Once again we start a new season after 87 years from the first opening of this historical and wonder-ful place of Costa Brava. And we do it as every year with a renovated commitment to make your stay at La Gavina a memorable one. Iniciamos una nueva temporada más 87 años después de la apertura de este histórico y maravilloso lugar de la Costa Brava. It is impossible to speak of La Gavina and S’Agaró without paying an homage to his passionate spirit, innovative and adventurous project. He created, along with architect Rafael Masó, an unmatched and remarkable garden city who captivates us still today.
The Hostal de la Gavina has managed to maintain its original style and its rich historical heritage thanks to its ability to adapt seamlessly over time, thus history and beauty have been integrated with the simplicity of everyday world. Blending tradition with present day inspiration was the impetus behind La Gavina whose antique art collection alone is a reason to stay.
As a multigenerational family-owned Hotel our own identities are reflected in focusing the different elements that are inherent in the excellence of the services that are devoted to our guests. A personal approach where every whim is catered for and every desire fulfilled is a must for us.

Sería imposible hablar de La Gavina y de S’Agaró sin tener en cuenta la pasión, la innovación y el espíritu aventurero del proyecto del Sr. Ensesa que creó junto con el arquitecto Rafael Masó, una ciudad jardín única e incomparable que todavía hoy día nos cautiva a todos.
El Hostal de La Gavina ha conseguido mantener su estilo original y su rico legado histórico gracias a su habilidad de adaptarse a los nuevos tiempos, historia y belleza han sido integradas en la simplici- dad del día a día de nuestro mundo.
La identidad de varias generaciones de nuestra fami- lia se ve reflejada en cada uno de los diferentes elemen-tos que conforman el Hotel, todos ellos inherentes al objetivo de proporcionar excelencia a nuestros fieles clientes. Un toque personal en todo aquello que hace-mos para satisfacer plenamente sus deseos.

Since the very beginning the Hostal de la Gavina has been an independent and unique hotel. It was built in a private spot by the seaside on the Mediterranean coast of Catalonia, the Hotel is situated in an exclusive urbanized area with restricted access, welcoming an elite and highly exigent public conceived as a new concept of residential living to which the Hostal de La Gavina belongs. In 1995 it was declared “Cultural and Artistic Heritage Site” by the Catalan Government.
The singularity of S’Agaró and La Gavina is due to its founder, Mr. Josep Ensesa Gubert, our grandfather who inaugurated La Gavina in 1932. At that time, our hotel had only 11 rooms, but since then La Gavina has expanded and grown into the outstanding hotel that it is today.
Desde sus inicios el Hostal de La Gavina ha sido un hotel único e independiente. Construido junto al mar Mediterráneo en la costa catalana, el Hotel está situado en una exclusiva urbanización con acceso restringido donde habita un público exigente que concibe S’Agaró como un nuevo concepto de vida residencial. La Gavina fue declarada como Bien Cultural de Interés Nacional por la Generalitat de Catalunya en 1995.
La singularidad de S’Agaró y de La Gavina tienen su origen en su fundador, el Sr. Ensesa Gubert, nues- tro abuelo, que inauguró La Gavina en 1932. En aquel entonces el Hotel tenía solo 11 habitaciones. Con el paso del tiempo La Gavina ha ido evolucionando hasta lo que es hoy en día, un gran hotel.

