To be frank, this week I’m talkingwieners, as in anything and every-thing hot dogs! Things are defi-

nitely heating up this summer as every-one’s favorite “dog” in a bun takes frontand center. Regarded as one of America’ssignature foods, the basic hot dog conceptbegan in 1874 when Charles Feltman, aBrooklyn resident, began serving beefsausages in a way that was never beforeconceptualized: in the form of sandwich-es! Add to that ketchup, mustard, onions,relish, what have you, and it’s comfortfood at its purest.

However, nowadays many food estab-lishments are teaching old dogs new tricksand churning up revolutionary master-pieces featuring none other thanAmerica’s top dogs. Imagine a fusion offlavors such as kim chee, sushi rice, chiliand more all encompassing a simple hotdog. My, how times have changed!

So, this week on my quest for somedelectable dogs, I dropped in on some ofthe best Ono, You Know establishmentsthat are pushing the humble hot dog toeven greater heights.

Opulicious RestaurantHungry for some ono local grinds?

Well, twist on over to OpuliciousRestaurant on Coolidge Street for a one-of-a-kind dining experience completewith mouth-watering local favorites justlike mom used to make, and impressiveballoon creations that never cease to wownew and loyal patrons.

“Opulicious is the first balloon-themedrestaurant in the nation,” says owner andchef Kelli Kay Chun, who also is a skilledballoon artist at that. “The kids really taketo the balloon animals.”

And while the array of adorable balloonanimals is quite astounding, with hot dogon the brain, I couldn’t think of anything

finer than Opulicious’ famed KC WaffleDog ($3.50), which features a scrump-tious hot dog bundled inside a specialwaffle batter, which Chun explains ismade from a secret recipe. The dish isserved a la carte and is accompanied by azesty relish for dipping. Add cheese toyour KC Waffle Dog for an additional 50cents. According to Chun, this longtimelocal delight is a “blast from the past,” asKC Waffle Dog was the dish of choiceduring the ’50s, ’60s and ’70s.

“We are cooking ourway through Julia Child’scookbook,” Grippo sayswith a smile. “We puttogether this incrediblemenu based on what Julia

Child has established, andwhen you look at her cook-books, such as Masteringthe Art of French Cooking,a lot of the food that we’recelebrating is from yearsbygone. We’re really rein-venting a lot of these itemssuch as Lobster Thermidor,and it’s going to be anexciting time,” she adds.

In addition, guest chefappearances and a KahalaWine and Food Festival: ACelebration of France, and aBetter with Butter high teain the Veranda as well as abreakfast brunch buffet inthe resort’s Plumeria BeachHouse will captivate all

appetites during the monthof August. Also, a la cartemenu items made fromrecipes found in Child’scookbook will be featured inthe hotel’s restaurants.

“We’re very passionateabout Julia Child,” Grippodeclares. “Keep in mind,Julia was a woman who didnot go to culinary schooluntil she was 39 years old.She attended Le CordonBleu, which is touted asone of the best culinaryschools in the world. Shegraduated at the top of herclass against all odds, asshe was the only female inher class and no one tookher seriously,” sheexplains. “It’s really ourdesire that people willcome and enjoy our tributeto this inspirationalwoman. As for Hirabayashi, hebelieves Child helped pavethe way for many aspiringchefs, including himself.

“Julia Child reallybrought French cuisineinto the homes of America.She made it look so simpleand made people realizethat it wasn’t impossible tocreate. Julia loved butterand cream so, of course,that’s emphasized in thecuisine,” he says, noting ahandful of hearty JuliaChild-inspired dishes suchas French Onion Soup,Boeuf Bourguignon,Pommes Frites, WafflePotatoes, PommeParisienne, RaspberryCharlotte, PommeLyonnaise, Gratin andPotato Tarte, whichpatrons can expect tofeast on all month long.

“Julia Child taught usabout the passion of mixingingredients and that every-one has a cooking style alltheir own,” Grippo shares.“The one thing that Ithought was always greatabout Julia was that shenever gave up — shecrossed boundaries andwent on to become one ofthe best chefs that we willever know in our lifetime.”

Who or what inspires you as a chefand owner? My biggest inspiration isthe cuisine itself. We aim to offer ourcustomers really good, Hong Kong-styleChinese food. If you could serve food to a celebrity,who would it be and why? What dishwould you serve? If I could serve ameal to any celebrity, it would have tobe Jeremy Lin because I love to watchbasketball and I really admire his awe-some skills. I would serve him some ofour highest-quality seafood, includingmy specialty Cold Combination Platter,Live Lobster, Crab and Fish Maw soup.

