InstallationUNPACKING

Unpackthemixerimmediatelyafterreceipt.Ifthemachineisfoundtobedamaged,savethepackagingmaterialandcontactthecarrierwithinfifteen(15)daysofdelivery.Immediatelycontactyoursourceoftheequipment.You have no recourse to damage after fifteen (15) days.

TO AVOID SERIOUS PERSONAL INJURY:

• ALWAYSinstallequipmentinworkareawithadequatelightandspace.• ONLYoperatethemixeronasolid,LEVEL,non-skidsurfacethatisnonflammable.• NEVERbypass,alter,ormodifythisequipmentinanywayfromitsoriginalcondition.Doingsomaycreate hazardsandwillvoidwarranty.• NEVERoperatethemixerwithoutallwarningsattachedtoit.• DO NOTattempttoliftthemixeralone.

INSTALLATION

1. Readthismanualthoroughlybeforeinstallationandoperation.DONOTproceedwithinstallationand operationifyouhaveanyquestionsordonotunderstandanythinginthismanual.Contactyourlocal representativeorGlobefirst.

2. Removethecorrugatedboxfromtheskidbyremovingthebandsonthebox.NOTE:TheSP62PandSP80PL areshippedinawoodencrate.Onlytheboltsatthebottomofthecrate(allfoursides)needtoberemoved.

3. Carefullyunboltthemixerfromtheskidusingan11/16”or3/4”wrench.

4. Selectalocationforthemixerkeepingthesepointsinmind: • Floororcountermustbelevel. • Easyaccessformaintenanceandservice. • Clearanceforoperatingcontrols,installingandremovingagitators,bowl,orattachments. • Sufficientspaceforaddingingredientsduringmixingperiods. • Ensurerearventilationoutletofmixerisnotblocked.

5. Useatleasttwootherpeopletotilttheunitandinstalltherubberfeet.

6. AboltdowntemplateandboltsareavailablefortheSP10,SP20,orSP25.ContactGlobeifthisisneeded.

7. Inspectthemixertoensureallpartshavebeenprovided(i.e.bowl,beater,whip,anddoughhook).TheSP62P onlyhasabowlanddoughhook.

8. Readtheelectricalinformationfoundonthedataplatelocatedattherearofthemachine.Theincoming powershouldmatchtheratingonthedataplate.

CONNECTING TO ELECTRICAL POWER

Cord Connected Units: This machine is provided with a three-prong grounding plug. The outlet that this plug is connected to must be properly grounded. If the receptacle is not the proper grounding type contact an electrician. Do not under any circumstances cut or remove the third ground prong from the power cord or use any adapter plug. Never use an extension cord. Low amp supply could damage the mixer or cause a fire.

Units Without Power Cord or Plug: Have a licensed electrician connect the unit to the power supply.

Three Phase Units: Have a licensed electrician wire the machine correctly to ensure that the planetary shaft is rotating in the same direction as the arrow sticker located on the front of the machine. Check the rotation of the planetary shaft prior to first use. When standing in front of the mixer, the planetary shaft should be moving in a clockwise direction (i.e., the planetary shaft should appear to move from right to left). If the unit is operated backwards (counterclockwise) damage will occur to the mixer!

10.Cleanthemixerpriortousingit.Followthecleaninginstructionsonpage11.NOTE:Itisnormalforthe factorytoapplyagenerousamountofgreaseinandonthemachinesbeforeinitialuse.Excessgrease (brownincolor)willbeonallmetalsurfaces(e.g.topportionofbowlguard,speedcontrol,bowlclamps,bowl liftlever,andattachmenthubthumbscrew).Excesshigh-pressuredgrease(brownish-black)mayalsobe foundontheplanetaryshaftandsomedrippingsmaybefoundinthebowl.

ABOUT THE REMOVABLE BOWL GUARD (if applicable)

Thebowlguardcanberotatedorremovedtoaccommodatetheoperator’sfunction.Theinterlockingbowlguardiseasytoremoveandreattachforeasycleaninginasinkordishwasher.

NOTE:Whenguardisopenornotproperlyinstalled,themixerwillnotoperate. NOTE:Rotatethebowlguardclockwise(open)andcounterclockwise(closed)to attachagitatorstothemixer.

Opening / Rotating the Bowl Guard:

Rotatingthebowlguardclockwise(open)andcounterclockwise(closed),allowstheoperatortoeasilyaddingredientsandproperlyremovetheagitatorandbowlfromthemixer.