La unicidad y armonía confieren a cada habitación un carácter especial; todo objeto decorativo tiene su sen- tido y su espacio, nada está puesto al azar. De esta ma-nera los clientes tienen una sensación de familiaridad y de comunión con el entorno.
Las habitaciones son amplias. La mayoría tienen terra-za exterior con vistas al mar o a las zonas abiertas del hotel. Muchas de ellas están decoradas con un guiño a la tradición local catalana. Con paredes blancas al más puro estilo mediterráneo o con finas sedas, made-ras, tapices y muebles antiguos perfectamente conser-vados. Ejemplo de ello son las camas extremeñas de principios del siglo XVIII que amueblan algunas de las habitaciones. También se pueden elegir estancias más íntimas o aisladas, ideales para las parejas; o habitacio-nes con terraza, siempre con agradables vistas al exterior.
En la planta mediterránea, muchas habitaciones están construidas con la clásica volta catalana y las balaustradas de las terrazas están inspiradas en Italia, mientras que en otras domina el eclecticismo o el estilo francés de la época de Luis XV.
Los suelos de las habitaciones varían según la planta, de madera o de terrazo, todos ellos perfectamente conservados. Las camas, de diversos periodos, proce-dencias y diseño, aúnan belleza y comodidad.
Individuality and harmony give each room a special character ; every decoration has its own meaning and space, nothing is placed there by chance. Thus, guests feel a sense of familiarity and communion with the surroundings.
The rooms are spacious. Most of them have outdoor terraces with views of the sea or the hotel’s open spaces. Many of them are decorated with a nod to local Catalan tradition. With white walls in the purest Mediterranean style or fine silks, woods, tapestries and perfectly conserved antique furniture, an ex-ample of the 18th-century Extremadura beds which furnish some of the rooms.
Guests can also choose more intimate and isolated rooms, ideal for couples, or rooms with a terrace, all with delightful outdoor views.
On the Mediterranean floor, many rooms are built with the classic Catalan arches and the terrace balustrades are Italian inspired, while in others, eclecticism or the French Louis XV style predominates.
The floors in the room vary depending on which floor of the hotel they are on: wood or terrazzo, all perfectly conserved. The beds, of varying periods, places and designs, combine beauty with comfort.

Suites
Las suites del Hostal de La Gavina están llenas de carácter, encanto y elegancia. Cada temporada, la familia Ensesa pone mucha dedicación en que todas las habitaciones estén siempre bien dotadas y refor- madas para satisfacer todas las necesidades de los huéspedes y proporcionar el máximo nivel de confort. Cada suite dispone de una gran sala de estar y de un baño totalmente reformado, con paredes de mármol y equipados con los mejores utensilios de aseo perso-nal. Algunas de las suites tienen también habitacio- nes conectadas, ideales para estancias con familia.
Cada una con su estilo distintivo: Mediterráneo, Impe- rio e Isabelino. No hay ninguna que se repita. Desde las suites con camas isabelinas de caoba y lámparas vene-cianas de Murano, hasta camas olotinas de estilo ba-rroco, que datan del siglo XVIII. Muchas de las suites son de inspiración francesa, concretamente de la época de Luis XVI. También se encuentran escritorios autóc-tonos catalanes del siglo XVIII ornamentando las suites para que los huéspedes atesoren sus pertenencias en muebles históricos perfectamente conservados.
The suites at Hostal de La Gavina are full of character, charm and elegance. Each season, the Ensesa family puts every effort into ensuring that all the rooms are always well equipped and properly refurbished to satisfy their guests’ needs and offer maximum comfort. Each suite has a large living room and a fully refurbished bathroom with marble walls, fitted with the finest items of personal toiletry. Some of the suites also have connecting rooms, ideal for families.
Each one has its unique style: Mediterranean, Imperial or Elizabethan. Nothing is repeated. From suites with Elizabethan mahogany beds, Venetian Murano lamps and Baroque style beds from Olot, dating from the 18th century. Many of the suites are French in inspiration, more specifically from the period of Louis XVI. There are also local Catalan 18th-century desks, decorating the suites for guests to place their belongings in perfectly preserved historic furniture.

La suite por antonomasia es la Suite Real: una maravi-lla diseñada al estilo Luis XV. Sus altas paredes están decoradas con madera y sedas naturales. Es una suite espectacular, de un clasicismo y elegancia verdadera-mente insólitos.
La preside un busto de Madame de Pompadour, aman- te de Luis XV, y la acompañan los jarrones giratorios de Sèvres de gran tamaño, auténticas joyas existentes únicamente en el museo Louvre de París. El espejo do-rado del siglo XVIII y una lámpara auténtica de cristal de Bohemia para velas dan el toque final a una suite donde el peso de la tradición y el más exquisito de los lujos se combinan con una confortable modernidad.

The suite par excellence is the Royal Suite: a marvel designed in the Louis XV style. Its high walls are decorated with wood and natural silks. It is a spec-tacular suite, decorated with outstanding classicism and style.
It is graced with a bust of Madame de Pompadour, Louis XV’s lover, accompanied by large revolving Sèvres vases, veritable gems that only exist in the Louvre Museum in Paris. The golden 18th-century mirror and the authentic Bohemian glass candle lamp give the finishing touch to a suite where the weight of tradition and the most exquisite luxury come together in modern comfort.
It also has a spacious terrace, the ideal spot for an intimate breakfast, enjoying the endless views onto the immeasurable beauty of the Mediterranean sea and the natural surroundings.

