WINE… to be made in 26oz clear punted wine bottles, plain
flanged corks only, air space half an inch from bottom of cork, plain white labels supplied must have Class no [W1] placed 1in. from the bottom and in the centre of the bottle seams.

Remember: A judge looks for: 1…Absence of trade names on jars and lids 2…Well polished clean jars with label and correct covers
3…Bright characteristic colour and true flavour 4…Full jar with slight natural shrinkage 5…Waxed discs are not essential when using screw type lids
6…No cellophane covers on pickles/chutneys 7…All CURDS must have a waxed disc with a cellophane cover 8…All PRESERVES must have the FULL DATE on label

RECIPES.
CLASS P 30. SULTANA LOAF CAKE
Pre heat oven, gas 4 electric 350F 180C 2lb loaf tin well buttered/lined
8oz sultanas, 6floz strong cold tea, 8oz SR flour, pinch salt, 6oz Demerara sugar, 1 large egg. METHOD Soak the sultanas in the cold tea overnight in
mixing bowl. Add the SR flour and salt(sifted) into the sultanas and tea, mix, add the sugar and beaten egg.
mixing all ingredients together well. Spoon into prepared tin, spread evenly and bake for approx 1hr or firm to touch(fine skewer inserted into the centre of cake should
come out clean) Allow to cool in tin for 10 mins before turning out on to a wire cooling rack.

CLASS P31 STICKY GINGERBREAD CAKE
Pre heat oven gas 2 electric 120/140c
Grease and line a 7” square tin Ingredients 4oz butter/marg, 4oz soft brown sugar, 4oz black treacle,
6oz plain flour, 1 beaten egg, tablespoon ground ginger, 1 teaspoon ground cinnamon, pinch salt, teaspoon bicarbonate soda, good pt warm milk
Method Melt together slowly treacle, sugar and butter, stirring all the time.
Remove from heat stir in beaten egg. Sieve flour, salt, cinnamon and ginger.
Stir into melted mixture. Sieve bicarbonate of soda into a bowl and add warm milk. Pour into prepared tin.
Bake for approx 50-60 mins, cover after 40-45 mins if needed allow to cool before removing from tin.