1.Whentheseparatedhandlesarelineduptogetherandpushedsecurelytotheright ofthemixer,thebowlguardisinthelockedpositionandready.(Seefig.6-1)

Removing and Attaching the Bowl Guard:

NOTE:Beforeremovingorattachingthebowlguard,makesurethebowlisinthedown/loweredpositionandtheagitatortoolisofftheshaft. 1.Toremovethebowlguardforcleaning,pushthelowerpartoftheseparatedhandle out(clockwise)dividingthehandleandreleasingtheguardfromtherotationring. (seefig.7-1)

2.Onceseparated,takeholdofthelowerseparatedhandleandcontinueturningthe guardclockwiseuntilthebowlguardreleasesfromtheringcatchonthemixer. (seefig.7-2)

3.Toreattachthebowlguard,lineuptheringcatchontheleftofthemixer;lift guardgentlyintoplaceandrotatetheguard’slowerhandlecounterclockwise untilitsnapsbackintoplacewiththeupperpartofthehandle.

ATTACHING THE BOWL TO THE MIXER

NOTE:InstallthebowlBEFOREattachingtheagitators.

1. Lowerthebowlbypullingthebowlliftleverforwardanddowntoitsresting position.FormodelsSP40andSP60rotatethebowlliftwheel counterclockwiseuntilitstops.FortheSP62PandSP80PLpressthedown arrow(bluebutton)tolowerthebowluntilitstops.

2. Liftthebowlbythebowlhandlesand a. slowlypositionthelockingpin(locatedontherearofthebowl)intotheholeinthe middlerearofthecradle(seefig7-3). b. lowerthebowlontothepinslocatedoneithersideofthebowlcradle.

3. Oncethebowlispositionedonthecradle,securethebowlbypullingeachbowlclamp forwarduntilthebowlislockedtight(seefig7-4).

Operating InstructionsATTACHING THE AGITATOR TO THE MIXER (i.e., Beater, Hook, Whip)

NOTE:Itiseasiertoinstalltheagitatorpriortoaddingtheingredientsintothebowl.

1. Rotatethebowlguardtotheleftsoitrestsintheopenposition(seefig8-1).

Excessiveforceusedtoopenandclosethebowlguardmaydamagethespringlockandbowlguardmicroswitch,andwillvoidthewarranty.

2. Slidetheagitatorslowlyupwardsontotheplanetaryshaftfittingtheshaftpinthroughthe slotintheagitator(seefig8-2).

3. Rotatetheagitatorclockwisetosecureitontotheplanetaryshaft.

MIXING INGREDIENTS

Followthecapacitychartlocatedonpage13inthismanual.Overloadingornotfollowingthischartwilldamagethemixerandvoidthewarranty.

Agitatorsshouldalwaysrotateinaclockwisedirectionaroundthebowl.Iftheagitatormovescounterclockwise,contactalicensedelectricianimmediatelytoremedyincorrectwiring.

IMPORTANT: Make sure the speed control lever is on the first (1) speed.

1. Addtheappropriatemixingingredientsintothebowl.

2. Liftcompletelyuponthebowlliftleveruntilthebowllocksintoposition.Onthe SP40andSP60rotatethebowlliftwheelclockwiseuntilthebowlisalltheway upintoposition.FortheSP62PandSP80PLpresstheuparrow(bluebutton)untilthe bowlisupintoposition.

3. Rotatethebowlguardtotherightsoitlocksintotheclosedposition(seefig8-3). Aclickingsoundwillbeheard.

NOTE: Themixerwillnotstartifthebowlguardisopenorthebowlisintheloweredposition.

4. Setthetimerfortheappropriatemixingtimeorsetthemixerfornon-timedoperation. a. Timed Operation: Turnthetimerknobinaclockwisedirectionatleastfiveminutespast“0”tothedesired time.NOTE:Tosetthetimeforlessthanfiveminutesturnthetimerknobclockwisetosixthen counterclockwisebacktothedesiredtime.

b. Non-Timed Operation:Turnthetimerknobinacounterclockwisedirectiontothegreen“on”position. NOTE:Heavyloadsshouldnotbemixedlongerthanfifteen(15)minutesatthissettingwithoutanequal amountofresttimeforthemixer.Failuretoadheretotheseinstructionsmaycausethemixerto automaticallyshutoffduetooverloading.