The beautiful staircase that gives access to the Candle-light restaurant leads the guests to the intimate and exclusive atmosphere throughout the entire dinner. The interior of the restaurant remains open only at the beginning and at end of the season, when the weather does not yet invite to go out on the terrace. Its warmth and intimacy make it an ideal setting for memorable evenings, with elegant and fine chandeliers illuminat-ing each table. Four oil paintings by the well-known Catalan painter and Paris based Emili Grau i Sala, decorate the room. His works are fruit of the inspira-tion that the artist felt by the place.
The Candlelight outdoor patio maintains the same intimate essence of the interior. Dining in this stillness is a delightful experience thanks to the care and beau-ty of the scene. The sheltered terrace bordered by tall,

For its new menu Romain Fornell has been inspired by the natural environment of the sea and the land-scape. He fuses its high and classic French cuisine with the Mediterranean, based on the product quality, tendencies and proximity, to satisfy the most demanding palates. The menu also offers a presti- gious wine selection with around 200 references from around the world.
An experience that pleases all the senses, especially the taste and the sight.

Open all day, this is a spacious, cool and peaceful area, ideal for enjoying the shade with a book, drink or in good company. It is the meeting point for guests and also neighbours in S’Agaró, who want to enjoy that magical moment in the evening, as the sky turns red.
The space offers a tempting drinks menu with the finest wines, Cava and Champagne as well as a selec-tion of hot and cold dishes to eat in a more informal setting, under the typical La Gavina lamps, imbuing the space with a warm, refined atmosphere.

Abierta todo el día, es una zona espaciosa, fresca y tran-quila, ideal para disfrutar de la sombra junto a un libro, un refresco o en buena compañía. Es el punto de en-cuentro para los huéspedes y también para los vecinos de S’Agaró que quieren disfrutar de ese momento mági-co del atardecer, cuando aparece la luz rojiza del cielo.
El espacio cuenta con una nueva carta en la que poder encontrar, además de la siempre sugerente carta de bebidas con los mejores vinos, cavas y champán, una selección de tapas y platillos para compartir, entrantes y ensaladas, sopas, pasta y sándwiches de todo tipo para poder comer o cenar en un entorno más informal.

Para comenzar el día relajado, un exquisito y salu- dable desayuno se sirve en la sala Villa d’Este. Los clientes pueden elegir desayunar en la terraza para tomar el sol de la mañana y contemplar el brillo reluciente de la mar o hacerlo en el interior de la amplia y luminosa sala, con vistas al paisaje natural exterior. Un completo y exquisito buffet se sirve tanto en el interior como en la terraza del Villa d’Este y se compone de fruta de temporada, una selección de los mejores quesos y embutidos ibéricos, una amplia variedad de zumos, un show- cooking de huevos y tortillas, un excelente salmón ahumado curado en La Gavina y una gran varie- dad de productos locales de temporada.

For a relaxing start to the day, an exquisite and healthy breakfast is served in the Villa d’Este room, decorated with an extraordinary tapestry in the 17th century Flemish style. Guests can choose to have breakfast on the terrace in the morning sun and gaze out on the dazzling sparkle of the sea or inside in the bright, spacious room, with views out onto the natural surroundings. A complete and exquisite buffet is served both indoors and on the Villa d’Este terrace, and consists of seasonal fruit, a selection of the finest cheeses and Iberian cold meats, a wide variety of juices, exhibition cooking of eggs and ome-lets, an excellent smoked salmon, cured in La Gavina, and a wide variety of local seasonal products.