What is your favorite dish on themenu? It is really hard to choose justone, because we have so many dishes tochoose from between our lunch and din-ner buffets as well as our signature fam-ily-style dishes. If I had to choose,though, my No. 1 dish would be our

Honey Walnut Shrimp. It is my favoritebecause we use fresh fruits to mix with themayonnaise for the sauce, which gives ourversion of this traditional dish somethingspecial. It just melts in your mouth when itcomes out to the table and it’s one of ourmost popular menu items.

Is there a dish that you create that’snot on your menu, but available uponrequest? Some of our regular customersoften request our Deep Fried Mochi Duckeven though it is not on the menu. Theduck is de-boned and stuffed with friedmochi rice to give it a delicious flavor.

With Paesano’s popularManoa restaurantundergoing renova-

tions, its long list of fans willneed to take the short drive to itsWaimalu location. That’s OK.The oh-so-good appetizers areworth a little added effort.

Upon arrival you may want totry Homemade Cold Antipasto($10.90), especially if you aredining with friends. The freshsalad is made with romaine let-tuce, roasted bell peppers, car-rots, olives, homemade sweetand sour pickles, salami, pro-sciutto, anchovies, Fontinellacheese and topped with an oliveoil vinaigrette. The sweet pep-pers and carrots balance out theflavors of the salami, prosciuttoand anchovies, and the dressingis bright, slightly sweet andtangy. You can try eating thismassive plate yourself or shareit to save room for Fresh ClamHamakua ($13.90).

The clam dish isn’t on themenu, but feel free to order it.

Fresh clams are sauteed in gar-lic, Hamakua mushrooms, chiliflakes and a white wine buttersauce. The flavor is just awe-some as each bite is soft, sweetand salty with a fresh hint of cit-rus. That pool of butter sauce onthe bottom of the plate serves asa delicious dipping destinationfor the homemade bread that isbaked each morning and deliv-ered hot, flaky with a soft, but-tery interior.

Another, slightly more spicydipping option can be found in

Homemade Hot Antipasto($15.90). The deep platter ispiled with clams, calamari,mussels, jumbo shrimp andsauteed with garlic, olive oiland a Cajun pepper buttersauce. Each sea-found morsel iscovered in the deep red saucethat muddies up the fingers inthe best way possible.

If that’s not enough reserva-tion persuasion, Hot Carpaccio($14.90) just may be what getsyou motivated. Thinly slicedfilet mignon is baked and toppedwith mushrooms and a home-

made butter Maggi sauce. Themeat is tender and the mush-rooms do their job absorbing allthe flavors to make the carpaccioa delight by itself or on top ofthe fresh bread we can’t stoptalking about.

It’s easy, it’s healthy andyou’ll feel great afterwards.

That’s another way of sayingyou should check out the shabu-shabu at Hanaki Restaurant.

It’s just a short, pleasant driveinto Manoa Valley, and thereyou’ll find Hanaki where it’sbeen for years at the back ofManoa Marketplace. But inside,the owners and managementhave committed to a healthierway for families and friends toenjoy a meal together. For threeyears now, the restaurant hasstayed on the lean and green sidewith meals self-cooked in a com-

munal soup at each table, but itdoesn’t skimp on the ingredients.

“It’s healthy but filling, decep-tively filling,” admits MarkMitsuyoshi, who has workedhere for 12 years and remainsslim. “Plus, you have the flavorfrom the soup in the food, andyou can choose a different brothand a different meat each time,so it never gets old.”

Different choices, yes indeed.Choice No. 1 would be, whichsoup base do you want to startwith? There’s konbu, miso,curry, seafood, spicy, beef andsukiyaki, all priced at $5, andhealthy herb soup for $9. Then

the restaurant offers about 35types of meat or fish to cooktableside in your selected brothand 40 kinds of vegetables(almost all Hawaii-grown) — allpackaged fresh in colorful bowlson chilled shelves, with pricesranging from $2.50 to $4.50,except for crab and butterfish.Several dipping sauces and fla-vored garnishes such as gingerand green onions complete thearray of items. Rice and hot teacost $1.50 each.

While a few locals still come inthinking it’s a buffet operation,Mitsuyoshi says the restauranthas gained many converts fromthat group, and some havebecome regular fans of shabu-shabu. One gentleman fullyembraced the concept, he recalls.“He grabbed everything and hadfun creating a giant miso ramen!”

