The flavour of this cured cheese is complex and intense, with touches of aged wood, tanned leather or the ripening chamber. Its piquancy increases with maturity, and persistence in the mouth is long. Ibores Paprika Raw Goat’s Milk

Made with raw goat’s milk from the Serrana, Veratas or Retintas breeds which have been reared in a traditional way, on the pasture and foraged resources of the region. It is a cylindrical semi-hard cheese, traditionally prepared with paprika or oil on the rind. Due to its buttery flavour and aroma of wild grass, it’s a perfect accompaniment to a young Rioja and red meat.

Artisan blue cheese made in Villalba town, Lugo - Galicia, northern Spain. It is made with milk from Frisona, Pardo Alpina and Rubia Gallega cow breeds. Sherry Vinegar Bandera Roja

Vinagre de Jerez or Sherry Vinegar is a condiment resulting from the acetic fermentation of wine made from grapes grown within the Jerez-Xérès-Sherry and Manzanilla Sanlúcar de Barrameda. It exhibits a lovely persistent, strong, rich, winey flavour. Intense but pleasant acetic aroma, clearly reminiscent of the original wine, with hints of nuts, wine-soaked wood and spice.

Paprika

The paprika POTE is unique for the richness of its flavour and its unique aroma. Peppers are left on the vine until late in the season to allow their natural sugars to fully develop. After picking they are set out in the sun to dry slowly, then smoked over smouldering oak fires. The drying goes on very slowly for ten to fifteen days (quite a contrast to high heat commercial ovens that can do the deed in a matter of hours). This leaves the paprika with a fantastic, one of a kind, smoky flavour. Finally the dried peppers are stone ground into their powdered paprika form. As a result of its unique flavour, pimentón POTE brings something special to any dish in which it’s used. No other paprika will ever come close to matching its exceptional flavour. It is one of the small, often overlooked ingredients that´s essential to recreating the authentic flavours of many unique Spanish dishes. A quick sprinkling of Pimentón POTE can transform seemingly simple dishes like potato salad, scrambled eggs, roast pork, or baked chicken into really memorable meals. It’s also excellent cooked into rice dishes, along with a bit of sliced chorizo and some chopped Piquillo peppers. Pimentón POTE is available in hot, smoked and sweet versions so you can choose it according to your taste.

El Beybi 2013 - Red Wine 100% Tinta de Toro

Deep cherry colour with purple notes very intense. Fine aroma: blackberries, fruits of the forest with a touch of vanilla and cocoa. In the mouth it is full bodied, long lasting, round and has sweet tannins. There is a very pleasant oily sensation which adds to the sweet sensation of ripe fruits and hint of vanilla.
