‘Fungiculture’isthepracticeofproducingfood,medicine,andfurtherproductsbycultivatingmushroomsandadditionalfungi.Americansconsumeabout900millionpoundsofmushroomsayearandmostofthosearethewhitebuttonmushroomand,inthesamefamily,theCreminiandPortobellomushrooms.

Thebuttonmushroomwhich30yearsagoaccountedfor70percentofallmushroomproduction,nowrepresentslessthan30percentofmushroomsproduced.Estimatesarethatoystermushroomsnowaccountforcloseto20percentoftotalworldproduction.Consumerdemandhasdriventhegrowthandmarketpricesforthismushroomwhichrequireslesstechnologyandriskforcultivation,essentiallymakingthisaprofitablecropforgrowers.
