Environmental Farm PlanEnvironmental farm planning is a voluntary process that producers can use to identify both environmental strengths and any potential risks on their farms. If needed, an action plan is developed to reduce risks. This national program is administered in B.C. through the B.C. Agriculture Council. This logo recognizes that the farm has completed its envi-ronmental plan.

B.C. Certified OrganicThe B.C. Certified Organic Program is a voluntary agri-food quality program sanctioned by the B.C. government (www.gov.

bc.ca/agf). It is administered through the Certified Organic Association of B.C. (COABC). Farms that meet the standards for production, processing and handling are eligible to use the term B.C. Certified Organic and the symbol checkmark in a box.

Verified Beef ProgramVBP is a national on-farm food safety program for beef pro-ducers in Canada. A farm registered with VBP has demon-strated through an audit that their food safety practices con-form to program requirements. This program is based on the world recognized food safety standard known as HACCP (Hazard Analysis Critical Control point) and is designed to help producers prevent, monitor and reduce food safety risks on their beef cattle farms.

B.C. AgriTourism Alliance Quality Assurance ProgramThis program has been developed in consultation with agrito-urism operators to establish consistent, quality agritourism experiences throughout B.C. sesame Trout stir-Fry

Ingredients:1 tbsp sesame oil 3 cups mixed, chopped vegetables: (ie: carrots, mushrooms, sweet peppers, red onion, green beans, etc) 1/2 cup sliced green onions and/or garlic scapes 2 tbsp sesame oil1 tbsp ginger paste, or grated fresh ginger 2-3 tbsp soy or tamari sauce1/2 tsp honey1-2 tbsp lemon juice1 tbsp tahini paste1 lb Ted’s Trout fillets, cut into 1 inch cubes 1 tbsp sesame seeds, toastedDirections:Heat large frying pan on medium-high heat until very hot. Add sesame oil. Add vegetables and green onion and/or garlic scapes.Stir-fry for about 6 minutes, or until vegetables are crispy tender. Whisk next 6 ingredients together, and add, with the trout pieces, to the frying pan. Stir-fry for about 3 minutes, until fish flakes easily when tested with a fork.Sprinkle with sesame seeds. Makes about 4 cups.

PROPER STORAGE OF FRUITS AND VEGETABLES IS ESSENTIALProperly storing fresh fruits

and vegetables at home is important for many reasons. Improper storage of some whole fresh fruits and vegetables may cause

deterioration of both their flavour and nutrition profile.

There are fruits that do not ripen further once harvested. Other fruits will continue to ripen after being harvested

because they naturally produce a gas called ethylene, (e.g. apples, tomatoes, ripe bananas). Ethylene triggers the ripening process; this in turn produces more ethylene

gas, which further accelerates the process. Exposure to ethylene causes vegetable deterioration, so fruits and vegetables should be stored separately in the refrigerator.

In its second year, the Thompson-Shuswap Chef Farmer Collaborative is

preparing for its first public event, the Farm2Chefs Aug. 7 at Thistle Farm in Westsyde.

“There is no landmark summer culinary event in the area, so we really see this as an opportunity to create overall appeal,” says David Tombs, chef at the Brownstone restaurant, who is also the vice-president of the collaborative.

Ed Walker, TRU culinary instructor and president of the new network, describes the event as a festival in the field. Tents will be set up where people can sample food and drink and learn about local foods. There will be activities for children and

live music. Four wineries, 14 chefs,

two breweries and a “meadery” (which produces mead from honey) will take part.

Fresh asparagus will be served to underscore the goal of the collaborative, to connect local farmers, producers and distributors with local chefs to create a sustainable food system.

They are also dedicated to educating the public and the palate.

Formed last year, the collaborative already includes about 25 chefs and 35 farmers, many of them having attended a formative “Grow-Op” event in February.

As well, they have some “seed” money from Community Futures of

Thompson Country. The $7,500 will help with Farm2Chefs and was also plowed into a new website, www.tscfc.org.

Members of the collaborative will be at the Kamloops Farmers’ Market every Saturday this season to sell tickets to Farm2Chef, and spread the wisdom of fresh and local food, where to buy it and how to use it.

Tickets are $60 each or $20 for kids up to age 12. Children five and under are admitted free. The event is a fundraiser for a grant/loan program. Grants will support non-profit groups in food production and advocacy; low-interest loans will support for-profit growers wanting to increase productivity.
