Recype:Ingredients     5 green bananas.     2 tablespoons butter, and a little more to rub on hands to prepare the dough.     1 egg (optional) or a few tablespoons of cooking water bananas.     ~ 1 teaspoon salt     For filling tortillas banana:     ~ 1 ½ cup cottage cheese or shredded cheese, can also use shredded mozzarella cheese.     Other ideas to fill tortillas green chorizo, fried shrimp, chopped beef or pork, or any other filling you would like to try - just make sure that the fillings are cooked (except cheese).

Preparation:

For the mass of green bananas:1) Wash and peel the plantains under running cold water, this helps prevent stains bananas.

2) Cut 4 bananas in half. Keep the remaining peeled banana in a bowl of cold water.

3) Boil several cups of water in a large saucepan and add 4 bananas.4) Cook until soft, about 30-40 minutes depending on how green they are and the size / variety.5) Remove from heat and let the cooked bananas rest in the water where they were cooked until they cool a bit, but they are still warm. If you take them out of hot water can get really hard.

6) Shred or Raller cooked with masher or grater and then mix with egg (lightly beaten) butter and bananas.

To form the tortillas green banana:    7) Form small balls of green bananas.

8) Make a hole in the center of each ball and fill with cheese or stuffing your preference.

9) Flatten the balls until they are as thick tortillas. They can be cooked immediately or they can be stored in the refrigerator (for 24 hours) until ready to cook. If refrigerated, allow the tortillas are resting for a few minutes until they are at room temperature before cooking.

10) Cook green tortillas on a flat grill or griddle, or a lightly greased hot pan until browned on both sides.

11) Serve immediately tortillas green, can be used alone or with sauces to taste.
