1. Soups which re-create famous dishes In this case you should

stress out the fact that you can eat you‟re favourite food, but in a

healthier way (even if it‟s not always true, people think that the soups, like

the salads, are healthier and have less calories than the other dishes).

Bruschetta Soup

Served with Italian extra virgin olive oil and

home made baked garlic bread .

It will have the same ingredients of the

Bruschetta dish (fresh tomatoes, basil, garlic,

oil, with 1 slice of crispy and home made

bead on the top).

Pumpkin Cheese Cake

Served with law fat sour cream,

cinnamon and baked pumpkin seeds.

Why the seeds and the low fat cream? Because everyone loves cheese cakes,

you have to highlight the idea that this is a healthier version of the

original ones to make clients order it. People think that seeds are healthy,

so like a slow fat cream.

You can change the main ingredient

when the season is over, but keeping

the idea of the cheese cake with

other ingredients inside (carrots,

lemon).

Spanish Paella Soup

A wide selection of fresh fish, saffron rice served

with a slice of garlic baked bread on the top.

It will be like a seafood soup (in Le Chinois there is a lot of

fresh fish you can use). The unique thing of this soup is that

you add also the saffron rice , like the Spanish paella.

Zucchini Cappuccino Soup

Served with slow fat sour cream (or

milk).

Cappuccino Soup

Made with fresh mushrooms, and served

with a powder of bitter dark chocolate.

It will be a normal mushroom soup,

but with more cream or milk in it and

also with the addition of the bitter

dark chocolate.

You should serve both of them with a salted biscuit or a

salted muffin.

You could put both on them in the menu, so it will be

easier to understand that you‟re speaking about.

If you prefer the Champagne

Soup you should call it “Louis‟

(Vuitton) favourite”.

“A Present for you”

You can use a normal soup but serving it in a fashion

way. For example using a bow on the mug, like it was

a present. Also the ingredients should be a surprise !

Sweet Soups

They will be mainly a dessert, but if

you present them in a menu like a

soup, people will be more interested in

ordering them!

Zabaglione is a simple Italian dessert

made of egg yolks, sugar, and Marsala

wine. It is usually served warm, though it

can be served cold, or as a sauce.

You should serve it like a real soup!

White Chocolate and

Mandarin Soup

Served with spiced banana bread

You could serve it in a big

plate with in the middle

Made with organic turkey, and topped

with a “granola” of crispy baked

potatoes.

Because the turkey is usually served with

potatoes, why don‟t create a really special

topping made by crispy potatoes cooked in the

oven (so the dish will be lighter as well)?

cinnamon and baked pumpkin seeds.

Everyone knows and loves the cheese cake. If you stress out the

fact that is healthier and with low fat cream the people will

be more interested in that.
