Lately, I’ve been falling hard forburritos — literally. There’s justsomething about this tantalizing

Mexican creation that takes my feetright out from under me. Let me explain. This past week, the

klutz in me was on full display after Ihad just feasted on an amazing burri-to. While descending a staircase, Imissed the last step and — you canimagine what happened next —briefly caught air before ultimatelyfalling flat on my face. Embarrassing!With a scraped elbow and a bit of abruised ego, it’s safe to say that I total-ly “ate” it!

I’ve since recovered from my mis-step and I’m well enough to share withyou some of the tastiest burritos outthere. But watch your step, loyal read-ers, as these beastly creations mayknock you over!

Wahoo’s Fish TacoI don’t know about you, but after a

day at the beach I definitely work upan appetite. What I’ve found is thatnothing can fill this surge of hungermore than a tantalizing burrito fromWahoo’s Fish Taco. Specializing in“California-Mex” cuisine, Wahoo’s FishTaco, located at Ward Gateway Centerand Kahala Corner, makes it a point toserve everything fresh, utilizing onlythe best of ingredients. burritos and more — my choicealways happens to be Wahoo’s famousOuter Reef Burrito ($7.99), featuring agigantic flour tortilla stuffed to thebrim with ohee rice, cheese, gua-camole, sour cream, savory black orspicy Cajun white beans, lettuce orcabbage, your choice of filling (black-ened or flame-broiled fish, blackenedor flame-broiled chicken, pork,shrimp, grilled steak, mushrooms,banzai veggies or tofu) and fresh salsa. Talk about complete and utter good-

ness with every bite! Imagine succulentpieces of meat or fish combined with azesty salsa and an array of veggies,combined with hearty rice and tortillato give it substance. Sounds delicious,doesn’t it?To kick it up a notch, I prefer to

the corner, there’s some talk righthere at home about where to findlocal cuisine fit for kings andqueens. Well, there’s really no needto go as far away as England to betreated like royalty, because at4Kings Kitchen on South KingStreet, owner and chef KapoKealoha and business partnerChristopher Kegler have been serv-ing up the highest quality of gour-met plate lunches — utilizing onlythe finest and freshest ingredientsin the process.

This preferred eatery amonglocals began its reign earlier thisyear and Kealoha was happy toshare with Dining Out just whatmakes this restaurant the avant-garde of your favorite local fare.

DO: You’ve started your ownkingdom of sorts at 4Kings Kitchen.Is this your initial venture into theculinary industry? And has openinga restaurant been a dream-come-true of yours?

Kealoha: Yes. This is our firstbusiness venture, and opening arestaurant is always something thatI wanted to do. I love working with

food. I don’t know anyone in ourbusiness who would take a jumplike this (opening their own restau-rant) if they didn’t enjoy workingwith food.

DO: It’s obvious that you’ve comefrom a culinary background. Whatpast experiences brought you towhere you are today?

Kealoha: I worked as the execu-tive chef of Tiki’s Grill and Bar forfour and a half years before this andalso worked at the Four Seasons inthe Bahamas, Jackson Hole, Miamiand East Palo Alto.

DO: What can people expect fromthe menu when dining at 4Kings?

Kealoha: Basically, we servegourmet plate lunches and serveorganic when we can. When peoplecome here they can expect goodfood for a reasonable price. It’s notyour normal plate lunch fare, but I’dlike to think that we produce greatfood.

DO: Would you agree that it’s abit more upscale than your every-day plate lunch?

Kealoha: Definitely. There’s a lotof attention that’s put into everydish that’s prepared. I like to think

that everything startswith the freshest prod-

ucts that you can get —fresh fish, locally raised

beef, fresh organic vegeta-bles. From there, everything is

handled as it would be in a finedining restaurant. We present thefinished product to the customerin a manner that you wouldn’t real-ly expect from a plate lunch place.

DO: Quality is key and youserve many local favorites here.How did the menu come to be?

Kealoha: The menu is derivedfrom things that I loved to eatwhen I was growing up, althoughI’ve added some little twists hereand there. I add my spin on a lot ofthe foods. I put this menu togetherbecause I couldn’t get this stuffevery day and now I can (laughs).

