Intriguing reds for fall contemplation

TASTING NOTE: Intriga has been produced since the 2005 vintage, always with grapes from vineyards planted in the Linderos zone 70 years ago. The base of cabernet sauvignon amounts to 82% of the final blend this year, along with cabernet franc and a few drops of petit verdot. It was a cold year with heavy rains ... [that] gave rise to fresher, lighter wines, and this Intriga is a good example. The grapes that went into this blend were harvested before the Easter rains, and that made the character much nervier than usual in a medium-bodied wine with deliciously bright acidity. FULL- BODIED REDS

Full-bodied wines have a rich mouthfeel and pronounced, complex flavours. Their intensity will overpower meals with more delicate flavours, so these wines call for boldly flavoured, hearty fare such as steak, lamb and mushrooms. Tannins are a prominent feature of full-bodied reds. Wines such as Merlot, Syrah and Zinfandel can have high levels of velvety tannins, while Cabernet Sauvignon will have a prominent, more grippy, drying feel. The process of re-fermenting on tannin-laden dried grape skins introduces higher tannin levels to reds such as Valpolicella Ripasso Superiore.

SWEET WINES

Port is perhaps the most well-known of sweet wines and is usually served as an aperitif, or as a dessert wine alongside nibbles such as blue cheese, nuts or dried fruit. LBV Ports have a weight and richness that makes them ideal partners for chocolate cake. Sweet white wines such as Sauternes or Late-Harvest Riesling are also great with desserts, but their high acidity provides the balance for savoury dishes, too. Similar to medium-sweet whites such as those crafted from Riesling, Gewürztraminer or Chenin Blanc, sweet white wines can make excellent pairings for spicy dishes. The sugars in the wine offset the heat from the food and also enhance the flavours of the dishes’ individual ingredients.

• It’s best if the wine is more acidic than the food. This is especially important when pairing with tomato dishes, or salads with vinegar- based dressings.

• Similarly, the wine you serve should taste sweeter than the food. Wines that are designated XD (extra dry) tend to be lower in sugar but their bold, ripe fruit flavours will still give you that sweet-fruit sensation.

• Bold, robustly flavoured meals should be paired with bold, robust wines.

• Delicately flavoured foods should be paired with equally delicate or lighter-styled wines.

• Creamy sauces require a full-bodied white wine with high acidity, like Chardonnay, or a medium-bodied red such as Sangiovese.

• A big part of enjoying wine is experimentation, so if you want a meal to go with that Bordeaux blend or dry Riesling, check out what the locals pair their wines with in Bordeaux or Alsace.

• Serve wines at the correct temperature. Here’s a quick guide:

• Chill sparkling and white wines for 2-3 hours in the fridge or 20-30-minutes in an ice bucket.

• Chill rosé for 1.5 hours in the fridge or 15 minutes in an ice bucket.

• Chill medium-bodied reds for 60-90 minutes in the fridge or 10-15 minutes in an ice bucket.

• Even full-bodied reds can benefit from chilling. They should be served at around 18°C. On a hot evening or in a warm dining room, you might want to pop them into an ice bucket for 10 minutes.

Oregon’s position on the western side of the Cascade Mountain range leaves it exposed to the direct influence of the Pacific Ocean. This has a profound impact on viticulture here, and vintage variation is a far more significant factor in these wines than it is in neighbouring Washington. Fortunately, most of the precipitation occurs during the cool wet winters rather than over the growing season. The rolling hills and volcanic soils of the Willamette Valley are home to the majority of Oregon’s vineyards. The area receives the most daylight hours in the state, allowing grapes to ripen fully even in the face of the uncertainty posed by volatile weather.

More than 50 varieties are grown here, but Oregon’s reputation as a top-tier winemaking region rests solidly on Pinot Noir. The state’s flagship varietal creates wines of unquestioned depth and complexity, with fruit, spice and earth framed in a refined elegance that has earned the region comparisons to Burgundy. Pinot’s Burgundian partner, Chardonnay, also does very well here, but it’s Pinot Gris that’s Oregon’s leading white grape. These are dry, crisp, bright, luscious wines with distinct pear flavours. Producers are exploring the use of sophisticated harvesting machines that may be able to alleviate some of the challenges of working the sloped sites here.

Washington shares the same turbulent geological history as Oregon. Its landscape was shaped by tectonic collisions, floods of molten lava, the scraping passage of great continental glaciers and the devastation of the Missoula Floods. Among such natural wonders as Hurricane Ridge, the Hoh Rain Forest, Diablo Lake and Jade Lake, the most famous natural feature is undoubtedly Mount St. Helens. From a winemaking perspective, Mount St. Helens is an apt metaphor for the spirit of innovation and discovery that defines Washington producers’ continued exploration of new growing areas and experimentation with new varietals – there’s always something bubbling away under the surface.

Unlike those in Oregon, Washington’s vineyards are protected by the Olympic and Cascade mountain ranges, which shield them from the inclement weather generated by the Pacific Ocean. These ranges limit precipitation and reduce the risk of crop-damaging fungi that require humid conditions to flourish. The warm, dry growing season and the varied microclimates provided by the rolling hillsides and flatlands allow a superb diversity of styles and varietals to flourish. Washington’s vineyards are free of the vine-damaging louse phylloxera and, as a result, it’s one of the world’s few regions where grafting vines onto phylloxera-resistant rootstock is unnecessary.

More than 70 varieties flourish in Washington, both cool- and warm-climate grapes. Riesling here is particularly floral, with distinct peach and apple flavours. Washington’s crisp, lithe Chardonnays are typically lighter in style than those from California, with less emphasis on oak. Cabernet Sauvignon shows rich, complex notes of black cherry, chocolate, leather, mint and herbs. Merlot has higher acidity than found in Californian examples and offers ripe cherry, dark berry and spice. Syrah is an exciting up-and-coming grape in Washington, shining as both a single-varietal wine and, often alongside its Rhône counterparts Grenache and Mourvèdre, in head- turning blends.