For adults who get possessiveabout their favorite morsel as itsimmers and floats around in the

electric pot, Mitsuyoshi suggeststhey put it on a skewer to “claim”it, or cradle it in a slotted spoon,both of which are available nearby.

Children also jump into thesoup, so to speak, without evenrealizing they are consuminggreen things that are good forthem. “The kids get a fully bal-anced meal, and it’s kind of funfor them to choose an item andcook it themselves,” Mitsuyoshisays. “Of course, some of themalso head straight for the hot dogbowls and the shave ice.”

Shave ice? Yes, every shabu-shabu customer can help them-selves to as much shave ice as

they want — with several flavorchoices, of course — at no extracharge. A good way to top awarm meal. Still other temptingdesserts can be had for $1.50each. Sweet treats on displayrecently were Mocha ChinoDeelite with 100 percent Konacoffee, chocolate and an Oreocrust; Banana Crunch withpeanut butter, chocolatemacadamia nuts and Oreo crust;Mauna Kea Deelite with haupia,fudge, coconut, mac nuts, Dutchchocolate and Oreo crust;Melona ice cream bars; and thenewest dessert, Green Tea piewith azuki beans, vanilla and

honey graham crust.Another choice: You can

choose not to cook your own. Hanaki offers ample ramen

bowls of all kinds from its ownkitchen ($11.95 or $12.95), as wellas donburi bowls ($11.95) andcombination plates of two ($9.95)or three entrees ($12.95) servedwith rice and miso soup. Thechoices listed here also can comeas side orders of $4.50 each:shrimp tempura, fried fish katsu,chicken kara age, tako yaki, home-made gau gee, deep-fried oysters,teriyaki chicken, vegetable tempu-ra, grilled butterfish bones, teriyakitofu and misoyaki butterfish.

Now for one final lesson onthis culinary tour. The termshabu-shabu apparently wasinspired by the swish-swishsound of cooking the meat in thepot. The name Hanaki means“precious flower.” So far, theyhave not put flowers on the menu— but some blossoms are edible,and they might taste great float-ing in a sukiyaki soup base anddipped in the house secret sauce.

Pancit Canton also is a customerfavorite. “We use a fresh egg noodle,”Joven says of the dish. It also comes withpork, shrimp and chicken. “The guest hasthe option if they won't want to eat meat,they can substitute it for tofu, or allshrimp, or all vegetables.”

Lumpiang Shanghai is Max’s take on a

spring roll. “We make it from scratch,”Joven says. “The sweet and sour sauce ishomemade, too. We cook our ownsauces.”

Complete with to-go boxes and areusable bag, the Picnic Package isdesigned to be enjoyed outdoors. All cus-tomers have to do is call in their order andpick it up — and they’ll have a perfectlypre-made picnic.

Another treat that is perfect for the sea-son is Halo-Halo ($5.70), which is adelightful dessert with ube ice cream thatcomes with coconut, jackfruit, beans gel-atin, flan and yam. “It's the most popularamong all of the desserts,” Joven says.

While customers are busy enjoyingtheir tasty summer treats, the chefs atMax’s of Manila are busy in the kitchenconcocting even more new dishes.Currently, the Waipahu location offersbreakfast on Sundays, and the Dillinghamlocation also is hoping to start offeringbreakfast soon. Joven estimates that thebreakfast menu could be ready by earlyfall. She explains that it would be a popu-lar homestyle Filipino breakfast that con-sists of beef, fried rice and eggs.

Max’s Packs Up thePerfect Summer Picnic

Max’s of Manila first began as a small cafein Manila in 1945. Although it had just afew menu items, it quickly became a hot

spot for American troops living in the city. When thecafe created its original fried chicken recipe, its popularity soon spread.Today, there are Max's restaurants throughout the Philippines and in

California. Locally, the Waipahulocation opened in 2006, followedby the Dillingham restaurant twoyears ago.

Although that little cafe hasevolved into a franchised enter-prise, it has not strayed far from itshomestyle fare.

“With all of the conveniencegoods available in the market, westill make it a point to start fromscratch,” says Max’s Dillinghamoperations manager ElizabethJoven, who first started working atMax’s corporate office in thePhilippines. “Like with our lumpia, westart ours from scratch.

“That is the trademark that Max’s hasbeen known for. It’s not just about the

business, part of it also is taking care of the priorities.” Those priorities, shesays, are serving homemade Filipino favorites.

“Pretty much everything is the same as in Manila,” Joven says. “Everythingis modeled after the Manila restaurant. We try to keep the menu as muchthe same here as it can be.”