DO: What were some of yourfavorite foods while growing upthat are now specialties on the

menu?Kealoha: My mom mademochiko chicken fairlyregularly, so Chef Kapo’sMochiko Chicken ($10)

is easily one of my favorite items,along with the “Not Your NormalLoco” ($11), a house-made fishburger with fresh caught mahimahi, served with shiitake mush-room gravy and two eggs yourchoice of style. The ChineseSteamed Fresh Island Fish ($11) isanother customer favorite,steamed with lup cheong, shiitakemushrooms, green onion, carrots

and ginger. Of course, it’s madewith fresh fish caught daily. Mygrandparents loved pork chops,and the Red Wine Braised Chops($9) features well-seasoned porkchops, slow braised in a red winesauce. All entrees come with achoice of white or brown rice anda choice of MA‘O Farms Sassy MixSalad or house-made kim cheeand cucumber kim chee.

If you’re hungry for a sand-wich, we have many to choosefrom. But the Kim Chee MahiMahi Sandwich ($10) is reallygood, made with my own kimchee atop pan-seared mahi mahion an onion roll. All sandwichesare served with a choice of friesor MA’O Farms Sassy Mix Salad.

DO: What are the benefits tousing local products and pro-

duce? Where do you see yourrestaurant headed in the nearfuture?

Kealoha: I use local productswhenever I can. I’m in the processof trying to bring in Kauai grass-fed beef and hope to add a couplemore items to the menu with that.Sustainability is important. Duringmy culinary training, all the chefs Iwas working under always out-sourced from the local farms inthe area. You always want to usethe freshest ingredients you can,as it adds another level of com-plexity to the food. Therefore, webring fresh products in on a dailybasis.

We definitely want to open morelocations in the future and keepgoing with our catering services.

Saigon House gets it. The next time you’ve got

your appetite set on a steaming bowl of pho, look nofurther. The restauranttypically uses a beefbroth for its pho, but ifyou choose to go meat-less, owner MandyNguyen and staff willhappily oblige. “We dohave a vegetable broth,”she says. “It’s not on themenu, but if theyrequest, we use mush-room broth.”The Pho Tofu

As the spring graduationseason approaches, sodoes the season for plan-

ning and attending these typeof ceremonies. Graduation par-ties are part of local tradition—the perfect way to celebrate theofficial end of one’s highschool or college days withfamily, friends and great food.

A Catered Experience specializes in coordinat-ing these events and has created special gradua-tion party packages that help organizers offergreat-tasting quality dishes for guests while elimi-nating the hassle of cooking, storing and present-ing food for large groups. “We can customize any-thing to the customer’s needs,” says manager RonHattori.

When customers order one of the diverse gradu-ation packages that are on special through August,and order for a minimum of 25 guests, they willreceive free delivery to Pearl City, Mililani orWaipahu as well as disposable paper plates, nap-kins and utensils. �ith its recent grandopening March 6,SushiSan might be con-

sidered the “new kid on theblock” in the neighborhood ofKaiten-style sushi restaurants.However, owner Jay Kim haswasted no time bringing new fea-tures and flavors to create aunique sushi dining expe-rience for his customers. SushiSan is similar to other

Kaiten-style sushi diners, in thatcustomers can choose variouslypriced dishes from a conveyorbelt that winds throughout therestaurant. SushiSan, however,increases the customer’s selec-tions by providing not one, buttwo conveyor belts, each loadedwith an assortment of dishes. “We have two layers of convey-

or belts that go in different(opposite) directions, so peoplecan have more choices,” Kimexplains. Another unique feature of

SushiSan is its self-serve hotwater faucets. Instead of waitingfor refills of tea, this “DIY” fea-ture was implemented toincrease customer satisfaction.Below the two conveyor beltscarrying food dishes is anotherbelt, providing customers withtea bags and empty cups.