Villa d’Este
El restaurante Garbí está situado en la zona de la pisci-na, con vistas a la bahía de Sant Pol. Una gran pérgo-la protege a los comensales del sol del verano. El chef José Pulido ofrece el tipo de platos que apetecen bajo el calor del sol, platos ligeros y saludables; auténticas delicias de la dieta mediterránea. Un gazpacho, o una variedad de ensaladas, carpaccios, langosta o jamón ibérico como entrantes, acompañado por platos princi-pales como la lubina salada, la legendaria paella o una selección de carnes y pescados a la plancha.
La vista del restaurante da a la piscina, con la Terraza Garbí, el Blue Bar (con una selección de zumos de fruta y verduras, smoothies y batidos), el solárium y las cabañas privadas, equipadas con baño, porche y terra-za para disfrutar de todo un día inolvidable.
El patrimonio artístico que caracteriza toda la finca, también allí está presente. La Venus del artista Joan Rebull da la bienvenida a los clientes en su primer baño.

The Garbí restaurant is located in the swimming pool area with views of the bay of Sant Pol. A large pergola protects diners from the summer sun. Our chef José L. Pulido offers the sort of dishes that go down well under the sun’s heat. Light & healthy dishes are true delights of the Mediterranean diet. A gazpacho, or a variety of salads, carpaccios, lobster or Iberian cured ham as starters, followed by main dishes such as salt-baked sea bass, the legendary paella or a selection of grilled meats and fish.
The restaurant looks out onto the swimming pool, with the Garbí Terrace, the Blue Bar (with a selection of fruit and vegetable juices, smoothies and shakes), the sun deck and private cabins, fitted with bathrooms, porch and terrace to enjoy an unforgettable day.
The artistic heritage that characterizes the whole estate is also present here. The Venus by the artist Joan Rebull welcomes guests on their first swim.

El elemento que da al Bar el Barco un encanto inex- plicable es su forma de nave. Sus paredes de madera barnizada y sus mesas distribuidas perfectamente por el espacio despiertan la reminiscencia de algo casi olvidado: el bar como expresión de la vida social, del contacto humano y de una singular confianza entre extraños. Un lugar reservado, propicio para cosechar nuevas amistades, compartir secretos y beber desde los cócteles realizados por el barman hasta un buen cava. Dispone también de carta de snacks.
El escritor Ernest Hemingway y la estrella de cine Ava Gardner, que tenían sus cócteles favoritos, fre- cuentaban el lugar por aquella fraternidad que aparece inesperadamente junto a la magia del lugar.
Nido de historias legendarias, las paredes de este entrañable lugar guardan muchos secretos.

The feature that gives the El Barco Bar its inexplicable charm is its ship shape. Its varnished wooden walls and its tables distributed perfectly in the space bring to mind something almost forgotten: the bar as an expression of social life, human contact and singular trust among strangers. A sheltered place, suitable for making new friends, sharing secrets and drinking our barman’s cocktails.
The writer Ernest Hemingway and the film star Ava Gardner, who had their own favourite cocktails, frequented the place for the camara- derie that sprung up unexpectedly out of the magic of the spot.
A nest of legendary stories, the walls of this charming place hold many secrets.

Para ello encargan al diseñador Lázaro Rosa Violán el proyecto decorativo con unas directrices muy claras sobre el aspecto de la nueva Taverna del Mar respetan-do en todo momento sus orígenes y su situación.

In 1929 the restaurant of the S’Agaró Baths was constructed, and used as an extension for its bar services, served from the simple terrace of the Baths.
A few years later that terrace burned on a winter night of 1935 and Folguera was already in charge of raising in its present location La Taverna del Mar, whose inauguration took place on Sunday the 19th of July of 1936.
Over the years and led by Mr. Ensesa Montsalvatge, son of the founder, La Taverna del Mar is positioned as a reference place for its excellent location and touristic offer.
After his death, the concession of La Taverna del Mar is passed to his daughters Julia, Virginia and Carina who finally take over the project in 2014, honoring the history of the family they continue a project of elegance and quality.
En el año 1929 se construyó el restaurante de los baños de S’Agaró que se utilizó como anexos para sus servicios de bar, parte de la primitiva terraza del establecimiento de Baños.
Pocos años después, aquella terraza ardió en una noche de invierno de 1935, y Folguera fue ya el encarga-do de levantar en su emplazamiento actual La Taverna del Mar cuya inauguración tuvo lugar el domingo 19 de julio de 1936.
Con el paso del tiempo y de la mano del Sr. Ensesa Montsalvatge, hijo del fundador, La Taverna del Mar se posiciona como local de referencia por su excelente ubicación y oferta turística.
Tras su fallecimiento, la concesión de La Taverna del Mar pasa a manos de sus hijas Julia, Virginia y Carina que finalmente toman el mando del proyecto en el año 2014, y haciendo honor a la historia de esta familia, apuestan por un proyecto elegante y de calidad.

