.

The fastest way to learn about a raw material is to use it.

5. Inspire new product ideas

Finally, trying cosmetic formulas is an excellent way to inspire new ideas. When you think about the different products while using them, you may start to notice common problems. For example, maybe all the skin lotions you use feel too greasy or don’t last long enough. You should write down these observations and try to come up with new solutions. Product

brainstorming while you’re in the act of using a product leads to much more useful ideas than

sitting in an office just trying to think.

If not you, who?

As a formulator, you should take pride in everything you make. And if your formula

is not good enough for you, how can it possibly be good enough for anyone

else?If you don’t try a formula, you can’t make it better.

Spotlight:Kara McCutchen

Where were you born?

Cottonwood, Idaho

Favorite leisure activity?

Playing cards

Who was your first role model or hero?

My mom. I thought she was the bee’s knees, still do. Or maybe the pink Power Ranger? Who can remember?

If you had to pick a last meal, what would it be?

Mac and cheese. I have always wanted to be able to eat all of the mac and cheese I want without consequence; this would be perfect!

What is your favorite color?

Turquoise

What would your ultimate vacation be?

I’d start in Australia in February and hang out on an island on the Great Barrier Reef for a couple of months, snorkeling and diving and living the beach-bum life. Then, in the spring, I’d head to southern New Zealand and snowboard for a couple of months before heading to the Mediterranean where I would meet a friendly pirate who would commandeer a sailboat and teach me to sail. Then, I would spend a few months sailing through the Mediterranean, particularly the Greek Isles. I’d get off in Greece and tour the country, visiting every historical site possible, before backpacking through Eastern Europe to Italy and France where I would enjoy the slow lifestyle of drinking wine and eating cheese all day in the sun. I’d probably take up writing or painting and live like an artist, attending as many festivals as possible and roaming the countryside before returning to my life in the United States about nine months later.

What would someone meeting you for the first time be most surprised to learn?

I’m actually an introvert and kind of shy. I’ve adapted well and come across as a very confident extrovert but most of the time I can’t wait to get home, put on some sweats, curl up on my couch with a coloring book and color alone in peace.

All-time favorite sports person?

You’re funny.

If you could go back and give 5-year-old Kara one piece of advice, what would it be?

I don’t think there’s anything I could tell a 5-year-old that would make much of a difference. I might suggest less public nose picking but who knows how that would go over. I would, however, give my mom the following advice:

1. Less childhood pictures with chickens.

2. Please rethink my 5-year-old haircut. Kindergarten photos are coming soon…

3. What’s with all of the denim skirts and cowboy boots? This isn’t Texas lady and we aren’t at a rodeo! Please dress me in something cute for once!

Favorite TV/web show?

Game of Thrones

On any given weekend, what are you most likely to be doing?

Something outside. Hiking, snowboarding, climbing, surfing, biking, anything and everything! I usually end up taking a 3-hour nap on Sunday afternoons as well. That’s the best.

You may not know exactly what’s in your cosmetic. I had a company swear up and down that their products were all natural, preservative free, etc. They also said that the ingredients hadn’t been tested on animals and a bunch of other things that I found out later were untrue. But from their perspective and the documentation they had on file, they were right.

Here are the latest surprises that I found in products while doing European Product Information Files (PIF) but not on the master formulas, labels or on the documentation initially received for the formulas:

• Sucrose• Silica• Sodium sulfateHere are a couple examples from the past that have been much more damaging to companies:• P h t h a l a t e s (company had to discontinue product line)• P a r a b e n s (company had mission statement declaring that the products were paraben free)• Phenoxyethanol (brought total % of preservative over allowed levels – had to reformulate)

These examples come from publicly traded, large, multinational businesses and are very common occurrences within the cosmetic industry. There are a few reasons why ingredients aren’t mentioned on labels or docs:

1. Companies are unaware that the ingredients are in their products, i.e. haven’t looked at the documentation

2. The ingredients may or may not have to be listed on the label for the US so the manufacturer doesn’t list them on the documentation

3. Manufacturer is unaware of the additional ingredients

D. Scott Taylor

[email protected]

You Might Not Know What’s in Your Cosmetic4. Raw material provider has made a business decision to leave the ingredient off the documentation

5. “Trade-secret” blends

It doesn’t matter if the ingredients are on the documentation/label or not, you need to know what’s in your product. Not knowing what’s in a product could void claims, cause you to add unnecessary ingredients, and drive up the cost of production when products aren’t meeting spec. How would it affect the product if 1% of the total formulation was unaccounted for? What if 0.8% were undeclared preservatives? Would that affect how much preservative is in the final formula? Formulation issues aside, if your product and

documentation do not match, your company could be in violation of

regulations without even knowing that any violation occurred.

