  • Eggplant Parmigiana

    1. Heat a pan or barbecue to high heat. Meanwhile, remove the stalks from the eggplants and cut into 1cm thick slices, then set aside. In another large pan, add some olive oil into a large pan on medium heat. Add the onion, garlic and dried oregano and cook for 10 minutes, until the onion is soft. Add the tinned tomatoes to the pan and give the mixture a good stir, then put a lid on the pan and simmer for 15 minutes.

    2. Grill the eggplants on both sides until lightly browned. When the tomato sauce is reduced and sweet, season it carefully with salt, pepper and a tiny swig of wine vinegar, and add the basil. You can leave the sauce chunky or you can purée it.

    3. In a casserole dish, put a small layer of tomato sauce, then a thin scattering of Parmesan, followed by a layer of eggplant. Repeat until all ingredients are used, finishing with a little sauce and another good sprinkling of Parmesan. Toss the breadcrumbs in olive oil with a little freshly chopped oregano and sprinkle them on top of the Parmesan.

    4. Place the dish in the oven and bake at 190°C for half an hour until golden, crisp and bubbly. This dish is best eaten straight away, but it can also be served cold.

    Ingredients• 3 large eggplants• Olive oil• 1 onion finely chopped onion• 1 clove of finely sliced garlic• 1 heaped teaspoon dried oregano• 2 x 400g tins of tomato• Sea salt• Freshly ground black pepper• A little wine vinegar• 1 large handful fresh basil• 3 large handfuls freshly grated Parmesan• 2 handfuls dried breadcrumbs• Chopped fresh oregano

  • Known for… world famous terra rossa soilCoonawarra

    Coonawarra is located south east of Adelaide on South Australia’s Limestone Coast. It is world famous for its prized strip of red terra rossa soil that covers an area 15km long and 2km wide. The vineyards enjoy a warm growing season, but winters are cold, with the maritime influence bringing cooling breezes and cloud cover. Approximately 90% of the vineyards in the region are planted to red grapes.

  • Veal Rack with Roast Potatoes

    1. Preheat oven to 210°C. Place veal rack roasts in a pan and lock racks together. Add potatoes and drizzle with olive oil. Season with salt and pepper. Bake for 35-45 minutes on medium.

    2. While the meat is cooking, put frozen peas in a saucepan of boiling water for 3 minutes or until tender. Drain and transfer to a bowl.

    3. Cut the veal into cutlets and serve with the roasted potatoes.

  • Pasta Primavera

    1. Cook the pasta in a saucepan of salted boiling water following packet directions or until al dente. Add the zucchini, asparagus, snow peas and squash and cook for 2 minutes or until snow peas are bright green and tender crisp. Drain and return to pan.

    2. Meanwhile, combine the cream, mustard, lemon rind and garlic in a frying pan over high heat. Bring to the boil. Reduce heat to low and simmer, stirring, for 2 minutes or until the sauce thickens.

    3. Add the cream mixture to the pasta and toss until just combined. Stir in the basil and season with salt and pepper. Serve with mix

  • Chicken Pie

    1. Preheat oven to 200C/180C fan-forced. Place 2 baking trays in oven. Grease eight small round pie tins.

    2. Heat oil in a large frying pan over medium-high heat then add chicken, bacon and mushroom. Cook for 5 minutes, stirring, then reduce heat to low. Add flour and cook, stirring, until a paste forms. Gradually stir in cream until a smooth sauce forms. Stir in herbs and cumin, add salt and pepper, then remove from heat.

    3. Place spinach in a microwave-safe bowl and cover then microwave on high for 3 to 4 minutes or until wilted. Drain.

    4. Cut 4 pastry sheets in half diagonally and line base and sides of each tin with pastry, trimming edges. Divide the potato evenly over pastry bases and top with chicken mixture, spinach and cheese. Season with salt and pepper. Brush edge of pastry with combined egg and milk.

    5. Cut each remaining sheet of pastry into 4 squares and place 1 pastry square over 1 pie. Trim edges and press to secure. Repeat with remaining pastry and pies then brush tops of pies with egg mixture. Make a small slit in the top of each pie to allow steam to escape during cooking using a small knife, then place pies on hot baking trays in oven. Bake for 25 minutes or until pastry is golden and puffed. Allow to stand for 5 minutes before serving.

  • Salmon & Potato Salad with Radicchio

    1. Place salmon, skin side up, on a plate and drizzle with oil. Rub salt into skin.

    2. Heat a large, non-stick frying pan over medium-high heat and add salmon, skin side down. Cook for 4 to 5 minutes or until skin is crisp. Turn and cook, covered, until cooked to your liking.

    3. Steam potatoes in a steamer until tender. Cool, then peel and cut into slices. Flake salmon into large pieces and add in a bowl with the potatoes.

    4. Add chopped radicchio and toss to combine. Drizzle olive oil to serve.

    Ingredients• 4 (200g each) salmon fillets, skin on• 2 tablespoons olive oil• 1 teaspoon salt flakes• Steamed chat potatoes, to serve• 1 head of radicchio, coarsely chopped