GearSpeed ProductType/Ingredient 1(low) Heavy:mixingpizza,bread,pastaanddonutdoughs,waffle/cakebatter,mashingpotatoes 2(medium) Medium:2ndstageofmixingfordonutdough,etc. 3(high) Light:whippingcream,eggwhites,meringue IMPORTANT: When mixing product always follow the recommended agitator and speed setting according to the capacity chart located on page 13 of this manual.

6. Pressthegreenstartbuttonlocatedonthemiddleofthecontrolpanel.

Always STOP the mixer BEFORE changing speeds! Failure to do so may damage the gears or other parts and WILL void the warranty!

7. Tochangethespeedwhilemixing a. presstheredstopbutton b. changethespeedbyraisingorloweringthespeedcontrollever c. pressthegreenstartbuttontorestartthemixer.

NOTE: TheSP62PandSP80PLwillautomaticallyshutoffifthespeedischangedwhilethemixerisinoperation.

NOTE: Themixerisequippedwithamotoroverloadprotection.Ifthemixershutsoffduringoperationreducethe batchsizeand a. SP25andsmallermodels:Pressthestopbuttonthenpresstheoverloadresetbutton. b. Largermodels:Waittwominutes.Pressthestopbuttonthenpressthestartbutton.

NOTE: 2ndspeedshouldneverbeusedon50%ARorlowerwiththeexceptionoftheSP60.TheSP60 requiresa50%reductioninbatchsizetomixinspeed2with50%ARdoughs.

NOTE: Reducebatchsizeby10%ifchilledflour,waterbelow70°F,ice,orhighglutenflourisbeingused.

IMPORTANT: Forheavierloads,themixershouldnotrunlongerthanfifteenminuteswithoutpausingforacooldownperiodofatleastfifteenminutesormorebeforeresumingmixing.Forlighterloadsthemixershouldnotrunlongerthanthirtyminuteswithoutpausingforacooldownperiodofatleastthirtyminutesormorebeforeresumingmixing.

8. Whentheingredientshavebeenthoroughlymixed,presstheredstopbuttontostopthemixer. NOTE:Ifthetimerwasusedthemixerwillautomaticallystopwhenthetimehasexpired.

9. Lowerthebowlbypullingthebowlliftleverforwardanddowntoitsrestingposition.FormodelsSP40and SP60,rotatethebowlliftwheelcounterclockwiseuntilitstops.FormodelsSP62PandSP80PLpressthe downarrow(bluebutton)untilthebowlstops.

10.Rotatethebowlguardtotheleftsoitisintheopenposition.

11. Removetheagitatorfromtheplanetaryshaftbyliftingitupwardsthenrotatingitcounterclockwiseuntilitis unlocked.Lowertheagitatorandremovefromplanetaryshaft.

13.Liftupslightlyonthebowlsoitclearsthepinsonthebowlcradle.

Most batches are heavy. Always use two people to remove and transport the loaded bowl after mixing is complete. A bowl truck is included with the SP60, SP62P and SP80PL models and should be used to unload bowls containing more than 50 lbs. per batch.

HOW TO USE THE ATTACHMENT HUB

Never put your hand into the feed chute when using any mixer attachment.

ThemixermustbeOFFbeforeinstallingattachments!DoNOTuseattachmentswhilemixing!

1. Loosenandremovetheattachmenthubthumbscrew(seefig10-1).

2. Removetheplasticcoverfromtheattachmenthub(seefig10-1).

3. Lubricatetheattachmentshaftwithafoodqualitygreaseormineraloil.

4. Inserttheattachmentshaftintothehubmakingsuretolineupthealignmentpinwith thehubhole.

5. Tightenthethumbscrewbackintothehubandsecurelytightenit.

6. Selecttheappropriatespeedsettingbyliftingorloweringthespeedcontrollever.

Recommended Speed while using attachments: Attachment RecommendedSpeed VegetableSlicer 1or2 CheeseShredder/Grater 2or3 MeatGrinder 1only

NOTE: Makesurethebowlisupandthebowlguardisclosed.Themixerwillnotstartifthebowlandthe bowlguardarenotintheproperoperatingposition.

7. Turnthetimerknobinacounterclockwisedirectiontothegreen“on”position.

8. Pressthegreenstartbuttonlocatedonthemiddleofthecontrolpanel.

The entire mixer, including removable parts, must be thoroughly cleaned and sanitized using the procedures identified by your local health department and the ServSafe Essentials published by the National Restaurant Association Educational Foundation (NRAEF). It is extremely important to sanitize the mixer and to follow the instructions on the quaternary sanitizer container to ensure proper sanitation is achieved.