Como una caja de joyas para presentar las exposiciones de la Fundación Valmont, el Palazzo Bonvicini, la ilustre fa-milia Bonvicini, originaria de Brescia, destacó entre la no-bleza veneciana durante los siglos XVII y XVIII. Formaban parte del club exclusivo, “Case Nuovissime”, una sociedad de las familias más influyentes de la laguna de Venecia.
Un verdadero palacio veneciano en el más puro estilo renacentista del siglo XVI, el Palazzo Bonvicini exhibe un refinamiento auténtico. Sus muros decorados y molduras de techos realzan la belleza de los relucientes frescos, los exuberantes suelos de terrazo sirven como un tributo vibrante a la savoir-faire de la laguna.

Like a jewel box to present the Fondation Valmont’s exhi- bitions, the Palazzo Bonvicini, the illustrious Bonvicini family, originally from Brescia, stood out among the Vene-tian nobility during the 17th and 18th centuries. El arte es parte del legado de la familia Guillon. El dig-no heredero de grandes coleccionistas de arte, estetas y mecenas, Didier Guillon, presidente de la Fundación Valmont, cuarto pilar del Grupo Valmont, continúa una tradición familiar. En el origen estaba la figura de Char-les Sedelmeyer, un conocido comerciante de arte en la escena parisina a finales del siglo XIX y principios del XX y padre de su bisabuela. Otra figura artística de la familia Guillon, Stanislas Lami fue un célebre escultor y bisabuelo de Didier Guillon.
Inmerso en un universo impregnado por un sentido para lo raro y hermoso, Didier Guillon desarrolló rápidamente un gran gusto por el arte. Su sensibilidad artística fue forjada y alimentada por sus visitas a galerías, talleres de artistas y exposiciones que exploró junto a su abuelo a lo largo de su infancia.
Naturalmente Didier Guillon transmitió su pasión a sus tres hijos, Capucine, Maxence y Valentine.
Art is part of the legacy of the Guillon family. The worthy heir in a great line of art collectors, aesthetes and patrons, Didier Guillon, President of the Fondation Valmont, fourth pillar of the Valmont Group, continues a family tradition. At the origin was the figure of Charles Sedelmeyer, a noted art dealer on the Parisian scene in the late 19th and early 20th centuries and father of his great-grandmother. Another artistic figure of the Guillon family, Stanislas Lami was a celebrated sculptor and great-grandfather of Didier Guillon.
Immersed in a universe impregnated by a sense for the rare and beautiful, Didier Guillon quickly devel- oped a keen taste for art. His artistic sensibility was forged and nourished by his visits to galleries, artists’ workshops and exhibitions which he explored throughout his childhood alongside his grandfather.

The Fondation Valmont, after its two shows during the 2015 and 2017 Biennales, decided to make a deeper commitment to Venice by taking residence in an historic palace which will become a permanent place of Venetian cultural production.
On May 11, 2019, the Fondation Valmont will open in its new home in the Palazzo Bonvicini with the exhibition “Hansel & Gretel – White Traces in Search of Your Self ” featuring the works by Didier Guillon, Isao and Silvano Rubino. La historia del Hostal de La Gavina está entrelazada con S’Agaró y la familia Ensesa.
A principios de los años veinte, Josep Ensesa i Gubert persuadió a su padre Josep Ensesa i Pujades, un exitoso industrial de Girona, para que comprase los terrenos que se extendían entre la bahía de Sant Pol y la larga pla-ya de Sa Conca, conocidos ahora como S’Agaró. El joven se percató rápidamente de la belleza y extraordinario potencial de esas tierras. Eligió el nombre en clara refe-rencia al arroyo Agaró que por allí discurre; un descubri-miento personal que ahora la sociedad entera agradece.
Josep Ensesa era un hombre de una extraordinaria visión que supo prever la importancia del turismo en España. No solo eso, sino que supo asegurar un modelo arquitectónico en armonía con la identidad de los paisajes mediterráneos. Ideó, junto a uno de los arqui-tectos más destacados del momento y precursor del movimiento novecentista, Rafael Masó i Valentí, los pórticos, torres, terrazas y tejados de líneas bajas para crear una colonia dirigida a todos aquellos que apre- ciaban el arte.