“The water faucet is for hot tea,” Kim says,gesturing to the innovative feature. “Yougrab the cup and put it under the faucet andthe hot water just goes in, then you simplyput in the tea bags.” In addition to these restaurant features,

SushiSan is distinctive because of its eclecticmenu, according to Kim. “Our resources make SushiSan different

from other restaurants,” Kim says. “I wantedto provide my customers with a high qualityof the fish at a reasonable price. We create a

types of menu dishes using really goodresources. We try to concentrate oncreating more variety on our menu.”Some of SushiSan’s most popular

menu items include the Beef Tataki($3.20) and Maguro Tataki ($3.20).While the Beef Tataki features rice,sliced onions and a sliced rare beef thatis torched before serving, the MaguroTataki is similar except it includes asliced tuna that also is torched beforeserving. The Kappa Spicy Tuna ($2.20)is another highly requested dish,according to Kim. “The Kappa Spicy Tuna has spicy

tuna and rice surrounded not by nori,but by cucumbers,” Kim says. “Peoplethink that’s really interesting; a lot ofpeople have tasted it and really love it.”Another customer favorite is the Kim

Chee Gunkan ($2.80) — lightly fried andseasoned kim chee as a topping on rice

and nori — the most recent addition tothe restaurant’s menu. However, one ofSushiSan’s signature dishes is itsCombination (Hot) Donburi ($5.80).

“This donburi is a hot stone bowldish,” Kim says. “It comes with butteredand seasoned rice at the bottom. Unagi,Maguro, Salmon, Ika, Ebi, Ikura andTobiko are toppings on the rice. I thinkthat one is very popular; we have agood reputation for that dish.”The variety of dishes on SushiSan’s

menu range from $1.50 (Brown Plate) to$4.80 (Black Plate), with an assortmentof donburi, temaki and side dishoptions as well. The average pricerange per customer would be $12 to$13, according to Kim. When asked about upcoming

changes for SushiSan, Kim is quick toanswer in terms of expanding therestaurant’s menu.

“I’m mostly trying to focus on devel-oping my menu,” he says. “I wantto put more variety of foodsusing different resources (onthe menu). We also have atakeout menu we are devel-oping, too … I’m just tryingto make more choices formy customers.”For Kim, seeing cus-

tomers — especially fami-lies with children — enjoy-ing their food truly “wraps up”his vision for the restaurant.“I want my restaurant to have a com-

fortable atmosphere so anyone cancome in,” Kim says. “I want to see morefamilies have a great time together. I loveto see kids eating and families seeingtheir kids enjoying it (the food). In start-ing my own business, that’s the wholepoint seeing my customers happy.”

TheAppetizer Platter ($36) allowsdiners to sample Fat Greek’smost popular pupus on one bigplate. The hearty platter servesfour people, and features hum-mus (blended chick peas),babaganoush (eggplant dip),spanakopita (baked spinach andfeta cheese), feta cheese andolives, Greek fries (with or with-out garlic), merguez sausage(spicy lamb), Greek salad, mus-sels (infused with ginger, garlic,

capers and a special sauce), dol-mades (grape vine leavesstuffed with rice and herbs) andstacks of warm pita bread. “Nobody else makes platters

Trying to narrow theorigin of curry downto any one country

can be a difficult endeavor,but there’s no disputing thespicy dish enjoys a firmfoundation in Indian andPakistani cuisines, and is acommon delicacy inSoutheast Asian countriessuch as Indonesia, Malaysia,Laos, Cambodia andThailand. Historically, curry, with

its zesty spices and blendof herbs, was introduced toThailand by monks travel-ing from India centuriesago. One of the modern-daybeneficiaries of this dish isPatrick Chang, owner ofBangkok Chef, who invitesdiners to experience sever-al Thai curries on his menu:

green, yellow, panang andred curry. Red Chicken Curry

($6.25), for example, isserved for both lunch anddinner.“When you go to

many curry dishes outthere. In the streets, thereare big pots of curry

and rice and you canchoose which type youwant. It is just part of theeveryday life,” says Chang,who now has Bangkok

Gaeng phet, or curryin Thai, is a uniquecurry paste made pri-marily with fresh ratherthan dried herbs.

“One thing aboutThai curry is that weuse lemon grass andlime leaf (kaffer). Thatgives it a good flavor, abeautiful aroma,”Chang adds.

Bangkok Chef’s redchicken curry blendssliced chicken breast,bamboo shoots andeggplant into its red

curry paste. The paste con-

sists of red chilies, ginger,honey and a few otheradded spices, which are allmixed with coconut milk.“Curry without coconut

milk would not taste asgood, so coconut milk isone of our main ingredi-ents,” says Chang.Finishing this combinationis brown rice, which min-gles nicely with the chick-en, eggplant and red sauce. “Our brown rice is super

good. It is not like brown riceyou get at your market; it isjasmine brown rice,” he says.