Luck is the theme at Lung FungChinese Restaurant, as evi-denced by its colorful dragon-

and-phoenix decor — both mythicalcreatures are said to symbolize goodfortune in Chinese lore. That’s apretty good reason for dining at thepopular eatery, which has been serv-ing customers for decades on Oahu.After all, everybody could use a bitof luck and good fortune these days.

But, for hungry non-meat eaters,there’s an even better reason to dinehere. As luck would have it, LungFung is vegetarian-friendly, accord-ing to manager Eddie Ma.

“When people order we canmake it vegetarian,” he says.Within reason, of course, as notevery dish can be modified withoutcompromising on flavor and quali-ty. But even if you don’t feel com-fortable making special requests,Lung Fung has it covered.

For example, in its Vegetables sec-tion (conveniently for vegetarians),the menu lists Salt and Pepper Tofu($9.95), a savory dish in which thetofu is deep-fried, then simply stir-fried with garlic, salt and pepper.

“It’s a very popular dish,” assuresMa. “The vegetarians like it.”

Ma adds that Lung Fung also canprepare a sweet and sour tofu dish,

if requested, andthere’s no luck involvedat all — just good cus-tomer service. It’s a signof the times that restaurantsare moving out of their comfortzones to accommodate not only reg-ulars but prospective patrons aswell, although some, like LungFung, have always put the customer

first. In any case, this is a very pos-itive trend for non-meat eaters, andone that should be encouraged andembraced.

So the next time you’re cravingChinese food, head over to theEast side and feel free to orderyour favorites just the way you likethem — meat- and fish-free — atLung Fung.

“We wanted a place to go to that’s 24hours,” says Jon Ishimi, of the reason whythe trio decided to open Kissaten. “Wedecided to open a coffee café that servesgood, hot, quality meals 24 hours a day,seven days a week.”

Kissaten’s around-the-clock service hasindeed made it a popular spot for cus-tomers of all ages. Although kissatentranslates to an upscale “coffee shop” inJapanese, the eatery provides much morethan just coffee for its clientele. Tabapoints out that Kissaten has differentmenus for breakfast (6-11 a.m.),lunch/dinner (11 a.m.-9 p.m.) and late-night specials (9 p.m.-6 a.m.).

Upon the eatery’s opening, KissatenMelt ($9) — composed of shaved pastra-mi, mozzarella, caramelized onions andwhole grain mustard aioli on sourdoughbread — was its signature dish. However,

Ishimi notes that Turkey Pesto Melt ($8)— a medley of sliced turkey breast, bacon,mozzarella and pesto aioli on foccaciabread — is now the most popular amongcustomers. Other customer favoritesinclude Smoked Salmon Salad ($8) —smoked salmon, baby spinach, citrus andtarragon vinaigrette — and Clam Chowder($6; additional $2 for soup in a toastedbread bowl).

In addition to its regular menu items,Kissaten has a variety of specials thatchange daily. If the specials do well andare popular among customers, they even-tually become items on the regular menu,according to Taba. Examples of specialsinclude Roasted Beet and Chicken Salad($9) — a mixture of beet chunks, babyspring greens, tomatoes, roasted chickenbreast, toasted mac nuts and creamy bleucheese dressing — Gnocchi ($9), with a

combination ofasparagus, mush-rooms, bacon,browned butter, gar-lic and a poachedegg, and Linguini Bolognese ($9).

“Now that we came up with so manyspecials, we don’t sell as many of theKissaten Melt as we used to when we firstopened,” Ishimi says. “We’re going tocome up with breakfast specials, too.”

For the hot and humid summer monthsahead, Taba emphasizes the eatery’sunique and fresh salads, as well asKissaten’s variety of drinks. Especiallypopular drinks include Green AppleCrème Soda ($2.75 small, $3.50 medi-um, $4 large) and Dark ChocolateStrawberry Latte ($3.75 small, $4.25medium, $4.75 large).

The items on Kissaten’s menu are avail-able for dine-in ortakeout. Cateringservices also are pro-vided for customers.

“We can do cater-ing for parties or spe-cial events,” Tabastates. “We cater forany size party; ourcustomers canchoose items

from the menu and customize their order.We can shut down for large special eventsas well.”

She emphasizes that Kissaten also takesreservations for larger parties on a first-come, first-serve basis.

“We’re really family-oriented,” Tabasays. “We’re able to take reservations forparties and we can accommodate groupsup to 15 people.”

Besides the ever-changing daily spe-cials, other modifications are on the hori-zon for Kissaten.

“We’re looking to expand our menuoptions — giving more options, as far asthe combos and soup additions go,”Taba says.
