Executive Summary This purpose of this feasibility report is to investigate the best cafeteria on the campus of the
University of North Texas for students to eat in. We evaluated Bruce cafeteria, Kerr cafeteria,
Mean Green, and Champs based on the following criteria:
1. Food
2. Location
3. Pizza
4. Space availability
5. Ambiance
We conducted a survey on campus that asked students to rate each cafeteria according to the
listed criteria. We conclude that Champs and Bruce cafeterias are the best places to eat in and
recommend Bruce cafeteria. Even though Bruce scored one point lower than Champs on the
total, it scored higher on the first three of criteria which are listed according to importance.

Introduction to the Report The purpose of this document is to determinate the best cafeteria at UNT. The University of
North Texas contains approximately 36,000 students most of whom live on campus and
regularly eat at the school’s cafeterias. The UNT cafeterias serve a variety of food to these
students; students can get food based on their diet or their nutritional background. Students
input is valuable to the school, they are encouraged to attend the Food Advisory Committee
meeting to give their opinion of the food. The food Advisory Committee is a group of students
that meets monthly with the executive dining team to discuss how the food tastes, the variety of
food, cafeterias changes, the service, and any other suggestions or comment the students may
have. This report will help students to decide which of the UNT cafeterias is the most desirable
to eat at among the following options:
Bruce Cafeteria, centrally located in Bruce Hall, features a salad bar with fresh fruit, with
veggies and soup options.
Kerr Cafeteria, located in Kerr Hall, is the largest dining facility with 2 salad bars, a
multiple entrée line, a burger grill, and a macaroni bar.
Mean Green Cafeteria, located behind Maple Hall, is an all vegan cafeteria. It is known
as the most popular cafeteria on campus.
Champs Cafeteria, located a Victory Hall, features fresh salads, delicious desserts, and
exciting grilling specials.
Methods of Evaluation This section explains the methods we used to make the study. We decided to compare 4
cafeterias on campus, Bruce, Kerr, Mean Green, and Victory cafeterias based the following
criteria:
1. Overall food
2. Location
3. Pizza
4. Space availability
5. Ambiance
We did not include West cafeteria, it lacks the pizza criteria.
The group determined the listed criteria were the top considerations for college students when
deciding which cafeteria was the best to eat at. The group then conducted a survey of UNT
students to evaluate the cafeterias according to these criteria. Students were surveyed at the
cafeterias and the library; the library was chosen as it is the closest public building to most
cafeterias. The survey asked 20 students to rate each option of cafeteria on a scale from 1
(least satisfied) to 10 (most satisfied). The results from each of the criteria for the cafeterias
were added together and then divided by 20 to receive the mean data score for each. [See

Figure 6] The cafeterias were then awarded points from 1 (lowest) to 4 (highest) according to
where they placed for each of the criteria. These points were then totaled and used to draw
our conclusions from and make a recommendation.
Results of the Evaluation To determine the best UNT cafeteria to eat at, the group evaluated four options according to
the criteria of the best overall cafeteria food, location, the taste of each cafeteria’s pizza, the
available space, and the ambiance of each cafeteria. The criteria were evaluated using the
results from the survey that rated each facility in a scale from 1 (least satisfied) to 10 (most
satisfied).
The best overall cafeteria food Option 4, Champs cafeteria, received the highest rating in the best food overall criteria.
Option 2, Kerr cafeteria, received the lowest rating in the best food overall criteria.

Figure 6 summarizes the overall mean results of the survey.

Conclusion to the Report In order to determine the best cafeteria on campus, four options were surveyed against five
criteria that the group feel are important for college students. This report determined the best
cafeteria on campus to eat in is Champs cafeteria. Champs cafeteria scored the highest total
points for the established criteria with 16 out of 20 possible points. The second highest cafeteria
is Bruce (15 points) followed by Kerr and Mean Green (10 points each).
Recommendation We recommend Bruce cafeteria overall. Even though Bruce cafeteria scored second in overall
criteria points, it had a higher score in the first three criteria and only scored one point below
Champs cafeteria in the total. However, for students commuting to the UNT campus, the group
recommends Champs cafeteria as driving to campus negates the poor score for Champs in the
location criteria. Even though Mean Green is UNT’s nationally recognized health-conscious
cafeteria, students seem to prefer Bruce and Champs cafeterias instead.