I adore food, right? Some people eatto live, but I live to eat! (I know —surprise, surprise.) And while it’sdefinitely difficult for me to pick a“favorite” restaurant, I must admitthat El Charro Mexicano AieaRestaurant is one that’s hard totop.Having just opened its doors

six months ago, El Charro isowned and operated by husband-and-wife team John and SofiaRamirez. John is from Mexico andSofia is from Uruguay, so judgingfrom their Central and South Americanbackgrounds alone, I knew I was in foran incredible culinary treat.Sure enough, on my early morning

venture to this Mexicano restaurant,onthe third level of Aiea Shopping Center,Sofia kindly presented me with twoparticular burritos that were, well, outof this world!The first to grace my palate was the

SUPER Charro Burrito ($12.99), and thename says it all. Of all burritos, thisone entices diners with a 12-inch flourtortilla stuffed with grilled chicken,steak, rice, beans and cheese. Topped

with a special El Charro red sauce andmelted cheese, the burrito is servedwith traditional rice, beans and pico degallo.“A lot of customers order the SUPER

Charro Burrito because they like the fla-vor of our carne asada steak,” Sofiasays. “What we strive for at El Charro isto give the best fresh-tasting Mexicanfood to our customers, even servingfresh, homemade salsa and chips.”A favorite burrito of Sofia’s that is not

on the menu, but can be ordered a la

For more than 40 years, Larry’s Bakery has been win-ning over locals with its scrumptious, home-bakedproducts that to this day make loyal fans giddy in

anticipation of that first bite.“We see customers from 20 years ago coming back,

and they talk about how they would get up in the morn-ing and they would be so excited to see the box fromLarry’s, and then they would dig in to see what kind ofitems were in there,” says Iris Yafuso, who grew up in thebaking biz after her father, Larry, opened the originalLarry’s Waiau Bakery back in the late 1960s.“Those customers,” Iris adds, “they come to the win-

dow and ask, ‘Don’t you make this anymore?’ or ‘Iremember this and this and this,’ so we started makingthose (items) again.”

A Sweet Tooth ForAll Things Delicious

Sink your teeth into a slice of sweet nos-talgia at Larry’s Bakery, where ownersIris and Lance Yafuso are using the

same recipes developed by their father more than 40 years ago.“My dad was Larry, and he opened the business,” Iris explains.Larry opened the original Larry’s Waiau Bakery in Waimalu

Shopping Center in the late 1960s. Sadly, he passed away at theage of 49 from a brain aneurism, leaving his wife and children tocarry on operations.

“My mom took over the whole business,” says Iris, who was only9 at the time. “My brothers were still in high school, and I was theyoung baby back then. It was just kind of crazy and we got kind ofthrown into everything.

“It’s totally family-run,” she adds of the tiny storefront, now locat-ed near Target in Salt Lake. “It’s my brother and I who are doingeverything, and we have our classmates and friends and familyhelping us run everything.”

And she means everything. Every pastry, cookie, cake, pie andbread loaf is made from scratch, by hand and fresh every morning.

“Lots of it is old recipes that we just continued on,” Iris says offamiliar favorites like Cinnamon Bread ($4), Apple Cinnamon Bread($4.50), Blueberry Cinnamon Bread ($4.50) and Soft Cottage Bread($4) that fly off the shelves daily.

“The newer stuff,” she adds, “comes from brainstorming, like, oh, let’stry this just for us to eat, but then it’s like, oh, wow … just making stuffthat we think would be ono and we want to eat but it turns out to besomething crazy good.”

One example of this experimentation is their popular White ChantillyCake ($12.50 and up), concoted to accommodate a niece who has anallergy to chocolate.

“We started making it at home for our parties, then we started doingit for our customers and now it’s just taken off. It's crazy,” Iris says.

“We’re also doing the cakes and bringing out the new ideas like thecupcake bouquets, the decorated cookies, all the fun stuff — the funstuff we never got to do before but now we can,” she adds.

“But we gotta thank my dad, who left all this behind for us.”