The history of Hostal de La Gavina is closely tied to S’Agaró and the Ensesa family.
In the early 1920s, Josep Ensesa i Gubert persuaded his father Josep Ensesa i Pujades, a successful indus-trialist from Girona, to buy the land that stretched from the bay of Sant Pol to the long Sa Conca beach, now known as S’Agaró. The young man quickly grasped the beauty and extraordinary potential of these lands. The name he chose was a clear reference to the Agaró stream that flows nearby; a personal discovery that the whole country is now grateful for.
Josep Ensesa was a man of an extraordinary vision who was able to foresee the importance of tourism to the country. And not just that, he also knew how to ensure an architectural model in harmony with the identity of Mediterranean landscapes. In conjunction with one of the most well-known architects at the time and a forerunner to the noucentista movement, Rafal Masó i Valentí, he designed the porticoes, towers, terraces and low roofs to create a colony for art lovers.
The new neighbors agreed to maintain the visual harmony in developing a garden city inspired by projects in the UK in the 1910s. In the words of the Catalan writer Josep Pla, the Masó development

offered spiritual comfort, with a structured calm and luxury worthy of the highest praise’. The first house in the development, Senya Blanca, was opened on 24 July 1924. Eight years later, on 2 January1932, the Hostal de La Gavina opened its doors.
The original 11 rooms have grown to 74, currently occu-pying a four-storey building, but Mr. Ensesa’s personal project has endured thanks to the work of his son Josep Ensesa i Monstalvatge, continuing with his grandchil-dren Julia, Virginia, Carina, and Josep Ensesa i Viñas, who share that same historic vision of the place.
S ‘Agaró and Hostal de La Gavina have been the stage and vacation spot for many personalities from the world of politics, culture and the arts. Since the early 1950s, famous Hollywood movies like “Pandora” with Ava Gardner, “Suddenly Last Summer” with Elizabeth Taylor or “Mr. Arkadin” by Orson Welles were shot among others. This made Hostal de La Gavina a meet-ing place of many famous movie stars and gave way to more recent actors like Sean Connery, Jack Nicholson or Robert De Niro. Culture has been a protagonist of La Gavina’s history. Numerous artists, Nobel prize winners and other intellectuals have visited the Hotel not only for their holidays, but also as meeting point and for sound performances. Salvador Dalí, Josep Pla, Plácido Domingo, Josep Carreras, Camilo José Cela, Octavio Paz, Salvador de Madariaga among many others have passed through the Hotel as well as others more recently, such as Santana or Lady Gaga.

El día 24 de julio de 1924 se inaugura Senya Blanca, la primera casa de la urbanización. Ocho años después, el 2 de enero de 1932, abre sus puertas el Hostal de La Gavina.

Pero el proyecto personal del señor Ensesa ha persistido gracias a la labor de su hijo Josep Ensesa i Montsalvatge y al continuismo de sus nietos Julia, Virginia, Carina y Josep Ensesa i Viñas, que comparten su visión histórica del lugar.
S’Agaró y el Hostal de La Gavina han sido escenario y lugar de vacaciones de gran cantidad de persona- jes ilustres de todo el mundo. Desde el mundo del cine, artistas como Ava Gardner, Elizabeth Taylor, Orson Welles, Sean Connery, Robert de Niro o Jack Nicholson, de la música Josep Carreras o Plácido Domingo, de la literatura como Octavio Paz, Josep Pla o Camilo José Cela, de la pintura como Salvador Dalí y de la política como Josep Tarradellas, Chichester Clark ex primer ministro de Irlanda del Norte o el ex canciller británico Lord Selwyn Lloyd, gran enamorado de S’Agaró y de la familia Ensesa. Más recientemente La Gavina ha sido visitada por artistas como Zubin Mehta, Peret, Lady Gaga o Carlos Santana.”

