While many of you join the Club for the countless business connections built

here, many others join for the amenities and Club traditions - most of which are

centered around food. And longtime members will agree, the Club’s cuisine is the

best it’s ever been.

That is due in great part to Timothy Prefontaine, the Club’s executive chef who is approaching a decade of

tenure here. The New England native has revamped the kitchen layout, updated policies and procedures,

improved food quality and most importantly, created a culture where talent is nurtured and staff is

encouraged to grow in their careers. He’s done all this while winning multiple worldwide awards competing

with the American Culinary Federation and even being named Chef of the Year in 2014. How lucky are we

to have him?

In this issue’s feature story, you’ll read a little more about Prefontaine along with his chef leads who have

taken the culinary reigns under his leadership. For example, our executive sous chef, Joel Schaa, grew up in

West Africa as a “missionary kid” and learned about food much differently than most children do in the U.S.

Our executive pastry chef, Rocio Varela, has competed on Food Network more than once. And our chef de

cuisine, Corey Smith, grew to love cooking after preparing deer, pheasant, fish and other wild game while

hunting as a child. We proudly refer to this team as “Fort Worth’s Finest” because of their talent, drive and

ambition to learn and grow - assets not found in every restaurant kitchen in town.

While many of you will depart for summer vacations soon, we hope to see you around the Club during your

time in town. Have family visiting this summer? Consider hosting them at the Inn at the Club. And Athletic

Center members, try a new group fitness class or two this summer to break up your routine. Female Athletic

Center members can read about new ways to use the Ladies Fitness Studio on page 26.

Of course we’d love to meet any new member candidates you may have, too. Please refer them to me and

I will be happy to set up a tour.

Fort Worth community and business leaders met with Club junior members during the 11th annual Junior Mentor Dinner Series, an award winning mentoring program exclusive to Club members. More than 60 junior members participated in the program this year, which included topics such as the power of influence in the workplace and adaptive leadership. BNSF Railway executive chairman Matt Rose closed the program, sharing how his leadership style has changed over the years, insight on his relationship with Warren Buffet, and his perspective on mentoring. “The Junior Mentor Dinner Series is quite impressive,” says Tim Carter, a JMDS mentor and Southside Bank regional president for the North Texas region. “The venue and time to meet participants and have meaningful conversations over dinner while listening to great speakers make the program a real success.” Junior member participant Meredith Warnock says she’s already looking forward to the 2018 series. “The camaraderie among past and current members makes the Junior Mentor Dinner Series like a club within the Club. Connections I’ve made through JMDS have benefited me professionally and personally,” she says. Mentors who participated in the program include city councilwoman and president of North Texas LEAD, Gyna Bivens; Southside Bank regional president, Tim Carter; Lone Star AG Credit president, Robert Humphreys; co-founder of Empire Roofing, Sandra McGlothlin; Basic Energy Services president & CEO, Roe Patterson; Rahr & Sons Brewing founder & president, Fritz Rahr and personal wealth manager and financial advisor, Lei Testa. Mentors volunteered their time, experience and expertise to invest in the junior members who participated in the program, which ran from February to April. The 2017 program was sponsored by Decker Jones, Rahr & Son’s Brewing Company and Southside Bank.

Cornell completed the nine-week “skills for success” program in April. The Dale Carnegie Training program works with individuals to develop them in leadership roles. “We are so very proud of Kimmie’s accomplishments and her hard work,” says Gwen Hutchison, front desk manager.

When he was 14 years old, Larry Anfin started working in the recycling center for Coors Distributing Company of Fort Worth, a company co-founded by his grandfather. He would eventually become CEO and for decades Anfin built strong community relationships in Fort Worth, serving on nearly two dozen boards and executive committees including Big Brothers Big Sisters, A Wish with Wings, Arts Council of Fort Worth and many more. February 16 was officially proclaimed “Larry Anfin Day” by Mayor Betsy Price at a ceremony in General Worth Square in recognition of his years of service to Fort Worth. Anfin – a Club board member and Membership Committee member – says since selling the family-owned business to Andrews Distributing of North Texas in 2014, his Club membership has allowed him to stay connected to Fort Worth’s business leaders. “My mom, Jeri McMillan, was the reason I joined,” he says. “She felt the leadership of Fort Worth was embodied in the membership of The Fort Worth Club.” During the day, Anfin says, the Davey O’Brien Sports Lounge & Club Bar is ideal to meet with both friends and business colleagues. He likes the Grille for downtown breakfast or lunch meetings and the Library as a quiet place for dinner. “The Club is a great place to thank someone for their business.”

multiple times a day, dining at

the very same table that became

known to staff as “Mr. Davis’

table.”