There are different types of ingredients that aren’t disclosed on documentation. Some of these additives, or “carry overs” as they are sometimes called, can affect your formula by introducing substances into it that you are unaware of. Ingredients that are received from manufacturers may have other chemicals mixed in for efficacy, preservation, etc. For example, a company sends us a spec sheet and it lists aloe vera extract at 40%. What is the other 60%?

Most of the time with botanical extracts, the extra is water, but sometimes it is a preservative or a manufacturing aid. In some countries the additive must be declared on the label and may cause the product to no longer be permitted. Undisclosed constituents can also influence the order ingredients appear on the label. The master formula must reflect the accurate amount of each ingredient in the product. If ingredients are missing, then the FTC could site the company for consumer deception.

Scott TaylorThe Regulatory Department(801) [email protected]

Regulatory Department Continued:

There are a couple ways you can tell if there are undisclosed ingredients in your raw materials from the documentation. For each material it is necessary to have a certificate of analysis, an MSDS and a spec sheet. If the documentation shows one ingredient name but multiple CAS numbers, the ingredient declared as a percentage or mentions a blend, then most likely there are undisclosed ingredients in the formula.

You are the one who decides when to stop digging. Sometimes you may not like what you find and other times a light will come on and you’ll see why you’ve been having problems with the formulation. In some cases, you may need to switch suppliers to ones that know what needs to be on the docs and have nothing to hide.

INCI HighlightSalicylic Acid

In its basic or salt form, which is less active, it is very soluble in water because of its partial negative charge. Solubility is trickier in its acid form, the more active form. It tends to be more soluble in solvents that have the same polarity as alcohol and acetone, like fats and oils. Methods to incorporate SA include using heat, betaine, Lauryl Lactyl Lactate or other solubilizers, and adding the basic salt form then neutralizing it to convert it to its acid form. SA is stable except for being sensitive to UV light.2

Several years ago, in C&T there was a study showing how SA functioned as a hydroxyl radical capture agent when in the presence of rutile titanium dioxide. Salicylic acid is definitely a multifunction ingredient.3

Salicylic acid (SA) is a very popular ingredient. It is a beta-hydroxy acid (carboxylic acid and hydroxyl group separated by 2 carbons) and is a cell turnover ingredient. It is used as an OTC ingredient in the US at levels of 0.5-2% and in Japan at 0.2% for

acne claims. It is also utilized in treatment products for dandruff, psoriasis, and warts. Additionally, SA has anti-fungal activity and limited anti-bacteria activity. The lower the pH, the better it functions. Iron is also sequestered by it, so it can be considered a chelator.1

SA is made synthetically and sourced from natural ingredients such as wintergreen (pricier than synthetic versions). Other natural sources include willow and meadowsweet. Small amounts are also found in various fruits. At natural and organic nurseries, willow branches are put in water and used to create a rooting hormone solution.

He was the first to identify antibodies to hair follicle-specific an-tigens in patients with acute alopecia areata, and also the first to establish melanocytes from the human hair follicles in long-term culture. He has identified a self-similarity of the POMC peptide system in the human hair follicle pig-mentary unit, how pigmentation can be regulated by CRF and POMC peptides (incl. beta endorphin), and more recently by bone morphogenetic proteins. Together with Suman Singh he has revealed an unexpected role for filo-podia in melanin transfer under the influence of myoxin-X and cdc42.

SNOW and LearnWe had some great speakers at our first quarter’s meeting in Park City. We got a regulatory update from Karl Popp and cleanser secrets from Martin Vethamuthu. But, sorry boys, Mother Nature was definitely the day’s star.

We cosmetic chemists like to think of nature as green and friendly but that afternoon she was white and angry. High winds and persistent snowfall led to the cancelation of our tubing plans. Plus, the highway through Parley’s Canyon was blocked by cars that thought they could but couldn’t. I ended up staying put in a Walmart parking lot for an hour hoping Mother Nature would go to her happy place. I’m certain many of you had a similarly slow and frazzling journey home.

No doubt that fresh powder brightened a few people’s mornings on Friday though when it was all about play.

Thanks everyone that came and supported the chapter despite Mother Nature’s little tantrum. Next time, we’ll have to put her in time-out.