In 2015, Chef Romain Fornell became Culinary Director of Hostal de la Gavina in S’Agaró, a 5-star grand luxe hotel that is considered the best on the Costa Brava and one of the most emblematic on the Mediterranean.
The hotel management has signed a collaboration agreement with Chef Romain Fornell, originally from France but residing in Barcelona since 1996. His world-renowned career demonstrates his great quality as a chef and the owners of La Gavina believe deeply in his talent and experience.
In 2000, after training with Alain Ducasse and Michel Sarran, he opened Chaldette in Lozère, showcasing his creative potential, and went on to earn his first Michelin star in 2001, making him the youngest chef to do so, just 24 years old.
Romain is the top example of new French cuisine in Barcelona, where he came to live when he took over the kitchen at the former Diana restau-rant at the Ritz Hotel. In 2004, Diana became Caelis and in 2005 Caelis was awarded a Michelin star, making Romain the only French chef to receive this distinction in both France and Spain. In 2017, Caelis moved to Hotel Ohla Barcelona revalidating the star. In recent years, Romain has added Café Turó, Casa Tejada and Casa Leopoldo, all in Barcelona, to his culinary endeavours.
The culinary approach at La Gavina has been updated after Romain joined the team, setting the toughest standards of haute cuisine while main-taining the essence of the establishment, traditional Mediterranean cuisine, and giving it a personality and creativity all its own. Fornell is in charge of the hotel’s culinary spaces: La Terraza, Restau-rante Piscina de Garbí, Villa d’Este, weddings and other special events, and especially Candlelight restaurant.
En 2015, el chef Romain Fornell se incorporó como director gastronómico del Hostal de la Gavina de S’Agaró, hotel de 5 estrellas Gran Lujo, considerado el mejor de la Costa Brava y uno de los más emble- máticos del Mediterráneo.
La dirección del hotel ha firmado un acuerdo de cola-boración con el chef Romain Fornell, de origen francés y afincado en Barcelona desde 1996. Su trayectoria y reconocimiento internacional lo avalan como gran cocinero y la Propiedad de La Gavina confía plenamen- te en su talento y experiencia.

La línea gastronómica de La Gavina, con la entrada de Romain, se ha actualizado de acuerdo con los más exigentes estándares de la alta cocina, pero mante- niendo la esencia que caracteriza al establecimiento, cocina tradicional del Mediterráneo, y dotándole de identidad propia y creatividad. Fornell dirige todos los espacios gastronómicos del hotel, La Terraza, el Restaurante Piscina de Garbí, el Villa d’Este, los even-tos de Bodas y Banquetes y con especial énfasis en el restaurante Candlelight.

The Mediterranean is the most patient of sculptors; its tumbling waves have been shaping the Costa Brava with wisdom and perseverance since the dawn of time. To see the tenacity of its swell, one only has to travel along this coastline from north to south, from Portbou to Blanes. Stretching 200 kilometres, it is scattered with secluded beaches and sheer clives, from the Albera mountain range and the Cap de Creus headland with its crashing surf. Land and sea playfully intertwine and merge together, forming a symbiosis that has contributed to the brilliance of the area, inspiring writers, poets, musicians and artists throughout history. Man has enjoyed a close relationship with this coastline since ancient times. The Iberians, Greeks and Romans learned to exploit this close bond with the sea. For thousands of years, fishing, agriculture and trade brought wealth to the area, and the legacy of this relationship is clear to see in much of the local cul-ture. A distinctive cuisine has also emerged from the land and sea based on local produce, a cuisine that has stood the test of time and has been reinvented thanks to the genius of chefs such as the Roca brothers or Ferran Adrià.
No hay escultor más paciente que el Mediterráneo. La cadencia de sus olas ha ido esculpiendo el perfil de la Costa Brava con sabiduría y constancia desde la noche de los tiempos. Para comprobar la tenacidad del vaivén de su oleaje solo hay que recorrer este territorio de norte a sur, desde Portbou hasta Blanes. Son dos-cientos kilómetros de litoral salpicados por recónditas playas y abruptos acantilados, desde la sierra de la Albera y el cabo de Creus hasta el rompiente de las olas. De la tierra y del mar nace, también, una cocina propia basada en productos loca-les; una cocina que hoy en día chefs como los hermanos Roca o Ferran Adrià mantienen y reinventan con su genialidad.