“It was like a second home to

him. He loved the Club,” says his

wife Alinda. “I think he would

have gone up there every day for

breakfast, lunch and dinner if he

could. It was his home away

from home.”

While Davis wasn’t a man of many words, Alinda says, it was the exceptional service from the Club staff that kept him coming back for so many decades.

“Everybody was so friendly with him and anxious to take care of him the way he wanted to be taken care of, because he definitely had a lot of requirements,” she says. “They all worked very hard to keep him happy.” The Club employee who knew him best is Ella Johnson. Johnson’s been with the Club for nearly 50 years and waited on Davis throughout the majority of her tenure. “Mr. Davis was very consistent with ordering the same thing every day for a long period of time,” Johnson says. “He would give me a signal if he was going to change his order. You knew exactly what he wanted for breakfast and lunch. There was only a nod and talking was not involved very much.” But despite the years of minimal dialog, Johnson held a very special place in Davis’ heart. At her 40th anniversary party in 2009, Davis – typically a very private man who rarely deterred from his routine – arrived with a bouquet of flowers, a very special letter and a big smile. “He handwrote a special letter of appreciation, which really meant a lot to me,” Johnson says. “The letter started with, ‘The secret is out. Now everyone knows you are the longest woman that has been in my life.’”

Fort Worth’s FinestMeet the Club’s culinary team

They’re the kitchen leads behind the dishes many members enjoy on a regular basis. Here’s more about them along with what they think about food, being a chef, and the Club’s kitchen philosophy.

After all of Timothy Prefontaine’s worldwide culinary recognition and awards, including multiple American Culinary Federation gold medals, serving as team coach for the ACF Culinary Team USA, and being named the ACF “Chef of the Year” in 2014, one might think the New England native always knew he’d be a chef. Not so, he says.“To be honest, I needed a job,” Prefontaine says. “Even after starting culinary school, I did not think I would be cooking the rest of my life.”

He later attended the prestigious Balsams Culinary Apprenticeship School in New Hampshire. “This really opened my eyes to what being a chef and what real food was all about,” he says. “I was hooked.”Prefontaine fell in love with the speed and excitement of the kitchen, but also the artistic component involved in creating and plating a dish. “I had always enjoyed painting, drawing and art in general,” he says. “This was just a different form.” Prefontaine admits his culinary style has changed over the years

and today he leans toward simpler dishes. “It’s about not over complicating things but really trying to let the food speak for itself,” he says. “When you start with a great piece of meat or a tomato you don’t need to do much to enhance it.” As the leader of the Club’s culinary team, he aims toward creating an environment where cooks are given the opportunity to grow, just as he says he was throughout his career.

Growing up as a “missionary kid” in West Africa, Joel Schaa says he understood love through food at a young age. “Each meal took layers of planning, preparation, and adapting to new ingredients,” he says. “Want toast and peanut butter for breakfast? Bake the bread from scratch and grind the peanut butter. It often took the whole family working together for a single meal. Our family grew together in the work, the success and failures, and sharing the reward.” The mental and physical challenges of the chef profession, along with hundreds of years of tradition and techniques that

In high school, Rocio Varela thought she would eventually become a computer engineer. “But (at the time) those jobs were easily being laid off,” she says. “So I decided I should be a chef. I figured people always have to eat.” She began baking at 13, using recipe cards her mother would receive in the mail for cookies, pies and cakes. Today she breathes, eats and sleeps the culinary world, she says, in her off time reading industry books and magazines and watching Chef’s Table on Netflix.“I like classics with a modern twist,” she says of her culinary

style. “I really love the Club’s overall vision. Chef Prefontaine always wants to push the limits and think creatively. I get to showcase that in the big holiday buffets and member wine dinners.”

Hunting and fishing while growing up in Illinois sparked a passion for food in Corey Smith, especially processing and preparing his catch including deer, pheasant and freshwater fish. “Seeking the best way to cook the catch or kill challenged me,” he says. “Friends and family inspired me to seek out the passion for food I had developed.” His first kitchen gig was as a dishwasher at WeaverRidge Golf Club in his home state, where he also flipped omelets, made stocks and learned how a club kitchen worked. “I truly was inspired when I started working at River Oaks Country Club in

Houston,” Smith says. “The first day I saw the culinary pride that was instilled in every leader at the club; the professionalism, respect and dedication to coach young culinarians to grow into positions of influence. I said to myself, ‘I want this.’” Smith still strives constantly to grow in his role and says The Fort Worth Club’s culinary philosophy is to exceed all other private clubs. “Sourcing locally and purchasing the best quality product we can find results in offering our membership the finest, most consistent dining experience around,” he says “We never stop learning and are always trying to improve ideas or recipes.”

When Diana Maddox’s bridal captain pulled her aside to show her the beautifully decorated, untouched reception room before guests walked in for cocktail hour, a wave of relief swept over her. “It was the most beautiful room I have ever seen and everything was exactly as I had envisioned it,” says Diana. “It was in that moment that I was able to let go of any other worries in my mind about the day. I was able to relax and enjoy every second of our celebration.” A tower of champagne anchored the Terrace, where guests were greeted with a glass of bubbly upon arrival. Oversized balloons floated above cocktail tables, tethered by long, shimmery streamers. In the Horizon ballroom, shutters were opened to let in natural light and tables were adorned with low and tall floral arrangements. “I didn’t want our guests to feel like they were in a museum,” Diana says. The plated three-course meal featured beef tenderloin and along with wedding cake, bread pudding was presented for dessert in lieu of a groom’s cake. Diana says the Club was the perfect location as many guests traveled from out of town and were able to stay at the Inn at the Club. “We centrally located all of our wedding activities in the heart of downtown so our guests could experience the vibrant culture of our city,” she says. “Our guests could stay just steps away from the reception festivities while also within walking distance to Sundance Square. Looking back I wouldn’t change a thing. The Fort Worth Club staff was wonderful and very attentive to our guests. It was perfect.”

What it does: “this is a total body exercise that works everything from your legs up to your shoulders. By toning large muscle groups, like your quads and glutes, you metabolize more calories.”

how to do it: Facing sideways, place one leg up on the bench. hold onto the bottom cable with both hands, palms facing backward. Drop your hips back into a squat and as you stand squeeze your glutes and bring your elbows up to your ears as you contract your upper back and shoulders.

Trainer: Dee henryExercise: supine stability Ball Pull-Up

What it does: “Works the back and biceps and lots of core. it gets away from the ‘mirror muscles.’ With this exercise you start to work muscles not commonly trained and get more all-encompassing benefits in your fitness level and overall physique.”

how to do it: With an underhand grip on the bar, place feet on top of the ball. align your hips in a neutral position, making sure they’re not too high or too low. Pull up and down with control. Modifications include starting in a seated position and only pulling up the torso; bending the knees at 90 degrees; extending the legs out with feet on the floor; and extending legs out onto a chair.

how to do it: Grab trX bands with an underhand grip and walk backward, angling yourself away from the trX anchor point. straighten arms so there is no tension on the trX straps and keep tension the whole time. Lift one foot off the floor. squat down, keeping arms straight, and curl biceps to bring body up. the further you walk your feet in toward the anchor point, the harder the move.

Trainer: BiLLy easonExercise: alternating battling ropesWhat it does: “increases the heart rate to burn calories while working on core stabilization from the ground up. also tones the arms.”

how to do it: With your abs tight, knees soft and back straight, alternate raising the ropes up and slamming them down. increasing the speed and power will increase the intensity. Modifications including slowing it down to make it easier, or raising the ropes higher to make it harder.

“I used to be the strongest old guy in the Club,” says Larry Wicker. “Now I want to be the strongest old guy in a wheelchair in the Club.”

Two years ago Wicker fell off a ladder and onto his head, bruising his spinal cord. He was in the hospital for six weeks and in-patient rehab for six weeks more. “I couldn’t walk or stand up or do anything at first,” he says.

But his accident didn’t slow him down, nor did it stop his workout routine. In addition to rehab sessions five days a week, Wicker sees personal trainer Don Sanford twice a week for strength training. “The gym creates a very different exercise process. I’ve gotten substantially stronger as a result of that. My muscle tone is getting better and my walking is getting better,” Wicker says. “And I get to see my buddies and that’s a big deal to me.”

Sanford says the best way to describe Wicker is determined. “He is willing to try new things and he is very goal-oriented,” he says. “He used to be able to bench press 300 pounds before the accident, and his goal now is to bench 100. When we started, 45 pounds was his max. Now we are up to 60. He also completed a 1K race in January using his walker. He is a very positive and hard-working guy and I really enjoy working with him.”
